  • Heat the butter in a saucepan over medium heat, and stir in the corn and onion. Cook 5 minutes, until heated through. Mix in parsley, and season with salt and pepper. Garnish with chives to serve.

1/4 cup extra-virgin olive oil
Grated zest of 1 lemon, plus 3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons minced shallot
Kosher salt and freshly ground pepper
6 ounces cherry tomatoes, halved
Kosher salt and freshly ground pepper
1/2 cup apple cider vinegar
1 1/2 cups farro
3 ears of corn, shucked
1 tablespoon vegetable oil
1/2 cup Kalamata olives, pitted and chopped
1/4 cup pistachios, chopped
1 tablespoon thinly sliced fresh chives
2 tablespoons chiffonade fresh basil

Steps:

  • Start by making the vinaigrette: In a bowl, whisk the olive oil, lemon zest and juice, mustard and shallot; season to taste with salt and pepper.
  • For the salad, combine the cherry tomatoes with salt and pepper to taste in a small bowl. Set aside.
  • Preheat a grill to high. Fill a large saucepan with 1 1/2 quarts water; add 1 tablespoon salt and the vinegar. Bring to a simmer over medium-high heat. Add the farro and gently simmer until al dente, 15 to 20 minutes; drain well. While the farro is warm, immediately mix with about three-quarters of the vinaigrette (set aside the rest to punch up or remoisten the salad later if necessary).
  • While the farro is cooking, brush the corn with the vegetable oil. Season with salt and pepper. Cook on the hot grill, turning with tongs, until charred, 10 minutes. Cut off the kernels.
  • Stir the corn kernels, tomatoes, olives, pistachios and chives into the farro. Gently toss to combine; add more vinaigrette and season with salt and pepper. Garnish with the basil.

GRILLED MEXICAN STREET CORN SALAD



Grilled Mexican Street Corn Salad image

6 large ears corn, 3 with husks and silks removed, 3 still with husks and silks intact
1 tablespoon extra-virgin olive oil
4 tablespoons unsalted butter, melted
1/2 cup mayonnaise, preferably Hellmann's or Best Foods
1/4 cup minced fresh cilantro leaves
Zest and juice of 1 lime (about 2 tablespoons juice)
2 garlic cloves, grated
1/4 teaspoon chipotle chile powder
Flakey sea salt or kosher salt and freshly ground black pepper
1/2 cup grated queso anejo or 3-cheese blend of Pecorino Romano, Parmesan, and Asiago cheese, plus a little more for garnish
6 slices applewood-smoked bacon, fried crisp and crumbled
1 sprig fresh cilantro, for garnish
1 lime, cut into small wedges, for serving (optional)

Steps:

  • Preheat the grill with all burners on high. Once preheated, adjust the temperature to medium high for direct grilling.
  • Soak all 6 ears of corn in water to cover for 10 minutes. Remove the corn from the water and pat dry with paper towels. Brush the shucked corn on all sides with the olive oil and leave the other corn in the husk.
  • Grill all the corn, turning occasionally, until the shucked corn is well browned and charred in places and the husks of the unshucked corn are dried out and charred in places, about 10 minutes.
  • Remove all the corn from the grill and let rest until easy to handle, about 5 minutes. When you can handle the corn comfortably, shuck the unshucked cobs. Then, stand a cob on its flat end on a cutting board. Holding the cob steady, take a sharp knife and carefully cut the kernels off, sliding the knife down the cob from top to bottom. Rotate the cob, cutting off a section at a time. I usually do 5 turns per cob. Repeat with the remaining corn. Discard the cobs, transfer the kernels to a bowl, and mix with the melted butter.
  • In a separate bowl, stir the mayonnaise, minced cilantro, lime zest and juice, garlic, chile powder, and a pinch of salt and pepper together until well mixed. Stir in the cheese and toss the buttered corn with the dressing. Taste and adjust the seasonings. Garnish with a little more grated cheese.
  • Serve warm or cold; either way, reserve topping with the bacon crumbles until just before serving, or they will get limp. Garnish with the cilantro sprig and the lime wedges, if desired.

2 limes
2 tablespoons hot sauce, eyeball it
1/4 cup extra-virgin olive oil, eyeball it
4 generous handfuls baby spinach, chopped
1 small red onion, chopped
1 red bell pepper, seeded and chopped
Salt and freshly ground black pepper

Steps:

  • Fill a tall pot with 2 to 3 inches of water. Bring to a boil. Add corn ears, cover pot reduce to simmer and cook 3 to 5 minutes depending on sweetness of corn and how crisp you like it. Remove and let cool enough to handle. Scrape corn from cobs by running knife along cob and balancing the corn upright on fat end of cob.
  • In a bowl combine the zest of 1 lime, the juice of 2 limes and the hot sauce. Whisk in extra-virgin olive oil, and add the spinach, onions, bell pepper and corn. Toss the salad to combine and season with salt and pepper, to taste.

1 tsp. granulated garlic
1 1/2 avocados, cut into 3/4" pieces
1 serrano chile, thinly sliced

Steps:

  • Prepare a grill for medium-high heat. Brush ears of corn with butter; season with salt and pepper. Grill, turning occasionally, until kernels are very tender and charred in spots, 10-12 minutes. Let cool slightly, then cut kernels from cobs.
  • Meanwhile, whisk lime juice, honey, Sriracha, granulated garlic, and 1 1/2 tsp. salt in a large bowl to combine. 3 -4 lbs baby potatoes
2 cups corn (frozen or canned)
1/2 red onion, medium dice
3 -5 garlic cloves, lightly smashed
1/2 lb bacon, crumbled
1/4-1/3 cup parmesan cheese
1/3 cup sour cream
1/3 cup mayonnaise
1 teaspoon horseradish
2 tablespoons lemon juice
1 tablespoon dill
salt
fresh pepper
olive oil

Steps:

  • Preheat oven to 425.
  • Dice potatoes in salad size pieces. Put them in a single layer on a cookie sheet.
  • Spread corn evenly over potatoes.
  • Spread chopped onions over potatoes.
  • Lightly smash garlic distribute cloves evenly through potatoes.
  • Drizzle liberally with olive oil and salt and pepper.
  • Toss to combine.
  • Roast until potatoes are cooked and crisp.
  • Cook and chop or crumble bacon, put aside.
  • Combine mayonnaise, sour cream, horseradish, lemon juice, dill, Parmesan cheese and salt (keep in mind bacon will add salt and potatoes have been seasoned) and pepper to taste.
  • After roasting with the potatoes remove garlic cloves. Mash them into a paste and add to dressing.
  • Toss roast potatoes, corn, bacon and dressing together. Serve warm. Leftovers are delicious cold!

6 large beefsteak tomatoes
2 large golden delight tomatoes
2 big rainbow tomatoes
1/2 pint sweet 100 tomatoes

30 small whole okra, fried (recipe follows)
4 ounces fresh field peas
1/2 small onion, chopped
1 teaspoon fresh thyme
3 ears corn (recipe follows)
balsamic vinaigrette (recipe follows)
chives, dressing (recipe follows)
6 slices of applewood smoked bacon, thinly sliced and cooked until crisp
1/4 cup buttermilk
1/4 cup cornflour
1/4 cup cornmeal
1/4 cup all-purpose flour
salt and pepper
1 small garlic clove, peeled and finely minced
6 tablespoons finely chopped fresh chives
1 large egg yolk
2 tablespoons fresh lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 cup olive oil
1/4 cup homemade creme fraiche, for salad
homemade creme fraiche
1 3/4 cups heavy cream
2 tablespoons whole-milk buttermilk
balsamic vinaigrette
1/2 cup extra virgin olive oil

1/2 cup sliced scallion
1 cup balsamic vinegar

Steps:

  • To Prepare the Salad:.
  • Core and slice the beefsteak, golden delight, and rainbow tomatoes into 1/4 -inch thick slices. Toss the tomatoes with 3/4 cup of the vinaigrette. Season the tomatoes with the salt and pepper and set aside at room temperature to marinate until ready to serve. Wash, core and slice tomatoes. Toss in balsamic vinaigrette. Add salt and pepper. Set aside.
  • Prepare okra, field peas, corn, chive dressing, balsamic vinaigrette, basil dressing and bacon.
  • Fried Okra:.
  • Heat vegetable oil to 350 degrees. Trim okra stems and place in a small bowl with the buttermilk. Toss until coated. Combine corn flour, cornmeal and all-purpose flour in medium size bowl. Add salt and pepper. Drain okra from buttermilk. Toss in cornmeal mixture and shake off excess. Fry in vegetable oil until golden. Drain on paper towels. Set aside. Season with Salt and Pepper.
  • Field Peas:.
  • Combine the ham hock, onion, thyme, and field peas in a medium stock pot with enough cold water to cover the beans. Bring the peas to a simmer and cook until just tender, 12 to 15 minutes, stirring occasionally. Remove from the heat, drain, and cool. Remove and discard the ham hock, onion quarters, and thyme sprig. Place the cooled peas in a mixing bowl and set aside.
  • Corn:.
  • Boil corn in salted water. Remove when tender. Shave kernels off cob and combine with butter beans. Add 3 tablespoons balsamic vinaigrette and let sit.
  • Chive Dressing:.
  • Combine the garlic and chives in small bowl. Add egg yolk, lemon juice, salt, and pepper and whisk to combine. Add the olive oil in a thin, steady stream, while whisking vigorously whisking. This should create an emulsion. Whisk in the crème fraîche. You may need to add a drop or two of water if dressing is too thick. Cover and chill the dressing for at least 20 minutes before serving. This dressing will keep refrigerated in an airtight container for up to two days.
  • Homemade Crème Fraîche:.
  • Whisk together the cream and buttermilk just to combine. Pour into a sterilized 2-cup jar (a mayonnaise or pickle jar works well) and cover tightly. Allow the mixture to sit at room temperature for 2 days.
  • After 24 hours, the crème fraîche will have thickened. If the mixture is slightly separated, whisk until smooth. The crème fraîche can be used immediately or refrigerated until ready to use. Homemade crème fraîche will keep refrigerated for up to two weeks.
  • Balsamic Vinaigrette:.
  • Combine all ingredients. Hold.
  • Presentation:.
  • Arrange each of the different types of sliced tomatoes on 6 plates. Place the whole sweet 100 tomatoes around the sliced tomatoes. Divide the pea and corn mixture evenly among plates on top of the tomatoes. Arrange 5 pieces of fried okra around each plate. Place 2 shrimp and 1 slice of crispy bacon on top of each salad. Drizzle 1 to 2 tablespoons of the chive dressing over the tops of each salad and garnish each with 1 tablespoon of basil chiffonade. Serve immediately.
  • Note: Look for a variety of locally grown tomatoes at the farmer's market. If not available, look for good local tomatoes.
