Hot Italian Cheesy Dip Food
HOT ITALIAN CHEESY DIP
Cheese dip with kick! This is a great spicy dip good for gatherings and parties where appetizers are a must. For added heat use picante salsa. If you do not have homemade salsa, I suggest the Pace brand. The hot sauce and pepper flakes are optional depending on how much spice you and your guests can handle.

Steps:
- Brown the hot Italian sausage. Drain the fat. Put browned sausage in a crock pot on low setting.
- Dice the velveeta cheese. Add to the crock pot.
- Pour in the salsa and stir well.
- Let mixture cook on low setting until cheese is thoroughly melted. Stir occasionally.
- Stir in hot sauce and pepper flakes to taste (optional).
- Keep crock pot on low setting to serve. Stir occasionally to keep dip from burning to the crock pot. Serve with tortilla chips.

HOT ITALIAN TOMATO AND CREAM CHEESE DIP
A thick, hot, chunky dip that tastes almost like a vodka sauce...and will be gone before you can say.... You can try adding chunks of crab or shrimp, also. Easy to make and always gets rave reviews...please try it, you will not be disappointed!

Steps:
- Heat stewed tomatoes till a bit bubbly and add the cream cheese.
- Stir until well blended.
- Remove from heat and serve in a nice serving bowl with tortilla chips or chunks of Italian bread.
- I sometimes will cut out the center of a round bread, line the inside with foil and pour in the dip.
- Cut up the center portion of the bread and use it to dip into the dip.
- Caution: if you do the bread bowl idea -- make sure you line it well so the liquid doesn't have a chance to soak into the outside rim of the bowl -- I have done that by accident and it is not a pretty sight!

- In a large skillet heat the olive oil over medium heat. Add in the chopped onions and cook until they are soft, 5-7 minutes. Add in the sausage and cook until no longer pink. Add in the garlic and Italian seasoning and cook for an additional 2 minutes. Drain excess fat, if necessary.
- Add the tomatoes and wine to the sausage mixture and cook until almost all of the liquid is evaporated. Mix in the spinach and cook for about 2 minutes, until it’s wilted.
- Turn heat down to low and add in the cream cheese. Stir until melted. Sprinkle in the Parmesan and mix until incorporated. Remove the skillet from the heat.
