2 cups walnut halves or pieces, unseasoned
3 Tbsp. pure maple syrup
1/3 cup packed brown sugar
1/4 tsp. cayenne pepper
1/4 tsp. ground ginger
1/4 tsp. ground cinnamon
1/2 tsp. kosher salt
1/4 tsp. black pepper

Steps:

  • Preheat the oven to 350 degrees F. Spread the walnuts in an even layer onto a rimmed baking sheet. Place in the oven and roast for 5 minutes. Shake the pan to redistribute the walnuts and return to the oven for 3 minutes longer. Alternatively, in a large non-stick skillet over medium heat, toast the walnuts, stirring constantly, until they are hot and lightly toasted, about 5 minutes.
  • While the walnuts are roasting, pour maple syrup into a large bowl and set aside.
  • Whisk together the sugar, cayenne pepper, ginger, cinnamon, salt, and black pepper. Set aside.
  • Immediately add the hot walnuts to the maple syrup and toss to coat. Stir in the spice mixture until the walnuts are evenly coated.
  • Spread the walnuts on a baking sheet in a single layer and cool completely before serving.

3 cups walnut halves
2 tablespoons extra-virgin olive oil or melted butter if not vegan
1/4 teaspoon ground coriander
1/2 teaspoon ground cumin
1 1/2 teaspoons smoked paprika
1/2 teaspoon red chili flakes
1 tablespoon fresh thyme, minced (or 1 teaspoon dried thyme)
1 teaspoon fresh rosemary, minced (or 1/4 teaspoon dried rosemary, chopped)

Steps:

  • Preheat oven to 350°F.
  • Place walnuts in a large bowl and toss walnuts with olive oil.
  • Add all spices in the bowl and toss well.
  • Lay the spiced walnuts on a baking sheet in a single layer. Optional: use aluminum foil or parchment paper for easy clean-up. Bake for 5-10 minutes until golden brown. Enjoy!
  • Heat olive oil or melt 2 tablespoons butter in a large, heavy skillet over medium heat, 2-3 minutes.
  • Add walnuts, sprinkle with desired seasonings. Stir frequently to prevent walnuts from burning. Toast for 1-2 minutes or until the walnuts are golden brown. Transfer to a cookie sheet or a plate to let cool.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.

1 tablespoon vegetable oil
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Preheat oven to 350*.
  • Place walnuts in a 15 1/2" x 10 1/2" jelly roll pan.
  • Toast walnuts in oven 20 minutes, stirring occasionally.
  • Meanwhile, in a small bowl, mix sugar, vegetable oil, Worcestershire sauce, ground red pepper, and salt.
  • Remove walnuts from oven, drizzle spice mixture over the nuts and toss until thoroughly coated.
