I eat this dish every New Year's day, it's supposed to bring you luck, and so far my life's been pretty good. It's also good anytime you need a hearty homey meal!

1 ½ cups dry black-eyed peas
1 pound ham hocks
1 onion, chopped
½ teaspoon crushed red pepper flakes
salt and pepper to taste
4 cups water
1 ½ cups long-grain white rice
1 cup shredded smoked Cheddar cheese

Steps:

  • In a large pan place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil. Reduce heat to medium-low and cook for 1 1/2 hours.
  • Remove ham hock and cut meat into pieces. Return meat to pot. Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper. Sprinkle shredded cheese over top, if desired. Serve

This is a modification of my father's hoppin' john recipe. The only difference between his and mine is the use of tomatoes. It's a great recipe for the holidays (New Year's) or any time during winter months. There are many versions of this recipe here, but this one is quick so you can throw it together after a long day at work for the whole family to enjoy!

1 pound sage pork sausage
1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
2 (15 ounce) cans black-eyed peas, drained
2 (14.5 ounce) cans diced tomatoes, with liquid
2 (14 ounce) cans chicken broth
2 cups water
salt to taste

Steps:

  • Crumble sausage into a skillet over medium heat and cook until evenly brown.
  • In a large pot, mix the cooked sausage, rice mix with seasoning packet, black-eyed peas, tomatoes, broth and water. Bring to a boil. Reduce heat to low, cover and simmer 20 minutes, or until rice is tender. Season to taste with salt.

1/2 pound sliced bacon, cut into 1-inch pieces
1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

½ pound bulk pork sausage
1 stalk celery, sliced
1 small onion, chopped
3 cloves garlic, minced
½ red bell pepper, diced
¾ cup brown and wild rice mix
1 (15 ounce) can black-eyed peas, drained and rinsed
1 (14.5 ounce) can diced tomatoes with juice
2 ⅓ cups chicken stock
1 tablespoon Cajun seasoning, or more to taste
salt to taste
freshly cracked black pepper to taste

Steps:

  • Cook and stir sausage in a large skillet over medium heat until meat is still slightly pink, about 8 minutes. Mix celery and onion into sausage; cook and stir until onion is translucent, about 5 more minutes. Stir garlic and red bell pepper into sausage mixture and cook until bell pepper is slightly soft, about 5 minutes.
  • Stir brown and wild rice mix, black-eyed peas, tomatoes with their juice, chicken stock, and Cajun seasoning into sausage and vegetables. Bring to a boil, reduce heat to low, and cover; simmer 45 minutes. Remove cover, raise heat to medium-low, and simmer until stew is thickened, about 15 minutes. A classic black eyed peas recipe, sometimes called Carolina Peas and Rice, cooked with bacon, sausage, and veggies, and served over fluffy rice!

¼ pound thick-cut bacon, (chopped)
2 andouille sausage links, (halved and slice thin)
1 small sweet onion, (peeled and chopped)
2 celery stalks, (chopped)
1 bell pepper, (seeded and chopped (any color))
1 jalapeno or serrano pepper, (seeded and diced)
2-3 cloves garlic, (minced)
1 ½ - 2 pounds frozen black eyed peas, (or field peas)
32 ounce chicken stock
1 tablespoon fresh thyme leaves
1 tablespoon cajun seasoning
½ cup chopped green onions
2 cups long grain rice, (rinsed well (or Carolina Gold rice))

Steps:

  • Set a medium sauce pot over high heat. Add the rice and 3 ½ cups water. Cover and bring to a boil. Then lower the heat and cook for 15-20 minutes, until light and fluffy. *See package instructions.
  • Set a large sauté pan over medium heat. Add the bacon. Cook and stir for 3 minutes, then add in the sliced sausage. Brown until the sausage looks crispy around the edges. Stir regularly.
  • Push the bacon and sausage to the sides of the pan and add in the onions, celery, bell pepper, jalapeno, and garlic. Sauté for 3-5 minutes to soften the vegetables.
  • Pour in the black eyed peas, chicken stock, thyme, and Cajun seasoning. Cover with a tight lid and simmer for 30-40 minutes, or until the black eyed peas are soft and tender. (If the broth absorbs before the black eyed peas are soft, add a little water to finish them off.)
  • Taste, then season with salt and pepper if needed.
  • Serve warm over rice with a sprinkling of green onions, and hot sauce on the side.

More stew than soup, it's a classic New Year's Day meal! I couldn't find a recipe that had everything I liked, so I took 4 different ones and combined parts to make it all my own. Served it to friends this New Year's Day with fresh baked bread and they all loved it (even the kids)! I used the ham bone and scrap ham from the left-over Christmas ham.

1 tablespoon olive oil
1 large meaty ham bone
1 ½ cups chopped onion
3 stalks celery, chopped
2 cloves garlic, minced
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 cups water
1 ¼ cups chicken broth, or more as needed
1 cup dry white wine
1 cup chopped ham
2 bay leaves
¼ teaspoon dried thyme
salt and pepper to taste
2 cups uncooked white rice
4 cups water

Steps:

  • Heat the olive oil in a large Dutch oven or soup pot over medium-high heat and brown the ham bone on all sides, about 15 minutes. Reduce heat to medium and stir in the onion, celery, and garlic, and cook until the onion is translucent, stirring often, about 5 minutes. Add the black-eyed peas, 2 cups of water, chicken broth, wine, ham, bay leaves, thyme, salt, and pepper; stir. Bring the mixture to a boil. Reduce heat and simmer until the mixture is thickened and the flavors have blended, 30 to 60 minutes. Add more chicken stock if the mixture is too thick.
  • About 30 minutes before serving, bring the rice and 4 cups of water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes. Let the rice stand covered for about 10 minutes to absorb steam.
  • Remove the ham bone from the soup, cutting any extra ham off the bone and returning it to the pot. Discard the bone. Stir the cooked rice into the black-eyed pea mixture until well combined and serve.

Steps:

  • Cook sausage, drain and crumble.

1/2 tablespoon butter
3/4 onion, chopped
1/2 garlic clove, finely chopped
1 3/4 cups dried black-eyed peas

11 cups chicken broth
3 cups water
1 cup rice
4 slices bacon, diced
1/2 cup celery, chopped
2 (8 ounce) cans carrots, sliced
1 (28 ounce) can stewed tomatoes, chopped

cumin, to taste
1 -2 teaspoon sugar
1 teaspoon salt
3/4 teaspoon pepper

Steps:

  • In a Dutch oven or soup pot, heat butter and olive oil over medium heat; saute onion for 1 minute, then add garlic and saute for 5 minutes.
  • Add peas, thyme, and 9 cups chicken broth, and bring to a boil.
  • Parboil peas, uncovered, for 3-5 minutes; then remove from heat and let rest for 20 minutes.
  • Add the water and bring to a boil.
  • Lower heat to simmer and cook, partially covered, stirring occasionally, until almost mushy (1 hour).
  • In a seperate pot, cook rice according to package directions.
  • Fry bacon, then add the celery and saute until it's clear.
  • When rice and celery are done add them to the peas along with all remaining ingredients (including remaining 2 cups broth).
  • Bring to a boil, and taste for seasoning.
  • At this point it isn't necessary to continue cooking, but you can cook longer if desired.
  • Serve with cornbread.

2 cups dried black-eyed peas, rinsed
1 small piece smoked turkey or ham hock
Kosher salt and freshly cracked black pepper
1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 medium onion, diced into 1/2-inch pieces
1 small red bell pepper, diced into 1/2-inch pieces
2 cloves garlic, minced
2 cups uncooked long-grain white rice
2 scallions, sliced

Steps:

  • Heat a medium heavy-bottomed saucepot or Dutch oven over medium-high heat. Add the black-eyed peas and cover with cold water by 1 inch (should be about 6 cups water). Add the smoked turkey and a pinch of salt and bring to a boil. Reduce to a simmer and cook over medium heat, covered, until tender, about 2 hours, then turn off the heat.
  • Melt the butter and oil in a large saucepot over medium-high heat. Add the onions and peppers. Season with salt and pepper and cook just until slightly softened, about 5 minutes. Add the garlic and cook 1 minute more. Add the rice to the pot and stir until toasted, about 5 minutes.
  • Add 3 cups water and 1 cup of the cooking liquid from the peas. Bring to a boil, then cover and cook over medium-low heat until the rice is tender and cooked through, 15 to 20 minutes. Fluff the rice with a fork and gently stir in 2 cups of the cooked peas (save the remainder for another use). Cover and cook for 10 minutes more. Transfer to a serving bowl and top with the sliced scallions before serving.

4 tbsp. butter
1 whole large onion, diced
4 cloves garlic, minced
1 whole green bell pepper, diced
2 stalks celery, diced
4 c. soaked black-eyed peas
5 c. low-sodium (or no-sodium) chicken broth
1 whole ham hock
Salt and pepper, to taste
Cayenne pepper, to taste
2 tbsp. white vinegar
White or brown rice, for serving

Steps:

  • Soak black-eyed peas in cool water for at least 6 hours. Rinse before using.
  • Heat butter in a large pot over medium-high heat. Add onion, garlic, green pepper, and celery and stir. Cook for 3 to 4 minutes. Stir in soaked beans, then add chicken broth, ham hock, salt & pepper, and cayenne to taste. Bring to a boil, then reduce heat and cover the pot for 30 minutes.
  • After 30 minutes, check the liquid level; if it's too soupy, cook with the lid off for another 15 minutes or so. If it's too thick, splash in a little more broth. Stir in vinegar, then taste for seasonings. Add more spice if needed.
  • Serve over white or brown rice, making sure to get plenty of the cooking liquid spooned over the top. Or, you may mix the bean mixture with the rice before serving.
  • Variations: Add red bell pepper, canned diced tomatoes, diced jalapenos, diced ham (instead of ham hocks), or sliced bacon (instead of ham hocks). Stir in torn-up kale when 5 minutes of cooking time remain. You can also use canned, drained black-eyed peas if preferred. Just use diced ham instead of ham hock and a little less broth, as peas won't need to cook as long.

1/2 lb dried black-eyed peas, soaked overnight and drained
2 garlic cloves, chopped
1 tablespoon olive oil
1 slice bacon or 1 -2 tablespoon ham fat
1 cup diced onion
1 cup celery & tops, diced
1 cup carrot, diced
1 bay leaf
1/4 teaspoon marjoram
1/4 teaspoon cayenne
1/4 teaspoon cumin
4 cups water
2 cups ham, diced
1 (15 ounce) can no-salt-added diced tomatoes
2 cups water
1 (4 1/4 ounce) package rice-a-roni long grain and wild rice mix with seasoning
1 lb kale, washed and trimmed

Steps:

  • Trim ham, if necessary. Fry 1-2 tbs of the ham fat or bacon in olive oil with garlic for about 1 minute. Add onion, carrots, and celery, and saute for about 5 minutes. Add beans, 4 cups water, and spices (don't add salt here.) Simmer for 40 minutes. Add ham, tomatoes plus 2 cups water (use the can to measure), and Rice-a-Roni with seasonings. Simmer another 30 minutes. Add in kale, (and 1 tsp salt here if you wish) and cook another 5-10 minutes, until kale is to your liking. Serve up with cornbread for a great meal!

GINA Ever since I was a little girl, my mom has been telling me that if you don't eat black-eyed peas on New Year's Day you'll have a bad year ahead of you. Now, when I was younger I didn't care a bit. I was going through that awkward stage anyway-how much worse could it be? But as I got older, I learned to love that black-eyed pea tradition, convinced that my year was going to be fantastic! And you know what's funny? I tell my girls the same thing. Who says traditions and superstitions aren't effective? Not to mention that black-eyed peas are rich in calcium and vitamin A. What could be bad about that? Of course, this being a Gina recipe, I added in my favorite collard greens. . . . Mmm, even better.

Yield serves 4 to 6

Number Of Ingredients 17

1 small bunch (about 1 pound) collard greens
2 tablespoons olive oil
6 ounces smoked ham steak, cut into 1/4-inch cubes
1 medium onion, chopped
4 cloves garlic, minced
1 medium carrot, chopped
1 stalk celery, chopped
1/4 teaspoon crushed red-pepper flakes
Kosher salt and freshly ground black pepper
6 cups low-sodium chicken broth
1 dried bay leaf
One 15 1/2-ounce can black-eyed peas, drained and rinsed
One 15-ounce can diced tomatoes, with juices
1 cup cooked long-grain white rice
Dash of hot sauce, preferably Tabasco
Dash of Worcestershire sauce
Parmesan cheese, grated, for topping

Steps:

  • Remove the stems and center ribs from the collard greens. Stack about six leaves on top of each other, roll into a cigar shape, and slice into thin ribbons.
  • Heat the olive oil in a large, heavy pot over medium-high heat. When the oil is hot, toss in the ham, onion, garlic, carrot, and celery, and cook, stirring, until the vegetables are tender, roughly 4 minutes. Sprinkle in the red-pepper flakes, and season with salt and pepper. Add the collard greens, and sauté until they begin to soften.
  • Pour in the chicken broth, the bay leaf, the black-eyed peas, and the can of tomatoes with their juices. Bring to a simmer, and cook for 30 minutes. Stir the rice into the soup to warm. Taste for seasoning, and add more salt and pepper, hot sauce, and Worcestershire sauce.
  • Spoon into bowls, and sprinkle each bowl with Parmesan cheese.

Hoppin' John is a southern dish served on New Year's Day ususally accompanied by cornbread. According to custom, Black-eyed Peas represent "coins," greens represent money or "green backs", corn bread represents "gold," and tomatoes symbolize "health". This version is more of a soup or stew version since the greens are included and not served separately.

1 tablespoon(s) olive oil
1 medium onion, chopped
1/2 medium red or green bell pepper, chopped
1/2 - 1 pound(s) bone-in smoked pork chop (or similar: ham, pork hock, bacon, pork sausage, etc.)
1 can(s) diced tomatoes, with juice - about 14 oz can
4 teaspoon(s) chicken bouillon powder, or 4 cubes, or 1 qt. chicken broth
4 cup(s) water, skip if using chicken broth
3/4-1 cup(s) rice
1 teaspoon(s) chili powder
2-3 cup(s) torn spinach leaves
1 tablespoon(s) red wine vinegar, optional
salt and pepper, to taste

Steps:

  • Get black eyed peas ready the night before, or by the quick method the day of - see package. Or use frozen or canned black eyed peas - you will need about 2 cups total.
  • Add oil to soup pot, heat and add onions and peppers. Saute until softened.
  • Meanwhile, cut as much meat off the smoked port chop or ham bone as possible. Trim off fat. Set aside. If using boneless ham, just cut up.
  • Add black eyed peas, rice, water or broth, bouillon powder/cubes, chili powder, can of tomatoes to pot. Add pork chop bone, if using meat with a bone.
  • Bring to boil, reduce heat, simmer until beans are softened. About 1/2 hour.
  • Remove pork bone, add reserved meat and spinach leaves. Cook until spinach leaves are wilted and meat is warm.
  • NOTE: If using bacon or sausage as the meat, you can fry it first. Then remove from pot and set aside. Use the bacon or sausage fat to saute the onions and peppers instead of using oil, if desired.
