HEARTY CHILI
This hearty chili recipe from Paula Deen is an easy to make meal. Ingredients include ground beef, hot Italian sausage and beans. Prep time is approximately 20 minutes and cooking time takes 1 hour and 30 minutes over low heat on the stove top.

Steps:
- Into a large pot over medium heat, toss in the onions, bell peppers and garlic, and sauté until tender, 6 minutes. Sprinkle in the spices to toast: chili powder, cumin, salt and pepper, and stir for 1 minute.
- Add the beef and the sausage, and stir and brown, while breaking it up with the back of a wooden spoon until crumbly and cooked through.
- Rinse the canned beans to reduce salt.
- Once brown, add the crushed tomatoes, diced tomatoes, tomato sauce, and beans. Bring to a boil, reduce heat to low, and cook for 1 1/2 hours, stirring on occasion.
HOT AND HEARTY OHIO CHILI CON CARNE WITH BEANS
This chili is an adaptation of the chili my dad used to make... with the main difference being the octane level. While this chile is hot, it is not unbearable and the heat can be tempered by serving with fresh french baguettes or tortilla chips. This chili is hearty, dark, and spicy- perfect for watching football on those cold winter afternoons.

Steps:
- First brown the ground beef in large saucepan, add onions and garlic when beef is about halfway done.
- Be sure not to burn garlic.
- Drain grease when meat is done.
- Add 1 1/2 cans crushed tomatoes (saving 1/2 can for later), and the stewed tomatoes.
- Add both cans of beans, draining most, but not all sauce.
- Add bell, red and jalapeno peppers.
- Puncture habeneros with a knife and throw into pot whole.
- Add spices to taste.
- Simmer.
- Pour beer into mixture.
- As it cooks, add remaining crushed tomatoes if needed to thicken to desired consistency.
- Simmer uncovered for one hour, stirring occasionally.
- When done serve with grated Monterey jack or hot pepper cheese over thick sliced baguette or tortilla chips.
- Garnish with fresh parsley.
- Eat habeneros only if you dare!

This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

- In a Dutch oven, cook the beef, pork and onions over medium heat until meat is no longer pink, breaking meat into crumbles. Add garlic; cook 1 minute longer. Drain. Add the beans, tomatoes, vinegar, cocoa, sauces, sugar and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours., Discard bay leaves. Serve with spaghetti. If desired, garnish with cheese, sour cream, tomatoes and onions.

- Place the pinto beans in a heavy dutch oven and fill with water so that it covers the beans by an inch. Let soak for 8 hours or overnight. (Alternately, can do a quick soak method: Bring the beans to a boil and cook for 2 minutes. Put the lid on the pot and turn off the heat. Let stand for 2 hours, then proceed to cook as usual)
- Remove the stems from the chiles and slice them open. Remove the seeds and the membrane.
- Rinse and drain the beans. Cover the beans with fresh water, bring to a boil, reduce heat to a simmer, cover and cook for 1 1/2-2 hours or until beans are tender.
