HOT TORTELLINI SALAD
Once you've cooked the tortellini, the rest of this salad is a breeze to finish in the microwave. Sour cream provides the mild coating over this memorable medley of pasta, ham and broccoli shared Catherine Allan of Twin Falls, Idaho.

Steps:
- Cook tortellini according to package directions. Meanwhile, in a 2-qt. microwave-safe dish, combine the broccoli, onions and butter. Cover and microwave on high for 2 minutes; stir. Cook 2 minutes longer or until broccoli is tender., Drain tortellini; add to broccoli mixture. Stir in the ham, sour cream and basil. Cover and microwave on high for 30-90 seconds or until heated through. Let stand for 2 minutes before serving.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8 to 10 minutes or until al dente. Drain, and rinse under cold water.
- In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
- In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad, and toss.
HOT TORTELLINI SALAD WITH SALAMI AND BROCCOLI
Fully cook julienned ham may be replaced for the salami, this yields four smaller potions I would definately double to serve more than four --- this is very good!

Steps:
- Cook the tortellini according to package directions.
- If using the garlic powder mix in with the sour cream; set aside.
- Meanwhile in a 2-quart microwave-safe bowl combine the broccoli florets with green onions and butter; cover and microwave on HIGH for 2 minutes, remove and stir.
- Continue to cook for about 2-1/2 to 3 minutes longer or until the florets are just fork-tender.
- Drain the tortellini and add to the broccoli mixture along with salami, sour cream and basil.
- Return to microawve and cook until heated through (about 1-2 minutes).
- Season with freshly ground black pepper to taste if desired, then sprinkle with Parmesan cheese on top.
- Allow to stand for 2-3 minutes before serving.

WARM TORTELLINI SALAD
Delicious and simple--you can have this on the table in mere minutes. Use bottled vinaigrette or make your own. I used a double recipe of Bergy's Lemon Garlic Dijon Vinaigrette (recipe #96361)--it was fantastic and complimented the dish perfectly. I served topped with freshly ground black pepper and freshly grated Parmigiano-Reggiano.

- Bring a large pot of lightly salted water to a boil. Place tortellini in the pot, and cook for 7 to 8 minutes, until al dente. Drain, and cool.
- In a large bowl, mix the cooked tortellini, red bell pepper, broccoli, carrots, olives, and garlic.

This is a great, flavorful summer salad. Gets great reviews from everyone. When we make this for picnics there is usually never any left, it goes before all the other salads do. Prep time does not include chilling time.

- Cook tortellinis for minimum cook time as directed on package.
- Drain tortellinis and rinse with cold water.
- Cut broccoli into bite size pieces. I discard most of the stems.
- Put broccoli in saucepan, cover with a few inches of water, and boil for 3 to 4 minutes. Do not overcook!
- Drain broccoli and rinse with cold water.
- Cut green pepper into 1-2" pieces.
- Cut cheese into small cubes.
- Slice the salami into strips using a sharp knife.
- Put everything into a large bowl, sprinkle with some garlic salt, and toss with about half of a 16 oz bottle of salad dressing. You can use more or less depending on your tastes, but half seems to work pretty well.
- Refrigerate for a few hours before serving.

- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, 10 to 11 minutes.
