HONEYDEW GRANITA SPRITZER
Seltzer enlivens this effervescent drink, which consists of sweet honeydew melon puree and mouth-puckering lime juice.

Steps:
- Working in batches, puree 6 cups cubed honeydew melon in a blender. Pour puree through a fine sieve into an 8-inch square nonreactive dish.
- Put 1/2 cup water and sugar into a small saucepan. Bring to a boil over medium-high heat, stirring until sugar has dissolved. Stir into puree. Add fresh lime juice; stir to combine. Freeze, covered, at least 6 hours (up to 3 days).
- Scrape granita with a fork; spoon about 1 cup granita into each of 6 glasses. Pour 1/2 cup seltzer into each glass; garnish with lime peels.
CAMERON'S SPRITZER
This light and refreshing fruity spritzer was shown to me by pals, Cameron Diaz and Katherine Power, to celebrate the release of their rosé, Avaline. I think it makes the perfect addition to a weekend brunch menu!

- Add the rosé and sparkling water to a large wine glass. Add the raspberries and lightly crush with a fork, so they release flavor whilst still holding some shape. Add some ice. Use a vegetable peeler to peel a slither of lemon rind, rub it around the rim of the glass, twist it, then drop it into the spritzer. Serve straight away.
MELON SPRITZERS
Blend honeydew, Galia or cantaloupes into a cooling wine-based cocktail with apple juice and lime

Steps:
- Put the melon chunks in a blender or food processor with the lime juice and apple juice. Whizz to the smoothest you can get, then stir in the lime zest. Cover and chill until ready to serve.
- To serve, pour the melon mixture into a big jug with the wine, then add an equal part of lemonade and give it a good stir. Thread a few melon balls onto skewers, if you like, add one to each glass with some crushed ice, and top up with the melon spritzer.

HONEY LEMON BALM SPRITZERS
What to do? What to do...with my lemon balm? Adapted from Bon Appetit August 2011. To make this alcoholic add 1 ounce light liquor such as gin, rum, etc. per serving.

Steps:
- In a large pitcher, mix honey and warm water until honey combined.
- Add lime/lemon juice and 1 cup cold water. Mix well.
- Crush lemon balm and add to mixture. Using a muddle or wooden spoon handle, smash lemon balm in bottom of pitcher. Add lime/lemon slices and refrigerate mixture until chilled (about an hour).
- Once chilled, add 2 cups of cold sparkling water. Stir.
- Pour through a strainer into individual glasses over crushed ice.
- Garnish beverages with lemon balm leaves and citrus slices
- For alcoholic version, stir in 1 oz. of light liquor to each glass.
