PERSIAN-SPICED LAMB SHANKS

Rare grilled lamb chops or a roasted leg of lamb can be delightful and are easy to cook if you're in a hurry. However, with a little planning, you'll find it's the shank of the lamb that deserves the most praise. Careful, slow simmering will coax lamb shanks to a flavorful succulence unlike the other cuts. Lamb shanks are versatile, too, easily adaptable to recipes from many different cuisines. This heady Persian spice mixture yields a braise that is complex and nuanced, yet the flavors are balanced, with subtle hints of orange, lime and rosewater. Basmati rice is the perfect accompaniment. Prepare the lamb shanks up to 2 days before serving, if desired. Refrigerate them covered in broth and reheat for 30 minutes in a 350 degree oven or over gentle heat on the stovetop.

4 meaty lamb shanks (ask for the hind shanks), about 4 1/2 to 5 pounds
Salt
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
1 teaspoon ground cardamom
1 teaspoon ground dried rosebuds, optional
1 teaspoon ground black pepper
1 teaspoon turmeric
Vegetable oil
1/4 teaspoon crumbled saffron
Juice of 2 limes, about 4 tablespoons
3 teaspoons rosewater, available from Middle Eastern grocery shops
1 large onion, roughly chopped
1/2 teaspoon ground dried lime, or the zest of 1 fresh lime
Zest of 1 orange, plus 1 tablespoon more for garnish
A few thyme sprigs
2 fresh bay leaves
6 cups hot chicken broth or water
2 tablespoons roughly chopped parsley, for garnish
2 tablespoons roughly chopped mint or dill, for garnish

Steps:

  • Trim any excess fat from lamb shanks and season generously with salt. Mix together the cinnamon, nutmeg, cardamom, rosebuds (if using), black pepper and turmeric. Sprinkle evenly over shanks and rub into meat. Let sit at room temperature at least an hour, or wrap and refrigerate overnight, then bring to room temperature.
  • Place a Dutch oven or deep, heavy pot over medium-high heat and add oil to a depth of 1/2 inch. When oil is hot, add 2 lamb shanks and fry until nicely browned on all sides, about 5 minutes. Remove and set aside, then brown the 2 remaining shanks.
  • Meanwhile, put saffron in a small bowl with lime juice, 2 teaspoons rosewater and 1/2 cup warm water. Let steep for 10 minutes. Heat oven to 350 degrees.
  • Carefully remove all but 2 tablespoons oil from Dutch oven. Add chopped onion and cook over medium heat until softened and lightly colored, 8 to 10 minutes. Season onion with salt, then add lime zest, orange zest, thyme sprigs and bay leaves. Stir in saffron mixture. Lay in the lamb shanks and add the broth. Bring to a boil, then turn off heat and cover pot.
  • Transfer pot to oven and bake for about 1 1/2 hours, covered, until meat is tender when probed and beginning to fall from the bone. Remove lamb shanks to a deep serving dish and keep warm. Strain braising juices through a fine-mesh sieve into a bowl, pressing with a wooden spoon to obtain all the liquid (discard thyme, bay leaves and onions). Skim fat, then taste and add salt if necessary. Add 1 more teaspoon rosewater, if desired. Reheat strained juices and pour over lamb shanks. Combine parsley, mint and reserved orange zest and sprinkle over top.
  • Use a large spoon to break the tender shank meat into large chunks. Serve in low, wide soup plates, giving each portion a spoonful of the juices. Accompany with steamed Basmati rice, lavash flatbread or a loaf of crusty French bread.

This is one of the cheapest and tastiest cuts of lamb. Cooked this way, the sauce is very tasty and the meat will just fall off the bone. Served with potato mash, polenta, couscous or rice, it is a wonderful dish.

4 lamb shanks
Sea salt
Freshly ground black pepper
1 teaspoon coriander seeds
1 small dried red chile (or 2 teaspoons chopped fresh chile)
1 teaspoon dried marjoram or oregano
1 tablespoon flour
1 tablespoon olive oil
1 clove garlic, finely chopped
1 large carrot, quartered and finely sliced
6 sticks celery, quartered and finely sliced
2 medium-large onions, quartered and finely chopped
1 tablespoon chopped fresh rosemary
2 tablespoons balsamic vinegar
6 fluid ounces (170 milliliters) dry white wine
6 anchovy fillets
2 (14-ounce/400 gram) tins whole plum tomatoes
1 handful fresh basil, marjoram or flat-leaf parsley, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • Season the lamb with sea salt and freshly ground black pepper. Smash up the coriander seeds and dried chile and mix with the dried marjoram. Roll the lamb in this mixture, pressing it in well. Dust the lamb with the flour.
  • Heat a thick-bottomed casserole pan, add the oil, brown the meat on all sides and then remove from the pan. Add the garlic, carrot, celery, onions, chopped rosemary, and a pinch of salt and sweat them until softened. Add the balsamic vinegar and allow it to reduce to a syrup. Pour in the white wine and simmer for 2 minutes. Add the anchovies (these really seem to intensify the lamb flavor) and then add the tinned tomatoes, kept whole. Shake the pan and return the lamb to it. Bring to a boil, put on the lid and simmer in the oven for 1 1/2 to 2 hours, then remove the lid and cook for a further 1/2 hour. Skim off any fat and taste for seasoning. Finally, stir in a handful of roughly chopped fresh basil, marjoram or flat-leaf parsley.

Steps:

  • Preheat the oven to 400°F (200°C).
  • Season the lamb shanks all over with salt and pepper.
  • Heat the canola oil in a large Dutch oven over medium-high heat.
  • Sear 2 lamb shanks at a time until a dark brown crust forms on one side, 3-5 minutes. Sear the other sides of the meat until evenly browned. Remove the shanks from the pan and set aside. Remove all but 2 tablespoons of fat from the pan.
  • Add the minced carrots, onion, celery, and minced garlic to the pot. Season with salt and pepper, and cook until the vegetables are deeply caramelized, 15-20 minutes.
  • Add the tomato paste and cook until it browns and is aromatic, 5 minutes.
  • Add the red wine and scrape the bottom of the pot to release the flavorful browned bits stuck to the bottom. Cook until the wine reduces by half and thickens slightly, 3 minutes.
  • Add the chicken stock, orange juice, lemon juice, rosemary, thyme, and bay leaves. Stir and bring to a boil.
  • Return the lamb shanks to the Dutch oven, cover, and place in the oven for 2 hours, turning the shanks halfway through, until the lamb is tender and the braising liquid has thickened.
  • About halfway through the lamb cooking time, add the oblique-cut carrots, Brussels sprouts, red pearl onions, and whole garlic cloves to a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to combine. Roast in the oven for 1 hour, or until the vegetables are tender.
  • Right after the potatoes finish boiling, drain and transfer to a large bowl. Season with plenty of salt and a bit of white pepper, and mash the potatoes until as smooth as possible.
  • Fold in the butter, sour cream, and heavy cream until smooth and light.
  • Make the citrus gremolata: In a small bowl, combine the parsley, lemon zest, flaky salt, garlic, chives, horseradish, and orange zest.
  • To serve, scoop mashed potatoes onto a plate. Add roasted vegetables and a lamb shank. Top with the braising liquid and citrus gremolata.

1 tbsp olive oil
4 lamb shanks
large knob of butter
2 large onions , halved then cut into wedges
4 garlic cloves , crushed
4 strips zest from 1 unwaxed lemon , plus the juice
2 tsp ground cinnamon
2 tsp ground coriander
1 tsp ground ginger
1 tsp ground cumin
good pinch of saffron strands (optional)
1 heaped tbsp tomato purée
1 tbsp clear honey
400ml good lamb or beef stock
2 quinces , peeled, quartered and cored

Steps:

  • Heat the oil in a large frying pan. Season the shanks, then brown in the oil for 10 mins, or until dark golden all over.
  • Meanwhile, in a casserole dish or large pan, melt the butter. Soften the onions for 10 mins on a medium heat until they're turning golden, then add the garlic. Heat oven to 160C/140C fan/gas 3.
  • Add the strips of lemon zest and spices to the onion pan. Cook for 1 min, then stir in the tomato purée, honey, stock and half the lemon juice. Sit the shanks in the pan, then poke the quince quarters in and around the meat. (It might be quite a tight fit, but the meat will shrink as it cooks.) Bring to a simmer, then cover with a lid and braise in the oven for 2 hrs.
  • Remove the lid and cook for 30 mins more. Spoon away any excess fat. The sauce will be fairly thin, so if you prefer a thicker stew, remove the lamb and quinces to a serving plate, then boil the cooking juices until thickened. Season, add the lemon juice and serve with the lamb.

1½ tbsp olive oil
2 lamb shanks
3 onions , sliced
4 garlic cloves , sliced
½ cinnamon stick
1 tbsp each cumin and coriander seeds , crushed
pinch of chilli flakes
400g can chopped tomatoes
500ml chicken or vegetable stock
2 tbsp pomegranate molasses
4 dried apricots , chopped
4 dried figs , chopped
handful coriander , chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. Add 1 tbsp oil to a small, tight-lidded casserole and brown shanks for a couple of mins, turning as you go. Remove and set aside.
  • Add remaining oil and onions to the pan and cook for about 10 mins until soft. Add garlic and spices and cook for 4 mins more. Tip in tomatoes and stock, then nestle the shanks back in on their sides. Bring to a boil, cover and put in the oven. Cook for 2 hrs: turn the shanks now and then.
  • Remove the lid and stir through the molasses, apricots and figs. Cook, uncovered, for 30 mins more or until the meat is falling away from the bone.
  • Remove shanks from the dish and wrap in foil to keep warm. Put the dish back onto the heat and cook down the juices until thick and saucy. Season, then serve the shanks, scattered with coriander, alongside the rice (see 'Goes well with', right).

2 lbs lamb chops
3 tablespoons meat curry powder, mixed with 5 tablespoon of water to form a paste
1 1/2 teaspoons salt
1 teaspoon light soya sauce
1/2 teaspoon white sugar
3 limes, juiced
2 tablespoons tomato puree
4 tablespoons water (room temp)
3 green chilies, slit into two length wise,but kept whole with seeds intact
3 red chilies, slit into two length wise,but kept whole with seeds intact
3 tomatoes, cut into wedges
5 potatoes, cut into wedges
1/4 cup yoghurt or 1/4 cup coconut milk
5 tablespoons canola oil
2 large onions, peeled
1 carrot, cut into 3 cm thickness
2 slices ginger (1 cm thickness each)
4 cloves garlic

Steps:

  • Add ginger, onions and garlic into food processor and grind till really fine.
  • Heat oil in a wok and stir fry the ingredients till fragrant.
  • Add curry paste and stir fry for 4-5 minutes over MEDIUM heat till oil exudes and mixture is fragrant.
  • Add the lamb chops and stir fry well.
  • Add potato wedges after stir frying the chops for 5 minutes.
  • Add lime juice, tomato puree, water, salt, sugar and soya sauce and cook for 15 minutes.
  • Add carrots in and allow all this to cook covered for 10 minutes, stirring occasionally.
  • Add chillies and yoghurt/coconut milk (to thicken gravy), simmer gently for 5-10 minutes before serving.
  • NOTE: Potatoes and carrots need to be cooked in the curry for 40 minutes for it to be nice and soft.

Steps:

  • Using a vegetable peeler, remove the orange part of the peel from 1 of the oranges . Cut the peel into thin strips (should have about 1/4 cup); set aside. Squeeze the juice from both oranges to make about 2/3 cup. In a small bowl stir together orange juice, broth, cardamom, cumin, salt, turmeric, and pepper. Set aside.
  • Place carrots, onions, and garlic in the bottom of a 5- to 6-quart crockery cooker. Top with lamb shanks, strips of orange peel, and cinnamon sticks. Pour orange juice mixture over all. Cover and cook on low-heat setting for 8 to 9 hours or until lamb pulls easily from the bone.

I combined Bobby Flay's Lamb shanks from his Mesa Grill cookbook with another lamb marinade I found online. I read somewhere that lamb is best when marinated overnight, and this recipe is surely no exception to that rule - awesome!

4 lamb shanks
3 tablespoons olive oil
kosher salt & freshly ground black pepper
1 large Spanish onion, coursely chopped
2 medium carrots, coarsely chopped
2 celery ribs, coarsely chopped
2 cups dry red wine
6 sprigs fresh thyme
4 cups chicken broth
3 chiles de arbol
1/2 cup brown sugar, firmly packed
1/2 cup red wine vinegar
3 cups chianti wine (or other red wine)
1/2 cup fresh lemon juice
1/2 cup orange juice
1/2 teaspoon thyme
1/2 teaspoon oregano
4 whole bay leaves
15 juniper berries
1 quart water
salt & freshly ground black pepper, to taste
1/4 cup olive oil

Steps:

  • Place lamb shanks with all marinade ingredients in a large ziplock bag. Let sit in fridge overnight (24 hours before use).
  • Preheat oven to 350.
  • Brush olive oil on all sides of lamb shanks. Season shanks with salt and pepper.
  • Heat a large oven proof roasting pan or dutch oven over HIGH heat. Add the shanks when the pot is hot and sear on all sides until golden brown, about 8-10 minutes (2 minutes per side). Remove shanks and set aside.
  • In the same pot, add the onion, carrots, and celery to the pan, season with salt and pepper, and cook until lightly golden brown over HIGH heat, 4-5 minutes. Add the wine and cook until reduced by half, about 2-3 minutes. Add the thyme, stock, and lamb shanks and bring to a boil. Cover, place in the oven, and braise until the meat is tender, about 2 - 2.5 hours.
  • Remove the shanks to a plate and tent loosely with foil. Stain the sauce through a finely meshed strainer and return liquid contents back to the pot and place over HIGH heat. Add the chiles (remove seeds unless you like a very spicy sauce) and brown sugar and cook, stirring occasionally, until reduced to sauce consistency (15-20 minutes - liquid should coat the back of a spoon). If after cooking down you would like a thicker sauce, mix flour with cold water in a measuring cup, then slowing whisk into sauce until reach desired consistency.
  • Add the vinegar to the sauce and cook 1 minute over HIGH heat, season with salt and pepper to taste.
  • Spoon the sauce over the lamb shanks. Recommend serving with a risotto milanese or polenta.

  • Preheat the oven to 325°. In an enameled cast-iron casserole, heat the oil. Season the lamb with salt and pepper and cook over moderately high heat until browned, about 4 minutes per side. Transfer to a bowl.
  • Add the onion to the casserole and cook over moderate heat, stirring, until softened, 7 minutes. Add the garlic and ginger and cook over moderately high heat, stirring, until fragrant, 2 minutes. Add the crushed tomatoes and cook until very thick, 2 minutes. Add the red wine and boil for 3 minutes. Add the chicken stock, cloves, cardamom, coriander, cumin and cinnamon and bring to a boil. Add the lamb and any accumulated juices and cover. Braise in the oven for 2 hours, turning once, until the meat is very tender.
  • Transfer the lamb to a bowl and cover with foil. Strain the braising liquid into a large skillet and skim off the fat. Boil over high heat until reduced to 2 cups, 20 minutes; season with salt and pepper. Add the lamb to the skillet, cover and simmer over low heat, turning the shanks a few times, until heated through, 3 minutes. Transfer the shanks and sauce to shallow bowls, garnish with the mint and serve with Cheesy Farro-and-Tomato Risotto.
