- Buy your wings. Plan on each guest eating 10-15 wings if main course, or 5-7 wings if served alongside other food as an appetizer. These instructions are for 2 pounds of wings, which should comfortably serve four people, but do not hesitate to multiply or divide the recipe to fit your guest's needs.
- Thaw if needed. If frozen, thaw your chicken wings. You can thaw them by placing your chicken wings in the refrigerator overnight, or in a cold bowl of water on the kitchen counter for 4 hours.
- Cut your wings. When thawed, use a sturdy knife or kitchen shears to cut the wing at each of the joints. This will result in three pieces. Discard the wings tip. Use sterile techniques. When handling raw chicken you need to be clean. Wash your hands after handling raw meat. Bleach your cutting and cooking surfaces when done to prevent cross contamination. Do not allow any produce (or any other food items) to come in contact with the raw chicken, or surfaces that have touched raw chicken. Alternatively, instead of discarding the wing tips, you can save them for making chicken stock.
- (Optional) Marinate your wings. It is up to you, but many chiefs like the extra flavor that a good marinade can add to chicken wings. Common marinade sauces are "Honey Garlic Sauce" or "Hot Sauce", but feel free to try others. If you choose to marinade your wings. Place your chicken wings in a shallow container and submerge in your sauce of choice for 1-2 hours in the refrigerator. - For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.

- Put the chicken wings in a 6-quart slow cooker and sprinkle with 1 teaspoon salt. Mix together the honey, hoisin, soy sauce, oyster sauce, ginger and five-spice powder in a small bowl or measuring cup. Pour the sauce over the wings and toss to mix. Cover and cook on high, stirring occasionally, until the wings are cooked through and tender and the sauce is slightly thickened, about 2 hours and 30 minutes.

- Remove wing tips and any loose skin and discard. Leave the remaining skin on if desired.
- Rinse wings in cold water, pat dry with paper towels and set aside.
- In a large zip-loc bag, combine flour, salt, cayenne pepper and paprika, shake well.
- Add chicken to the zip-loc bag, seal and toss to coat well. Refrigerate for 1 to 4 hours. "Chilling the chicken wings is important to achieve nice, crispy wings.".
- In a mixing bowl add Panko bread crumbs.
- In another bowl, whisk together eggs and milk until frothy.
- Remove chicken from the refrigerator and shake off any excess flour coating.
- Dip coated chicken in the egg mixture, then roll in the Panko bread crumbs until well coated.
- In a heavy bottom 12 inch frying pan or skillet, add oil and heat to 375°F.
- Place chicken in the pan with the main meat side up and fry for 6 minutes.
- Turn the chicken over and continue to fry for another 6 minutes. The wings should be nicely browned.
- Test for doneness by making a cut into the thick portion of the wing to make sure there is no pink showing.
- Remove chicken from the frying pan onto paper towels to absorb any excess oil, and immediately place in a large bowl.
- In a small saucepan, add butter, Sriracha hot chili sauce, black pepper, granulated garlic powder and heat just to boil, stirring constantly.
- Pour the hot sauce over the chicken wings and toss to coat well.
- Serve immediately or while they are still hot.
- You may also freeze the chicken after it is cooked and then reheated in a preheated 400 F oven for 10 minutes.
- NOTE: You may also use the following choices of hot sauces.
- 1 tablespoon of Red Hot Sauce - wings will be medium hot.
- 2 tablespoons of Sriracha Hot Chili Sauce - wings will be hot.
- 2 teaspoons of Sambal Oelek - wings will be very hot.
BAKED BUFFALO CHICKEN WINGS

- In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
- Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. - Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
- Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
- Preheat an oven to 350 degrees F (175 degrees C).
- Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.

- Prepare a buffalo wing sauce. This sauce needs to simmer on the stove for 2 hours before use. Melt the butter in a medium saucepan over medium heat. Carefully add the tomato sauce, hot sauce, garlic powder, and onion powder. Stir well to mix. More hot sauce, garlic powder, and onion powder can be added if desired. Simmer uncovered, on low heat, for two hours. Stir occasionally.
- Make your own barbecue sauce. This sauce is ready to use after simmering for a little over an hour. Combine all sauce ingredients in a medium saucepan. Stir well to mix. Heat the sauce over medium-high heat until it boils. Reduce the heat to low or medium-low so that the sauce continues cooking at a low simmer. Cook, uncovered, for 75 minutes. Stir frequently to prevent the sauce from burning.
- Mix together a sweet and sour orange glaze. This glaze can be prepared without the use of a stove. Whisk all of the glaze ingredients together in a medium bowl. Refrigerate until ready to use.
- Whisk together a honey mustard sauce. This is another sauce that can be prepared without heating the ingredients. Whisk together all of the sauce ingredients in a small to medium bowl until well combined. Refrigerate until ready to use.
SIMPLE BOIL AND BAKE CRISPY CHICKEN WINGS

- Boil wings in a large pot of water for about 15 minutes.
- Broil wings in oven for about 5-10 minutes per side depending on how your oven works) until nicely browned and crisp.
- I put the bbq sauce in the bottom of a big metal bowl and keep it on the stove near the oven vent so that is warms up a bit.
- Remove the wings from the oven and pat with paper towels to remove more grease if necessary (I bake mine on parchment paper, so that absorbs some of the grease for me).
- Toss wings in bowl with bbq sauce (or any sauce you want) until well covered.
