MY FAVORITE CREAM CHEESE FROSTING
I found this on allrecipes.com and wanted to put it on here so I always know where it is and so its easy to access. And to share the goodness with others as well. I really like this frosting because you can really TASTE the cream cheese not like other frostings.

Steps:
- In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.
MY FAVORITE CARAMEL FROSTING
Got this recipe from my grandmother. It can be alittle tricky to make if you don't pay attention to the temp. but, it's great.

Steps:
- Sprinkle 1/2 cup sugar in a heavy saucepan; place over medium heat. Cook, stirring constantly, until sugar melts and syrup is light golden brown.The sugar will start to clump, this is normal, just keep stirring.
- Combine reamaining 2 1/2 cups sugar, milk, beaten egg, and salt, stirring well, stir in the butter. Stir mixture into carmelized sugar, the mixture will lump again, just keep stirring.
- Cook over medium heat stirring frequently, until a candy thermometer registers at 230F, this takes about 15-20 minutes, but don't rely on the time! Check the thermometer!)Cool mixture 5 minutes.
- Beat mixture with a WOODEN spoon to almost spreading consistency. The mixture will cool and thicken quickly at this point. Spread on a cooled cake.

- Combine cream cheese and butter in mixing bowl and beat at low speed for about 30 seconds.
- Add powdered sugar, mixing in a little at a time, until it is all incorporated.
- Add more sugar, as necessary to reach desirable consistency.
- Add vanilla, increase mixer speed to medium and beat until frosting is fluffy, about 1 minute more.
- Use to frost your favorite cake or cupcakes.

I just love cream cheese frosting! My delicious tangy and not to sweet cream cheese frosting is wonderful spread on many different kinds of cakes. Sometimes I like to add 2 teaspoons of grated lemon, orange, or lime zest to the recipe for a bright citrus flavor.

- In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 cups confectioners’ sugar, the vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it).
- Cover and store leftover frosting for up to 5 days in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator then beat the frosting for a few seconds so it’s creamy again.
