A nice change from flavoring or sweetening your oatmeal with brown sugar or maple syrup. This is a real treat for kids and kids-at-heart.

Steps:
- Heat milk and a pinch of salt in a small saucepan over medium heat until begining to simmer.
- Reduce heat and add oats, cocoa and sugar.
- Simmer over low heat, stirring occasionally until thickened.
- If you want your oatmeal thick or watery, this is where you determine the consistency- don't stop until it's pretty much at the consistency you would like.
- Cover and let sit for about 5 minutes (this cooks the oatmeal more thoroughly).
- Remove cover, stir and serve.
- Garnish with chocolate chips, nuts, and/or fruit if desired.

This hot chocolate oatmeal is a perfect mix of a hot chocolate and morning oatmeal. It's very rich, creamy and comforting and will fill you up and satisfy your chocolate craving at the same time.

- Pour the milk into a saucepan. Add the oats and bring the milk to a boil. Reduce the heat and cook stirring occasionally for 5 minutes.
- In the meantime, add the cocoa powder and 1 1/2 tablespoon of milk in a small bowl and mix to create a smooth paste.
- Add the cocoa paste, salt, dark chocolate, vanilla extract, and maple syrup to the oats. Mix well to combine and bring it to a light simmer. Take off the heat.
- If you like your oats to be creamy, you can cover the saucepan and let the oats swell for about 5 minutes or you can serve them as is.

HOT CHOCOLATE BAKED FRENCH TOAST
With a dense custardy inside, a crispy crust, and an extra dose of hot chocolate sauce to pour over the top, this is the most indulgent, decadent breakfast you can prep in advance for Christmas morning.

- Butter a 13x9" baking dish. Arrange bread slices in overlapping rows in dish.
- Cook cream, milk chocolate, semisweet chocolate, and vanilla in a medium saucepan over medium heat, whisking constantly, until chocolate is melted, about 5 minutes; remove from heat. Transfer 1 cup chocolate mixture to an airtight container; let cool to room temperature, then cover and chill until ready to serve. Reserve remaining chocolate mixture.
- Whisk eggs, milk, sugar, and salt in a large bowl. Whisking constantly, pour in hot chocolate mixture in a slow, steady stream. Pour evenly over and between each layer of bread. Push down with your hands to soak top of bread. Cover dish tightly with foil and chill at least 2 hours.
- Preheat oven to 350°F. Bake foil-covered bread until warmed through and a knife inserted into the center feels warm to the touch, about 35 minutes. Remove foil and continue baking until bread is browned, 35-40 minutes longer. Let cool 10 minutes.
- Meanwhile, toast hazelnuts in a small skillet over medium heat, tossing occasionally, until golden-brown and fragrant, 3-5 minutes. Microwave 1 cup reserved chocolate mixture in a microwave-safe bowl in 10-second intervals (or heat in a heatproof bowl set over a saucepan of simmering water), stirring occasionally, until warmed through.
- Serve French toast with hot chocolate sauce and toasted hazelnuts.

- French toast can be assembled 1 day ahead before baking; cover tightly with foil and chill.

- Bring the almond milk, 1 3/4 cups water, the diced bananas, almond and vanilla extracts and pinch of salt to a boil in a large saucepan over high heat.
- Stir in the oats, cocoa powder and 1 tablespoon of the honey and reduce the heat to medium. Cook, stirring frequently, until the oats are fully cooked to desired consistency, 6 to 7 minutes.
- Transfer to 4 bowls, top with the sliced bananas, walnuts, the remaining 1 tablespoon honey, cinnamon and chocolate chips and serve.
