Steps:
- Place the green beans into a pot with enough water to cover. Add the baking soda to the water; bring the mixture to a boil, reduce heat to medium, and cook until the green beans are nearly tender, 7 to 10 minutes. Drain the water from the green beans; set aside.
- Place the potatoes into a large pot with enough salted water to cover; bring to a boil, reduce heat to medium, and continue cooking until almost tender, about 20 minutes. Remove from heat, but do not drain the water from the pot.
- Heat the butter in a large skillet over medium heat. Cook the onion and bacon bits in the melted butter until the onions are soft and translucent, 5 to 7 minutes; add to the large pot with the potatoes, along with the cream of chicken soup and milk; stir until smooth. Add the green beans. Season with salt and pepper.
- Place the large pot over low heat and cook the soup at a simmer until hot and the flavors have melded, about 30 minutes.

This soup has been passed down for generations beginning with my great-grandmother. I make it often, especially when I can use homegrown beans, carrots, onions and potatoes.

5-INGREDIENT CREAMY WHITE BEAN SOUP
Sweet Italian sausage and white beans work double duty here to keep the number of ingredients low. The sausage is filled with spices and aromatics that punch up the flavor of the soup, so you don't have to add any extra seasonings. Plus, the onion is sautéed in the sausage fat instead of an in extra ingredient like olive oil. The white beans not only infuse the dish with tons of satisfying protein--they become super creamy when they are pureed at the end, so no cream is necessary.

Steps:
- Heat a large Dutch oven or pot over medium-high heat. Add the sausage and break it up into small pieces with a wooden spoon, making sure the pieces sit in a single layer (if they don't, remove some and work in batches). Cook, stirring several times, until no longer pink on the outside and golden brown in places, about 10 minutes. Transfer to a plate with a slotted spoon.
- Add the onions to the pot. If there are lots of browned bits on the bottom that look like they might burn, add 2 tablespoons of broth and scrape the bottom with a wooden spoon. Cook the onions, stirring frequently and adding more broth to the bottom of the pot as needed, until completely tender, about 10 minutes. Add the white beans and remaining broth and bring to a boil. Reduce to a simmer and cook over medium heat until the beans split open, about 10 minutes.
- Use an immersion blender to puree the soup in the pot until completely smooth or carefully transfer the hot liquid to a blender to puree. Season the soup with salt. Serve the soup topped with the sausage.
CREAM OF GREEN BEAN SOUP
I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

Steps:
- Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
- Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
- Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
- Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

Steps:
- For the ham starter: Trim meat off the bone. Place meat and bone in a pressure cooker and cover with water. Pressure cook for 45 minutes. Release pressure, then clean and chop meat and strain broth. This can be divided into 4 portions of starter. Freeze 3 of the portions for future use and set the remaining portion aside.
- For the glace: Put flour and salt in food processor. While it's running, stream in the eggs. Mix thoroughly. Put bench flour on a table, then dump dough out and knead to combine. Let rest 20 minutes. Flour table again and roll to about 1/4-inch thick, then cut into small squares with a pizza cutter. Make sure there's enough flour so the dumplings don't stick together. Rough them up in your hands to make them rustic looking. Put into a dry strainer and shake off excess flour.
- For the soup: Combine the reserved ham starter, ham base, green beans and their juice and potatoes in a pot. Add water to fill about three-quarters of the way. Bring it all to a boil. Add the glace directly to the pot and cook until they float.
- Combine the evaporated milk, sour cream and heavy cream in a separate bowl. Add some hot broth and whisk until completely smooth. Add the tempered cream mixture to the soup. Add salt, pepper and garlic powder to taste. Let simmer together for 45 minutes.

Reserve the meat and discard the bones and skin. Strain the stock.
CREAM OF FRESH GREEN BEAN SOUP
This is from the original Enchanted Broccoli Forest cookbook. It is an incredibly delicious fresh soup! It is ridiculously simple and is specifically designed for very, very fresh green beans - straight from a garden, if possible. The simplicity assumes that the beans are delicious in and of themselves. If you try this with inferior (old, tough, out-of-season) or frozen beans, the results can't be guaranteed.

HEALTHY CREAM OF GREEN BEAN AND CORIANDER SOUP
Green beans (string beans) are wonderfully nutritous and inexpensive veggies in season. Buy the freshest beans you can find. The other veg ingredients work together to create a healthy vegetable stock base without straining out the essential fibre and flavour. A kitchen essential is a hand blender, just pop it into the pot and pulse until you have the perfect texture. (A blender works too, but entails extra effort transferring the soup in and out of the pot.) Milk adds calcium, protein and creaminess to this perfect all-natural low-effort vegetarian soup.

Steps:
- Heat the oil and masala and onion in a heavy-bottomed saucepan or pot over medium heat, and stir with a wooden spoon for a few minutes.
- Add celery, carrot and garlic, stirring for another 8 minutes or so.
- Add green beans, topped-and-tailed and roughly chopped into approximately 2cm or 1 inch pieces, diced potatoes, boiling water, white pepper, salt and coriander; half-cover with a lid and simmer for about 40 minutes, stirring with a wooden spoon now and then.
- With a hand blender puree the soup, using a pulsing action, until you have an almost smooth soup. The potato will have thickened the bean soup by now; and the soup will be green and slightly textured.
- Add milk, using less or more milk to create the consistency you want, and simmer on low heat for another few minutes.

QUICK PUREED GREEN BEAN SOUP
Our family has known for decades, that if you have a canker(mouth)sore, you eat 1/2 can of green beans and the canker will be gone the following day. A prescribed medication, recently, rendered my mouth full of cankers and too sore to even chew canned green beans. DIL suggested putting the canned green beans in my Bullet blender (best invention in years). My thought was, baby food. Okay! DH suggested soup! Thus this tasty recipe was born only an hour ago. I am waiting to see what the Zaar-ist comunity will add to it. Tabasco? Bacon? A grilled cheese sandwich? I dedicate this recipe to my DIL, Shar.
