  • Buy your wings. Plan on each guest eating 10-15 wings if main course, or 5-7 wings if served alongside other food as an appetizer. These instructions are for 2 pounds of wings, which should comfortably serve four people, but do not hesitate to multiply or divide the recipe to fit your guest's needs.
  • Thaw if needed. If frozen, thaw your chicken wings. You can thaw them by placing your chicken wings in the refrigerator overnight, or in a cold bowl of water on the kitchen counter for 4 hours.
  • Cut your wings. When thawed, use a sturdy knife or kitchen shears to cut the wing at each of the joints. This will result in three pieces. Discard the wings tip. Use sterile techniques. When handling raw chicken you need to be clean. Wash your hands after handling raw meat. Bleach your cutting and cooking surfaces when done to prevent cross contamination. Do not allow any produce (or any other food items) to come in contact with the raw chicken, or surfaces that have touched raw chicken. Alternatively, instead of discarding the wing tips, you can save them for making chicken stock.
  • (Optional) Marinate your wings. It is up to you, but many chiefs like the extra flavor that a good marinade can add to chicken wings. 12 chicken mid-joint wings
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
3/4 cup panko breadcrumbs
2 large eggs
3 tablespoons whole milk, homogenized
1/3 cup butter, melted
2 tablespoons sriracha hot chili sauce, See Note
1/8 teaspoon black pepper
1/2 teaspoon granulated garlic powder
1 -2 cup canola oil or 1 -2 cup extra virgin olive oil

Steps:

  • Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
  • Rinse wings in cold water, pat dry with paper towels and set aside.
  • In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
  • Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
  • In a mixing bowl add Panko bread crumbs.
  • In another bowl, whisk together eggs and milk until frothy.
  • Remove chicken from the refrigerator and shake off any excess flour coating.
  • Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
  • In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
  • Place chicken in the pan with the main meat side up and fry for 6 minutes.
  • Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
  • Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
  • Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
  • In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
  • Pour the hot sauce over the chicken wings and toss to coat well.
  • Serve immediately or while they are still hot.
  • You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
  • NOTE: You may also use the following choices of hot sauces.
  • 1 tablespoon of Red Hot Sauce - wings will be medium hot.
  • 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
  • 2 teaspoons of Sambal Oelek - wings will be very hot.

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).

  • Use your favorite wing sauce. You can use a bottle of your favorite commercial wing sauce, or you can make a homemade wing sauce. Note the wing sauce recipes provided.
  • Prepare a buffalo wing sauce. This sauce needs to simmer on the stove for 2 hours before use. Melt the butter in a medium saucepan over medium heat. Carefully add the tomato sauce, hot sauce, garlic powder, and onion powder. Stir well to mix. More hot sauce, garlic powder, and onion powder can be added if desired. Simmer uncovered, on low heat, for two hours. Stir occasionally.
