CREAMY GREEN PASTA



Creamy Green Pasta image

This dish is so satisfying and unctuous. I use unsweetened, plant-based single cream (light cream) with greens tossed through. I then top with crispy, toasted breadcrumbs to add another texture to finish off this crowd pleaser.

Number Of Ingredients 14

Flaky sea salt and freshly ground black pepper
14 ounces (400 grams) tagliatelle or pasta of your choice
1 tablespoon olive oil
1 leek, trimmed, rinsed and finely chopped
5 ounces broccoli (1/2 head), cut into bite-sized florets
1 cup frozen peas, thawed
6 ounces frozen spinach, thawed and finely chopped (4 pieces)
2 tablespoons B12 nutritional yeast flakes
2 1/2 cups unsweetened plant-based single cream (light cream)
Zest of 1 lemon
2 tablespoons extra-virgin olive oil
2 slices stale bread, processed to fine crumbs
Flaky sea salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley leaves, finely chopped

Steps:

  • For the pasta: Bring a large pot of salted water to the boil. Cook the pasta as per the package instructions (10 to 12 minutes).
  • For the toasted breadcrumbs: Heat a large sauté pan over medium-high heat and add the extra-virgin olive oil. Once hot, add the breadcrumbs, along with a good seasoning pinch of salt and pepper, and fry, stirring frequently, until golden and crisp, about 3 minutes. Now stir in the chopped parsley and tip out into a bowl. Set aside.
  • Now add the olive oil to the same pan, then add the chopped leeks and broccoli florets and sauté until just cooked through, about 4 minutes. Stir in the peas, chopped spinach and B12 flakes.
  • Remove the pan from the heat and stir in the plant-based cream. Return the pan to the heat and season with a big, generous pinch of sea salt and a generous helping of black pepper. Add the zest of the lemon.
  • Drain the cooked pasta and add to the pan, tossing to coat in the sauce. Sprinkle with the crispy breadcrumbs and serve.

FENNEL AND SAUSAGE RAGU OVER PASTA

This ragu would also be excellent served over instant polenta instead of pasta.

1 fennel bulb (sometimes called anise) with fronds
1 medium onion, chopped
1 tablespoon olive oil
1 pound sweet Italian sausage, casings discarded
1/2 cup dry white wine
2 cups prepared marinara sauce
1 pound rotini, fusilli, or other spiral pasta

Steps:

  • Trim stems from fennel bulb and cut away any brown spots from outer layer. Chop and reserve 2 tablespoons fronds and chop bulb. Saute fennel bulb and onion in oil in a 12-inch heavy skillet over moderately high heat, stirring, until beginning to brown. Add sausage and cook, stirring and breaking up lumps with a fork, until no longer pink. Add wine and simmer until reduced by about half, then add marinara sauce and simmer, stirring frequently, until vegetables are tender and sauce is thickened, about 10 minutes.
  • While sauce simmers, cook pasta in a pot of boiling salted water until al dente, 8 to 10 minutes. Drain and toss with sauce. Sprinkle with reserved fennel fronds.

2 eggs
Freshly grated Parmigiano Reggiano cheese
2/3 pound leftover spaghetti with sauce
Salt
3 tablespoons extra virgin olive oil

Steps:

  • In a bowl, beat eggs with freshly grated cheese before tossing with leftover spaghetti. Make sure the spaghetti is fully covered with the egg. Add a dash or two of salt, to taste, noting that the leftover spaghetti is already seasoned with salt.
  • Heat the olive oil in a saucepan. To test oil temperature, drop a piece of spaghetti into the pan. If it sizzles upon contact, the oil is ready.
  • Pour the spaghetti mixture into the pan and flatten it out like a pancake. Fry for 2 minutes on high heat, or until golden brown.
  • To flip the pasta, cover the pan with a plate larger than the pan, and hold it covered. Flip the pan and plate together to transfer the pasta onto the plate, then slide the uncooked portion back into pan and continue cooking for another 2 minutes, or until golden brown.
  • Remove the pizza pasta from the pan and place it on a plate lined with a paper towel to absorb the excess oil. Serve warm or cold.

CHINESE CHICKEN SALAD WITH PASTA



Chinese Chicken Salad with Pasta image

3/4 pound fettucine
12 ounces cooked chicken or smoked chicken
4 scallions, thinly sliced
2 to 3 tablespoons Oriental sesame oil
2 to 3 tablespoons rice vinegar
2 teaspoons Chinese chili paste with garlic
1/4 cup chunky peanut butter
Salt
Crushed red pepper
Spinach leaves as a bed for salad
2 Kirby cucumbers, peeled, seeded and grated for garnish
Chopped peanuts and/or cilantro leaves for garnish, optional

Steps:

  • Boil the pasta until al dente, about 10 minutes.
  • While the water is coming to a boil for the pasta and the pasta itself is cooking, cut the chicken into strips about 2 inches long and 1/4-inch wide. In the bottom of a mixing bowl combine the

  • Add the chicken. When the pasta is done, drain and rinse it under cold water to stop the cooking process and pat dry. Add the pasta to the bowl, toss the ingredients together and adjust the seasoning.
  • Transfer the salad to a platter lined with spinach leaves (dressed or not as you wish with a vinaigrette or favorite salad dressing). Garnish with cucumbers, peanuts or cilantro.
