ANN RICHARD'S LIBERAL CHICKEN FROM THE HOUSTON CHRONICLE

Steps:

• Food process all but the olive oil and fresh lemon slices.
• Gradually add the 1/2 cup olive oil into the food processor.
• Put chicken and the pesto from the processor with sliced lemons into a large ziploc bag for at least 1-2 hours or up to overnight.
• Grill.
• Eat.

GOURMET CHEESE POTATOES

Steps:

• In a large pan over high heat, bring the potatoes and water to a boil.
• Reduce heat to medium, cover and cook for about 20 minutes, or until potatoes are fork-tender.
• Drain and cool slightly, about 15 minutes.
• When potatoes are cool enough to handle, peel and slice into bite-sized chunks or dice.
• In a small pan, melt the butter and add the onions. Saute until onions are limp but not browned.
• In a bowl combine the cheese, sour cream, butter and onions, and salt and pepper.
• Stir well and add the potatoes.
• Pour into a lightly greased ( I use Pam) 2 quart casserole dish.
• Sprinkle with paprika and bake uncovered in a preheated 350 degree oven for 30 minutes, or until top is golden brown.

BANANA TOFFEE BLONDIES

Steps:

• Preheat the oven to 350.
• Grease and flour a 9" baking pan.
• Sift flour, baking powder and salt into a bowl; set aside.
• In another bowl, beat butter and brown sugar until fluffy.
• Add vanilla extract.
• Beat eggs in one at a time until blended.
• Add flour mixture a little at a time just until blended.
• Stir in 1 cup of toffee bits and the banana by hand.
• Pour into the prepared pan and sprinkle remaining toffee bits on the top.
• Bake 30 minutes.
• Cool, dust with powdered sugar and cut into squares.

ARTISANAL CHEESE BALL

Steps:

• Combine the cheeses, sour cream,worcestershire sauce, garlic powder, pepper and salt in a food processor or bowl of a stand mixer: puree or beat with a mixer on low until mixture is smooth, about 3 minutes.
• Fold in the green onions, place mixture in a large bowl; shape into a ball with a large mixing spoon and chill at least 1 hour.
• Meanwhile, cook bacon in a skillet over medium heat until crisp, about 6 minutes; drain on paper towels.
• Dice or crumble and set aside.
• Gently remove cheese ball from bowl and spread bacon bits (or almonds) on wax paper or cutting board: roll the cheese ball until evenly coated.
• Serve at room temperatire with assorted crackers.
