HOT CHEESE CRUNCHY MAC & CHEESE

Steps:
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish and set aside.
- Cook the pasta in boiling salted water until very al dente, about 3 minutes less than the box instructions (it will finish in the oven). Drain and set aside.
- Add the milk and annatto to a 3-quart saucepan over medium-low heat and bring to a low simmer. Place 1 cup cheese snacks in the center of a double-layered square of cheesecloth. Gather the sides together to form a pouch and secure with kitchen twine. Put the pouch in the warm milk and steep for 5 minutes. Turn off the heat, then remove the pouch and discard.
- Add the butter to a 6-quart Dutch oven and let melt, then add the flour to make a roux. Whisk until smooth, then cook until blonde in color, 2 to 3 minutes. Whisking vigorously, slowly add the milk mixture. Bring to a simmer, whisking constantly, then cook, whisking occasionally, about 2 minutes more. Add the cheeses and season with salt and pepper. Mix in the pasta until fully coated. Transfer the mac and cheese to the buttered baking dish.
- Crush the remaining cup cheese snacks in a resealable bag using a rolling pin. Top the mac and cheese in an even layer with the crumbled hot cheese snacks and bake until bubbly and gooey, 15 to 20 minutes. Serve warm.
MACARONI AND HOT DOGS
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Eva Smith. The printed version of this recipe makes me giggle because there is a typo where the hot dogs are called 'hot gods'. Eva didn't specify serving yield, so I am guessing.

Steps:
- Melt butter in Dutch oven.
- Cut hot dogs in half and then into small pieces.
- Simmer onion, pepper and hot dogs in butter for about 10 minutes or until brown.
- Sprinkle macaroni over top.
- Add salt, tomatoes and water.
- Cover; bring to boil.
- Reduce heat and simmer, stirring occasionally, until tender (about 12 minutes).
- Stir in cheese and simmer until cheese melts.
MAC AND CHEESE DOG CASSEROLE
You won't get this at any ballpark!

- Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
- Preheat broiler and set rack 12 inches from heat.
- While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
- Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.
HOT MACARONI
Something a little different. Hot Macaroni. I was given this recipe from my Aunt Shirley. There is nothing left when she makes it.

Steps:
- Cook macaroni.
- In skillet, add a little oil to cover bottom- cut bacon into small pieces and put in pan.
- Add chopped onions, green pepper, hot peppers, salt, pepper, and paprika.
- Fry until bacon is done, but not hard.
- Add mushrooms and texas pete hot sauce.
- Drain macaroni.
- Mix all together.
- Enjoy!

- Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
- Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
- Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
- Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.

- Cook macaroni according to box instructions.
- Drain and set aside.
- In a large frypan, melt 2 tablespoons butter,.
- Add chicken, bouillon and garlic,stir fry until chicken is browned.
- Remove chicken.
- Add remaining butter and next 6 ingredients.
- Stir fry 1 minute.
- Cover and cook just until broccoli is tender.
- Stir in macaroni, chicken and peas.
- Heat through.
- Blend milk and flour,.

MACARONI & HOT ITALIAN SAUSAGE

Steps:
- Spray a skillet with oil, heat.
- Add sausage, cook until crumbly, break it up as you are cooking the sausage, pour off excess fat.
- Add mushrooms and onion, cook until tender.
- Turn sausage, mushrooms and onion into an oven proof dish (approx 9x13").
- Pour sherry into the skillet and bring to a boil, stirring constantly to scrape up the brown bits.
- Pour sherry over the sausage mixture.
- Stir in the tomato sauce, beef consommé, water and pasta.
- Bake in 375°F oven (covered) for 1 hour or until pasta is tender.
- Stir in sour cream (or cottage cheese).
- Sprinkle with parmesan and parsley.
- Serve.
MACARONI, CHEESE AND HOT DOGS
I always loved it when my mom would make macaroni, cheese and hot dogs when I was young. As I grew up, I found that I liked it to be cheesier than she made it. I have been making this recipe for years and most everyone who has tried it really likes it. It is easy to make and my kids really enjoy having it for lunch.

- Fill a medium sized pot with hot water about half way.
- Put the water on the stove at high heat.
- Add box of Kraft macaroni and cheese dinner.
- Cut up the hod dogs into 1/4 pieces and drop in the water.
- Bring everything to a boil.
- Once the water boils, reduce the heat and continue to cook until the macaroni is tender.
- Drain water.
- Place pot back on the stove on very low heat.
- Add margarine and milk.
- Add slices of cheese.
- Stir until cheese melts.
- After cheese melts, add cheese sauce packet that comes with the Kraft Macaroni and Cheese dinner.
- Stir until everything is well mixed.
- Serve and enjoy.
