- Uncover the skillet; stir in the garlic, thyme and 1/2 teaspoon salt. Add the rice and stir to coat. Stir in the black-eyed peas and 2 cups water. Bring to a boil, then reduce the heat to a gentle simmer. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Remove from the heat and let sit, covered, 5 minutes.

CHEF JOHN'S SAUSAGE & SHRIMP JAMBALAYA
While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into a soup recipe. Serve garnished with green onion.

EMERIL'S HOPPIN' JOHN
From The Essence of Emeril....Hoppin' John is a New Year's Southern Tradition:Black-Eyed Peas for good luck, ham or ham hock for good health, and the greens for financial success! I have tried several different recipes for this and so far, this is my favorite! I sometimes add chopped spinach or collard greens even though this particular recipe doesn't call for them, and it's so delish that way too! Happy New Year!!

- In a heavy 5 qt saute pan over medium-high heat, add olive oil and brown the cut up chicken that has been seasoned with Tony's (NOTE: this is not the amount in the ingredient list; simply sprinkle the cut-up chicken with a little [or a lot] Tony's) for 3-5 minutes. Do not cook the chicken through. Remove chicken from pot.
- Add the sliced sausage to the pot and brown for 5 minutes. Then add the onion, bell pepper, and celery. Mix well and scrape bottom of pan to remove and incorporate any browned pieces of chicken and sausage. Simmer covered on medium heat for about 5 minutes, stirring halfway through cooking.
- Return chicken to pot and add the tomatoes, broth, and seasonings above. Mix well and taste for flavor. Add raw rice and mix well. Bring mixture to a boil, cover, and lower heat to medium-low. Simmer for 10 minutes and then stir mixture to bring rice to the top.
- Cover and lower heat (very gentle simmer) and cook another 30 minutes or until rice is done. Do not lift the lid while the jambalaya is cooking.

- Soak the black-eyed peas overnight and drain. Soaking short cut method: Add peas and 8 cups of water to a pan; bring to a boil and let boil for 2 minutes. Turn off heat, cover and let sit for 1-1 ½ hours. Drain and proceed with recipe.
- Add black-eyed peas, onion, chilies and ham shank to a large stock pot or Dutch oven with 8 cups of water. Bring to a boil.
- Reduce heat so the pot is gently boiling. Boil for 1 to 1 ½ hours (so peas are soft but not mushy). Periodically check pot to skim off/discard ‘foam’ (protein compounds released when cooking beans) and to ensure there is enough water. Should the water begin to disappear below the top of the peas add enough so they will not dry out or stick to the bottom of the pan (but not more than they can absorb).
- Take half of the black-eyed peas and the pork shank and put them into another pot with a tightly fitting lid. Add the rice and enough water that it is a ½ inch above the top of the rice.
