BASIC MUFFIN RECIPE WITH VARIATIONS
Turn a basic muffin recipe into your new favorite treat. This version features fresh berries but you can add anything from roasted nuts to chopped chocolate.

- Preheat the oven to 425°F.
- Lightly grease a standard muffin tin. Or line with 12 paper or silicone muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins. Or use the tip I share in the video for the best liners.
- Cream together the butter, vegetable oil, vanilla, and sugars till smooth.
- Add the eggs one at a time, beating to combine.
- Whisk together the flour, baking powder, baking soda, cinnamon, salt.
- Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
- Fold in the berries or the mix in of your choice.
- To prevent the berries from sinking to the bottom of the muffin, be sure to first toss them in a tablespoon or two of flour!
- Spoon the batter evenly into the prepared pan, filling the cups nearly full.
- Bake the muffins for 15 to 17 minutes, or until they're a pale golden brown and a cake tester inserted into the middle of one of the center muffins comes out clean.
- Remove them from the oven, and let them cool for a couple of minutes, or until you can handle them.
- While they're cooling, melt the butter for the topping (this is easily done in the microwave).
- Use a pastry brush to paint the top of each muffin with the butter, then sprinkle with the cinnamon-sugar. Or simply dip the tops of muffins into the melted butter, then roll in the cinnamon-sugar. For added sparkle, use the coarse sugar I show you in the video.
- Serve warm, or cool on a rack and wrap airtight. Store for a day or so at room temperature.
EASY PLAIN BASIC MUFFINS
The key to making great muffins is not overmixing the batter. Once the liquid ingredients are added to the dry, mix the batter by hand just until the flour is moistened, for no more than about ten seconds. Too much mixing can cause the muffins to be dry, tough or misshapen. And if you want to spruce your muffins up a little bit, here's a recipe for a cinnamon streusel topping you can mix up in just a few seconds.

- Preheat oven to 400°F.
- Combine the flour, baking powder and salt.
- Unwrap the butter and heat it in the microwave, in a microwave-safe bowl, for about a minute, until it's thoroughly melted. Set it aside at room temperature to cool, but don't let it solidify again.
- Beat the eggs in a separate bowl and then add the sugar, milk and vanilla to the eggs.
- Thoroughly grease and flour a muffin pan (or use paper muffin liners).
- Pour a tiny bit of the melted butter into the egg-vanilla-milk mixture and stir it inches Repeat 3-4 more times, adding a slightly larger amount of the liquid butter each time until it is all incorporated.
- IMPORTANT: Don't add hot melted butter to the egg mixture as the heat from the butter would cook the egg, and that's not what you want to do!
- Add the liquid ingredients to the dry ones and mix no more than ten seconds. The batter should be visibly lumpy, and you may see pockets of dry flour. That's OK! It's extremely important not to overmix the batter, or the resulting muffins will be too hard.
- Gently pour the batter into the prepared muffin pan and bake immediately.
- My TIP's: The dry and wet ingredients, respectively, can be mixed in advance, but as soon as the wet and dry ingredients have been combined with each other, the liquid will activate the baking powder and the batter must be baked right away.
- Bake 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Note: The muffin was extremly thick and too sweet for me and my friends (15/16 year olds) The first time I made it it was too sweet and too thick. The second time I made them today, and I added 1/10 less sugar and 1/10 more milk and mixed much less. I also added a little splash more of vanilla. Some added apple chunks and 1 tablespoons cinnamon and they were delicious!

- ½ cup all-purpose flour.
- ¼ cup brown sugar, packed.
- ½ stick unsalted butter.
- ½ tsp ground cinnamon.
- Preparation:.
- Combine all the ingredients in a food processor and pulse until crumbly. Alternately, you can mash the ingredients together in a bowl using a fork, or just smoosh everything together with your fingers.

- Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases. In a large bowl beat 2 medium eggs lightly with a handheld electric mixer for 1 min.
- Add 125ml vegetable oil and 250ml semi-skimmed milk and beat until just combined then add 250g golden caster sugar and whisk until you have a smooth batter.
- Sift in 400g self-raising flour and 1 tsp salt (or 400g plain flour and 3 tsp baking powder if using) then mix until just smooth. Be careful not to over-mix the batter as this will make the muffins tough.
- Stir in 100g chocolate chips or dried fruit if using.
- Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking.
- Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

- Heat your oven to 425 degrees. Fill a muffin tin with 9 muffin liners. Then use an electric mixer to combine the butter and cream cheese. Once well mixed, add the granulated sugar and mix on a medium high speed until the mixture is fluffy. This will take about 2 minutes.
- Add the egg, egg white, and vanilla and beat until it is just combined with the butter, cream cheese, and sugar mixture.
- In a separate bowl, combine 1 cup and 3 tablespoons flour, with the baking powder, baking soda, and salt.
- Remove the bowl of the electric mixer, you want to fold everything together by hand. Fold the flour mixture and buttermilk into the ingredients in the bowl from the mixer. Stir in a third of the flour mixture, then half the buttermilk, another third of the flour mixture, the remaining buttermilk, and then the remaining flour mixture. Fold together until it is just mixed - don't over mix. Let the batter sit for 15 minutes.
- While the batter is sitting, pour the berries and other mix ins into a bowl. Dust with a tablespoon of flour, and gently mix coating the berries in flour. This prevents the berries from sinking to the bottom.
- After the batter has rested, fold in the berries and other mix ins.
- Pour the batter into 9 muffin liners, filling them all the way to the top. Then top with the melted butter and raw sugar.
- Turn your oven light on, and place the muffins in the oven to bake. It will take 10-12 minutes for the muffins to rise and the muffin tops to brown. At this point, reduce the heat to 350 degrees (don't open the oven though). Let bake for another 5-7 minutes.
- Remove the muffins from the oven, let cool for 2 minutes, and then place the muffins on their side on a towel to finish cooling. This prevents the muffin tops for sinking as they cool.
EASY BAKE OVEN MUFFINS
Easy Bake mixes are expensive, and I've been less than satisfied with using cake mixes and water. Then I found muffin mixes, which are complete except for adding milk or water. The results are much more cake-like in texture. The mixes come in pouches near the cake mixes, and at my store are brands such as Betty Crocker, Martha White, and the store brand. Just make sure to use a mix that only calls for adding milk or water.

- Position an oven rack on the middle shelf of oven.
- Preheat oven to 375 degrees F (190 C).
- Lightly grease and flour or spray muffin tin with non-stick cooking spray.
- In a medium bowl, combine the flour, baking powder, baking soda and salt.
- In a large mxing bowl, combine the bananas, brown sugar, oil, eggs, and vanilla.
- Beat on medium speed until well blended with only small bits of banana visible.
- Pour in the dry ingredients and gently stir with a rubber spatula just until blended.
- Add nuts or chocolate chips (if using) when the flour is almost blended and stir to incorporate.
- Fill the muffin top indentation to almost full with the batter.
- Gently tap the pan on the countertop to even out the batter.
- Bake until the tops are golden brown and a toothpick or a cake tester inserted comes out clean, about 13 minutes (muffins = 20, mini muffins = 15 minutes).
- Transfer the pan to a wire rack to cool for 5 minutes; then carefully remove the muffin tops from the pan and set them on the rack to cool.
- Serve warm or at room temperature.

- Choose your muffin wisely. If you're wondering which muffin recipe to make, here's a tip: Less butter and sugar in a recipe makes a drier bread-like muffin, while more butter and sugar produces a moister muffin that's more like cake.
- Start with room-temperature ingredients. Have all ingredients at room temperature before you start making the batter. Why? Having eggs, butter, and milk at room temperature helps them form a smooth mixture that traps air and expands when heated in the oven.
- Don't overmix. The more you mix, the tougher the muffin, so use a light touch. Mix the dry ingredients in a large bowl and whisk the wet ingredients in a separate bowl.
- Add the extras. Dust all the add-ins (fruits, nuts, etc.) with a little bit of flour before adding them to the batter. This keeps them from sinking to the bottom of your muffins.
- Make muffins movable. Inexpensive muffin pan liners make it easy to get the muffins out of the pan without tearing them. But even if you use paper liners, a quick spritz or swipe of vegetable oil on the top of the muffin pan will make muffin removal even easier.
- Portion the batter. That thick, lumpy batter is best portioned out with a spoon or a small ice cream scoop so you'll get evenly sized muffins.
- About those muffin tops. Some say muffin tops are the best part. To get yours, bake the batter in shallow muffin tins or overfill regular muffin cups.
- Feel the heat. Every smart baker uses an oven thermometer to make sure the heat is just right for their recipe. Position the baking rack in the middle of the oven for even heat distribution, and rotate the pan halfway through baking to counteract any hot spots.
- Cool down. Let muffins cool for a few minutes before lifting them out of the pan and onto a cooling rack. And as tempting as it may be to eat freshly baked muffins right away, let them cool down a bit more so the structure can firm up.
- Wrap 'em up. Muffins are best when freshly made, but for muffins anytime you want them, wrap cooled muffins in plastic and freeze for up to two months.
