This is a great copycat recipe for the original Hooters fried pickles.

- In a blender combine eggs, salt, and juice of half a lemon.
- Process briefly to combine.
- While motor is running, add canola oil in a slow, steady stream until mayonnaise has emulsified.
- Transfer to a non-reactive bowl.
- Add ketchup, sweet pickle relish, horseradish, hot sauce, scallions, cayenne pepper, salt, and lemon juice.
- Season with salt and pepper to taste.
- Set aside to serve with fried pickles.

- Heat the oil to 350 in a large pot or use a deep fryer on high.
- Place the pickles in a medium bowl and cover with the buttermilk. Stir the flours, salt, paprika, and cayenne together in another bowl; mix well. Take about a handful of the pickles out of the buttermilk and dredge in the seasoned flour. Shake off the excess flour and place the coated pickles in the hot grease. Be careful not to place too many pickles into the hot grease, or the pickles won't fry up crisp. Fry the pickles until golden brown. Scoop them out with a slotted spoon and put them on the paper towels to drain.

- Beat 1 egg, 3/4 cup milk and a pinch of cayenne. Place 1/4 cup cornstarch in a shallow dish. In another dish, mix 1/2 cup each cornstarch and cornmeal with 2 tablespoons chopped dill, 2 teaspoons paprika, and salt and pepper. Dip about 3 dozen cold pickle slices in the plain cornstarch, then the egg wash, then the cornmeal mixture. Fry in 2 inches of 375 degrees F canola oil until golden, about 3 minutes. Drain on paper towels and serve with ranch dressing.
