1 package (7 ounces) elbow macaroni
1/4 pound sliced bacon, diced
1/2 pound sliced fresh mushrooms
1/3 to 1/2 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2/3 cup cider vinegar
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup sliced radishes
2 tablespoons minced fresh parsley

Steps:

  • Cook macaroni according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon. In the same skillet, saute mushrooms in drippings until tender; remove with a slotted spoon. Add the sugar, flour, salt and pepper to the skillet; gradually stir in vinegar until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened., Drain macaroni. In a large bowl, combine the macaroni, onion and celery. Drizzle with vinegar mixture. Add mushrooms and bacon; toss to coat. Garnish with radishes and parsley.

10 slices bacon
1 cup mayonnaise
3 tablespoons dry ranch salad dressing mix
¼ teaspoon garlic powder

1 large tomato, chopped
1 (4.25 ounce) can sliced black olives
1 cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix, garlic powder, and garlic pepper. Stir in milk until smooth. Place rotini, bacon, tomato, black olives and cheese in bowl and toss to coat with dressing. Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

10.5 oz grape tomatoes, (halved)
10 slices thick cut bacon, (cooked & rough chopped)
8 oz block sharp cheddar cheese, (cubed)
4 green onions, (sliced)
fresh chopped parsley as optional garnish
8 oz sour cream
1/2 C real mayonnaise
1 tsp distilled white vinegar
1 Tbsp dried dill
1 Tbsp dried parsley
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried oregano
1/2 tsp coarse ground pepper
1/2 tsp salt

Steps:

  • Add pasta to boiling water. Cook for about 7 minutes for al dente pasta. Drain in colander and rinse with cool water.
  • While pasta is cooking, prepare bacon. Rough chop bacon and set aside.
  • Halve grape tomatoes, slice green onions including tops, cut block cheddar into small cubes.
  • Add pasta, bacon, tomatoes, green onions, & cheese to large bowl and toss.
  • Whisk together ingredients for dressing in a small bowl, then pour over salad when well combined. Gently toss salad until all ingredients are coated with dressing. Serve immediately.

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

One 5-ounce package baby spinach
4 large eggs
8 slices bacon, cut crosswise into 1/4-inch-thick pieces
One 3.5-ounce package cremini mushrooms, sliced
1 garlic clove, minced
Kosher salt and freshly ground black pepper
3 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 small red onion, thinly sliced

Steps:

  • Place the spinach in a large bowl and leave at room temperature. Bring a medium pot of water to a boil over medium-high heat. Use a slotted spoon to gently lower the eggs into the water. Boil until both the whites and yolks are set (hard-boiled), about 10 minutes. Transfer to a small bowl filled with ice water and cool completely. Once cool, peel the eggs and cut each into quarters.
  • Meanwhile, put the bacon in a large skillet and set over medium heat. Cook, stirring occasionally, until golden brown and crisp, 6 to 8 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate to drain. Remove half of the bacon fat to a small bowl and reserve.

Cook, stirring occasionally, until tender, 3 to 4 minutes. Pour in the reserved bacon fat, vinegar, mustard and honey and whisk until smooth and emulsified.   • Pour the hot bacon dressing over the spinach and toss until evenly coated and slightly wilted. Transfer to a platter and top with the eggs, red onion and reserved bacon.

When the temperature soars in the summer I can't face hot meals and serve nothing but assortments of salads, cheese and cold cuts for days on end. I value "main course" salads that will keep in the fridge from one meal to the next, and this one fits the bill. Fresh peas are quite amazing, but expensive and time consuming to shell. Frozen ones are not the same, but perfectly fine. If you use frozen peas, prep time will be much quicker. I have a big crop of snow peas this year; I think I will try them in this salad.

2 cups shelled peas
8 ounces small dry pasta
8 ounces bacon
2 -3 stalks celery
1/2 cup mayonnaise (I use "light")
1/2 teaspoon celery seed
1 teaspoon dried mint
1/4 teaspoon ground black pepper
1/4 teaspoon ground cumin
lemon wedge, if desired

Steps:

  • Shell the peas.
  • One quart of peas in the pod should yield about two cups of peas.
  • Cook the pasta in plenty of boiling water until it is al dente.
  • Steam or boil the peas until tender.
  • When each of these is done, plunge them into cold water to stop them cooking and to cool them.
  • Meanwhile, chop the bacon into 1" pieces and fry it until crispy.
  • Drain it well and allow it to cool.
  • Wash and chop the celery finely.
  • Add the bacon and celery to the cold drained pasta and peas.
  • Mix the celery seed, pepper, cumin and mint into the mayonnaise and stir it into the salad.
  • Refrigerate the salad for 20 minutes to an hour to allow the flavours to blend before serving.
  • Serve garnished with a wedge of lemon, to be squeezed over if you like your salad a little tarter.

Steps:

  • Combine sugar and flour in small bowl. Gradually whisk in vinegar, then egg. Whisk in broth.
  • Cook bacon in heavy large skillet over medium heat until crisp and brown. Whisk in vinegar mixture. Stir until dressing comes to simmer and thickens. Season dressing to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature. Rewarm over low heat before continuing.)
  • Place endive in large bowl. Toss with enough dressing to coat. Serve, passing remaining dressing separately.
