Steps:
- Preheat your oven to 400 degrees fahrenheit. Line a baking tray with parchment paper, then place the bacon side-by-side on the tray.
- Cook the bacon for 18-20 minutes or until it's reached your desired level of crispiness. Remove the tray from the oven and transfer the bacon with tongs to a paper towel-lined plate.
- If you're rendering the bacon fat, line a fine mesh sieve with a paper towel. Then place the sieve over a glass storage container and pour the bacon fat from the sheet tray into the sieve. Cover the glass storage container and place it in the refrigerator for future cooking needs.

- Preheat the oven to 400 degrees F.
- Line an extra-large baking sheet (at least 14 x 20) with foil for easy cleanup. Place an oven-safe cookie rack of the same size on top of the baking sheet. (Get the perfect pan + rack here!)
- Arrange the bacon slices in a single layer on the rack.
- Place bacon in the oven on the middle rack, and bake for 18 to 23 minutes for average bacon, 15-19 minutes for thin bacon, or 22-26 minutes for thick cut bacon, until done to your liking.
- After baking bacon in the oven, pat any excess grease to help it get crisp. Allow it to cool for a few minutes to get more crispy.

OVEN BACON

The latter method will give you extracrispy bacon, but you'll have to wash that greasy rack. Your choice!

- Heat the oven to 450 degrees. Arrange the bacon in a single layer on 2 aluminum foil-lined rimmed baking sheets, or, for extracrispy bacon, arrange on 2 wire racks set over 2 foil-lined rimmed baking sheets.
- Bake until the bacon is browned and starts to ripple, or to desired doneness, 10 to 20 minutes. (Because the cook time depends on the thickness of the bacon and how you like it cooked, start checking doneness at the 10-minute mark.)
- Transfer the bacon to a paper towel-lined plate to drain.
