- Preheat oven to 450 degrees F.
- Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.
- Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from oven.
- Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Top with shredded basil or arugula and serve with a pile of Oven Fries.
- Drizzle potatoes with a generous pour of extra-virgin olive oil. Toss potatoes with seasoning blend or coarse salt and pepper. Place potatoes on a nonstick baking sheet and roast 20 minutes or until just tender. Give the baking sheet a good shake after 10 minutes to avoid sticking.
MEATBALL SANDWICH
This mouthwatering meatball sandwich is prepared with saucy beef meatballs and creamy provolone cheese on garlicky ciabatta!

- Begin by gathering and prepping all of your ingredients according to the ingredients list above to have organized and ready for use.
- To a large bowl add your ground beef, plus all of the ingredients up to and including the half and half (or milk). Using your hands, gently mix the ingredients together to combine everything well, and portion out roughly 1 ounce size meatballs, rolling them between your palms (you should end up with about 21 meatballs). Chill for 30 minutes.
- While the meatballs chill, if preparing my homemade marinara sauce, then prepare that according to instructions. If using store-bought marinara sauce, then add it to medium-size sauce pan or pot, and gently heat until hot.
- Once the meatballs have chilled, place a large pan or skillet over medium-high heat, and drizzle in about 2-3 tablespoons of olive oil. Once hot, work in batches to brown the meatballs, swirling/moving the pan around gently to help the meatballs keep their round shape, browning them on all sides, about 3 minutes or so. Remove and keep them in a bowl or on a plate to hold, and repeat with the rest of the meatballs. (They will not be completely cooked through at this point.)
- Once all the meatballs are browned, add them into your hot marinara sauce and allow the meatballs to very gently simmer in the sauce, covered, for about 10 minutes, or until cooked through.
- Next, turn your oven on to the "broil" setting, and prepare a large baking sheet. Place the sliced ciabatta rolls, cut-side up, onto the baking sheet and toast until golden, about 1-2 minutes. Remove from oven (leave the broiler on), and rub the garlic clove over each slice, then drizzle with a touch of olive oil.
- To assemble, spoon about 5 of the meatballs plus some of the sauce onto the bottom halves of the toasted ciabatta rolls, and top the meatballs with a slice of provolone cheese. Place back under the broiler for about 1-2 minutes just until the cheese is gooey and melted.
- Sprinkle over some of the fresh basil or parsley, and cover with the top of the ciabatta roll, pressing down a bit. Cut in half, if desired, and serve hot.

- In a large bowl, combine eggs and milk; add the bread crumbs, cheese, salt, pepper and garlic powder. Add beef and sausage; mix well. Shape into 1-in. balls. Preheat broiler. - Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
- Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
- While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. - Preheat oven to 350º. Cut rolls horizontally in half; place roll bottoms in a greased 11x7-in. baking dish. Mix mayonnaise and pesto until combined. Spread over cut sides of rolls. HOT OR NOT HOT ITALIAN MEATBALL SANDWICHES
Everyone loves these zippy, oversized sandwiches. If you like spicy, add the roasted banana peppers to the sauce just before serving or play it safe and serve the peeled, chopped peppers on the side. I like to serve these on ciabatta bread but kaiser rolls work great too. These are fairly easy to make and taste soooo good!

- In a bowl, combine ingredients for meatballs, except for oil, and mix well. Form into 8 balls of uniform size.
- In a skillet, heat oil over medium-high heat. Add Meatballs, in batches, if necessary, and brown on all sides. Transfer to a slow cooker. Drain off all but 1 tbsp fat from pan. If you used extra-lean meat, you may have to add oil to reach 1 tablespoons
- In the meantime, preheat oven to 400 degrees. Roast the peeled and sliced banana peppers on a baking sheet, turning two or three times until the skin on all sides is blackened. This takes about 25 minutes.
- To make Tomato Sauce: Reduce heat to medium. Add onions and celery to pan and cook, stirring, until softened. Add garlic, oregano, salt, pepper and cloves and cook, stirring for 1 minute. Stir in tomatoes and wine, bring to a boil and cook, stirring until mixture is reduced by 1/3rd, depending upon the size of your pan, about 5 minutes. Pour over meatballs, cover and cook on Low for 6-8 hours or on High for 3-4 hours, until meatballs are no longer pink inside.
- Place 1 to 2 meatballs on one half of kaiser bun or ciabatta bread, spoon additional sauce over all and top with the other half of the bun. Serve with a small bowl containing the roasted banana peppers and another containing grated Parmesan Cheese. Allow people to garnish to taste. You may need a knife and fork!

- Make the meatballs: Preheat the broiler. In a large mixing bowl, whisk together the eggs, pecorino, parsley, garlic and some salt and pepper until it is all incorporated. Add the ground meats and breadcrumbs and, using your God-given hands, get after it and mix away. Do not overwork the meat or it will turn meatloaf-y. You want it loose and supple.
- Using your hands again, make 6 loose patties to match the size of your bread. Heat some oil in a large heavy-bottomed cast-iron pan (or use a griddle pan) over medium heat. In batches, fry the patties until golden brown, 4 to 5 minutes per side. Transfer to a baking sheet.
- For the sandwich build: Toast the split buns under the broiler, about 3 minutes. Spoon 3 tablespoons of sauce on top of each patty and top with a few slices of mozzarella. Place the patties under the broiler until melted and golden, 3 to 5 minutes. Place the patties on the buns and top with giardiniera and roasted red peppers. Cut in half and serve with the remaining marinara sauce on the side.

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Place the meat in a mixing bowl and sprinkle with salt and pepper. Trim the crusts off the bread and place in a small bowl, cover with milk and soak to soften. Squeeze the milk from the bread and crumble as you add it to the meat. Then add the eggs, cheese, parsley, grated onion and garlic, and mix to combine. Form into a loaf about 4 inches high and put on the baking sheet. Spray with olive oil.
- Mix the ketchup with the balsamic drizzle and Worcestershire. Season with pepper. Spread about 1/3 cup of the ketchup mixture over the top of the meatloaf. Bake until cooked through, about 1 hour.
- To reheat, slice the meatloaf 1 1/2 inches thick and put in a pot of warmed chicken stock. Serve the meatloaf hot or cold on thick-sliced Italian white bread with the remaining ketchup mixture and the lettuce, tomato, onions, mozzarella and basil.
MEATBALL SUBS
In this classic Italian American sandwich, tender meatballs drenched in tomato sauce are tucked into crisp rolls then buried under a blanket of gooey cheese. It's a messy sandwich no matter how you build it or bite into it, but wise construction can help: First, hollow out the rolls a bit so the meatballs have a place to sit. - Heat the broiler to high with a rack no more than 6 inches from the heat source. (See Tip if you don't have a broiler.) Using a fork, scrape out some of the interior of the rolls until you get about 1 cup bread crumbs. Add them to a large bowl along with 1/2 cup water, the egg, 1 teaspoon salt and several grinds of pepper. Finely grate 1 garlic clove into the mixture, then stir to combine. Let sit for 5 minutes.
- Lightly grease a large (12-inch), oven-proof skillet with olive oil. To the bread crumbs, add the beef, Parmesan and chopped basil. Stir with your hands until combined, avoiding overmixing. Roll into 12 balls (about 2 heaping tablespoons/2 ounces each) and place them in the prepared skillet as you go. Broil the meatballs until browned and nearly cooked through, 5 to 7 minutes.
- Move the skillet to the stovetop. Add the marinara sauce, stir to coat the meatballs, and warm over medium-low heat while you toast the rolls: Place the rolls on a baking sheet, cut-side up, and broil until lightly golden, 1 to 2 minutes. Rub the cut sides of the roll with the second garlic clove.
- Divide the meatballs and sauce among the rolls, then top with mozzarella. Broil until the mozzarella is melted and browned in spots, 1 to 2 minutes. Top with more grated Parmesan, basil leaves and black pepper.

- In a large bowl, combine the beef, sausage, and panko. In a small bowl, whisk together the egg, milk, and salt and add to the meat. Use clean hands or a fork to mix the ingredients until evenly combined, being careful not to over-mix. Form the mixture into 8 meatballs.
