The BEST oatmeal pancakes! Healthy and easy oatmeal pancakes with yogurt and oat flour made right in your blender. Gluten free!

Number Of Ingredients 12

2 tablespoons canola oil (or melted, cooled unsalted butter or melted, cooled coconut oil)
3/4 cup nonfat plain Greek yogurt
1/2 cup nonfat milk
2 cups old-fashioned oats (, divided (or quick oats; do not use steel cut or instant))
2 large eggs
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup mix-ins of choice: toasted chopped nuts (, chocolate chips, blueberries, or diced fresh or dried fruit (optional))
For serving: pure maple syrup (, butter, or any of your favorite pancake toppings)

Steps:

  • If you'd like to keep the pancakes warm between batches, place a rack in the center of your oven and preheat the oven to 200 degrees F.
  • Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
  • Blend until the batter is smooth, stopping to scrape down the sides of the blender as needed. Continue blending until you don't see any remaining bits of oats.
  • Stop the blender, stirring the remaining 3/4 cup oats and any desired mix-ins. Do not blend again. Let the batter sit for 10 minutes while you heat the skillet/griddle and prep any toppings.
  • Heat a large nonstick skillet or griddle over medium-low heat. Lightly butter or oil the pan if needed (some nonstick pans do not need this).
  • Once the skillet is hot, drop the batter by 1/4 cupful into the pan. Let cook gently for 3 to 4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.
  • Gently flip, then cook on the other side for 1 to 2 minutes. They should look golden on both sides. If desired, transfer the pancakes to a baking sheet and keep them warm in the oven between batches. Repeat with the remaining batter.
  • Serve hot with desired toppings.

2 cups quick oats
3/4 cup granulated sugar
3/4 cup whole milk
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 egg
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

⅔ cup quick-cooking oats
⅔ cup all-purpose flour

¼ cup milk, or more as needed

Steps:

  • Place 1 cup milk in a microwave-safe bowl; heat in microwave until bubbling, about 2 minutes. Stir in the oats.
  • Mix flour, brown sugar, baking powder, salt, and cinnamon together in a bowl. Whisk eggs, 2 teaspoons melted butter, and vanilla extract together in a separate bowl; add 1/4 cup milk. Mix oat mixture and egg mixture with flour mixture; stir to combine.
  • Heat 2 teaspoons butter on a griddle or skillet over medium heat; pour about 1/3 cup batter into the hot butter. Cook pancakes until bubbles appear on top layer, about 5 minutes. Flip and cook other side until evenly browned, about 5 more minutes.

2 large potatoes, peeled and cubed (about 2 cups), divided
1 medium onion, cubed
2 large eggs
3 tablespoons all-purpose flour
2 tablespoons minced fresh parsley
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon Worcestershire sauce
1/8 teaspoon ground nutmeg

Steps:

  • In a blender or food processor, place 1/2 cup potatoes, onion, eggs, flour, parsley, baking powder, salt, pepper, Worcestershire sauce and nutmeg. Process until smooth. Add remaining potatoes and pulse until chopped (two to three times). Pour by 1/4 cupfuls onto a hot well-oiled skillet or griddle. Fry over medium heat until golden on both sides.

1/3 cup butter
2 large eggs
3/4 cup brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla

1 cup milk
2 tablespoons milk
3 cups oatmeal (regular or quick)

Steps:

  • Melt butter.
  • Grease 1 1/2 quart baking dish and drop in eggs and beat well.
  • Add brown sugar, baking powder, vanilla, nutmeg or cinnamon, and salt. Mix well, no lumps.
  • Whisk in butter and both measures of milk, then add oats.
  • Stir well, and refrigerate overnight.
  • Bake, uncovered, at 350 for 35-45 min, or until set in the middle.
  • Serve hot with warm milk poured over.

These are great pancakes made with Amish Friendship Bread Starter. I am always looking for new and creative ways to use my starter!!! These pancakes smell fabulous, and are a bit sweet with yeast flavors. I thought they were great with just butter on top. I sometimes add cinnamon or Apple Pie Spice and sub out apple butter for the oil. . .just an idea!

1 egg
1 cup amish starter
1/2 cup milk
2 tablespoons oil (may sub applesauce)
1 teaspoon vanilla
1 1/2 teaspoons baking powder
1 cup flour

Steps:

  • Beat the egg, then add in wet ingredients.
  • Add dry ingredients to the wet ingredients and mix well.
  • If batter seems too thick, add more milk 1 Tbsp at a time until desired consistency.
  • Preheat griddle pan to med-high, spray with non-stick cooking spray and pour batter onto griddle using 1/4 cup of batter per pancake.
  • Once pancake looks set around the edges and a few bubbles are coming up thru the middle of the pancake, turn it over and cook another minute or two until done.
  • Serve hot with butter.
