Steps:
- Spray a 9×13″ baking dish with cooking spray. Preheat oven to 350 degrees F.
- In a large frying pan over medium-high heat, cook the bacon pieces just until fully cooked and beginning to become crispy. Don't overcook. With a slotted spoon, remove the bacon to a bowl, leaving the grease the pan.
- In the same frying pan over medium-high heat, cook the sausage, breaking up the links so that you have bite-sized pieces (or smaller). When sausage is about halfway done, add the onion and continue cooking until the sausage is fully cooked according. With a slotted spoon, remove the sausage/onion mixture to a bowl, leaving the grease in the pan.
- After both the bacon and the sausage are cooked and removed from the pan, add the hash brown potatoes to the frying pan. Cook the potatoes over medium heat in the remaining grease until they are softened and slightly browned. Layer the hash browns in the bottom of the prepared baking dish.
- Layer the cooked bacon, the sausage/onion mixture, and the ham evenly on top of the hash browns. Next, sprinkle the cheese is evenly on top of the meats.
- In a large bowl, whisk together the eggs with the milk, salt, pepper, and garlic powder. Pour the egg mixture on top of the layered ingredients in the baking dish.
- Bake in the oven for about 35-40 minutes, or until the egg is completely set and the cheese is hot and bubbly.

Steps:
- Heat the oil in a small nonstick skillet over medium heat. Divide the sausage in half and form each piece into a thin 4-inch patty. Add the patties to the skillet and cook until golden and cooked through, about 2 minutes per side. Transfer to a paper towel-lined plate. Reserve the skillet and drippings.
- Whisk together the eggs with the cream cheese, chives, cilantro, parsley, a sprinkle of salt and a few grinds of pepper.
- Heat the skillet and drippings over medium heat. Add the eggs and stir for the first 30 seconds with a silicone spatula to break up the curds as they cook. Stop stirring and let the eggs cook another 30 seconds (they will still be wet on top), then slide the omelet onto a plate. Flip the eggs back into the skillet so the uncooked side is face down. Top one side of the eggs with the Cheddar. Cook until the eggs are cooked through but still soft, another 30 seconds to 1 minute.
- Put a sausage patty "bun" on a plate. Using the silicone spatula, fold the omelet in half, then into quarters before sliding it out of the skillet and onto the sausage patty. Top with the sliced avocado and the second sausage patty "bun."
MEAT LOVERS BREAKFAST BREAD
This is a hearty, meaty breakfast bread that is as versatile as your imagination wants to let it be. Add as many meats and ingredients as you like, or simply scale it back to simply Ham and Cheese. All delicious, however, we like the Meat Lovers Breakfast bread the best.

Steps:
- I find it easier to pre-cook the bacon and breakfast sausages in microwave on a plate lined with paper towels to catch the drippings. For one bacon slice and 2 breakfast sausage links, it takes about 1-3 minutes depending on microwave power. Remove and let cool, then chop sausage and bacon into small bits.
- Meanwhile, quarter-slice the hot dog lengthwise into four thin strips, then dice.
- Dice up 1/4 cup of ham.
- Next, dice the tomato and green onions.
- Break the eggs into a medium sized bowl and whisk. Add a splash of milk, and salt and pepper to taste. Whisk in the chopped tomato and scallions and put aside.
- Heat a non-stick frying skillet over medium heat. Lightly coat the bottom with oil of your choice.
- Fry the diced hot dog and ham until lightly browned. Add the cooked breakfast sausage and sliced bacon to brown.
- Pour the egg mixture over the meat in the skillet and scramble.
- Just before taking out of pan, sprinkle shredded cheese throughout. The residual heat will melt the cheese to a nice, gooey consistency.
- Serve in a warm tortilla, and with salsa or hot sauce if preferred.
- Enjoy!
