HONEY GRAHAM CRACKERS WITH WHOLE WHEAT
I posted this in a request of crackers with only whole wheat flour. This recipe comes from a Bosch recipe book called "The Natural Nine Cooking with Whole Grains". I have not tried this recipe, but hope to soon. Enjoy.

Steps:
- Blend tog flour, salt, soda, brown sugar and shortening in Bosch mixing bowl.
- Mix in honey and oil with the shortening mix.
- Add cold water and mix only enough to combine.
- Roll out to 1/8 inch thickness on ungreased cookie sheets.
- Cut into 2 inch squares.
- Prick crackers with fork.
- Bake on the centre rack in a 425 degF oven for 8-10 minutes.
- If the outside row of crackers browns before the center, remove outer crackers from pan and continue baking.

HONEY GRAHAM CRACKERS
Why buy when you can make your own. This recipe came out of Country Home Magazine and I want to keep it safe. My computer crashed and I didn't make a back up so I lost all my saved recipes. I know here it will be kept safe.

Steps:
- In a small bowl whisk together milk, honey and vanilla, set aside.
- In a large bowl combine all-purpose flour, brown sugar, whole wheat flour, baking soda and salt. Using a pastry blender cut in butter until mixture resembles coarse crumbs. You can you a fork to do this. Add milk mixture and stir until just combined. If necessary, knead dough gently to form a ball. Divide dough into fourths. Wrap each portion in plastic wrap and chill for about 1 hour or until easy to handle. On a lightly floured surface, working with 1 portion at a time, roll each portion to a 10-inch square. Using a fluted pastry wheel, cut each square into sixteen 2 1/2 inch squares. Place on ungreased cookie sheets. Poke tops of cutouts with a fork. Bake in a 350 degree oven for 6 to 8 minutes or until edges are firm. Remove and cool completely on wire racks. Makes 64 crackers.
- To store: Layer crackers between waxed paper in an airtight container. Cover.
- Prep time does not include chill time.

100% WHOLE WHEAT GRAHAM CRACKERS OR PIE CRUST
I couldn't find the perfect 100% whole wheat graham recipe so I made one. These are highly popular with kids and come together very quickly. You can replace a little of the flour with milled flax, wheat germ, oat bran, or whatever you like. And you can make chocolate grahams by adding 1/3 cup cocoa. Crunch them up to make graham crumbs, which are useful for a lot of things. ALSO, this recipe makes an AMAZING pie crust. Please NOTE: The instructions below are specific about rolling these out very thin, and baking until crisp. If you end up with anything but crisp crackers, they weren't rolled thin enough, and/or they weren't baked long enough.

Steps:
- Preheat oven to 350 degrees.
- Melt butter in microwave or on stovetop.
- Mix together dry ingredients (first 6 ingredients).
- Add the rest of the ingredients and mix until the dough forms a ball. Add a little water if needed.
- Line two jelly roll pans with parchment paper or Silpat.
- Put half the dough on each pan and gently flatten out with a rolling pin, covering the pan (Depending on the size of your pan, you may not completely cover it. Just roll them out to desired thickness. These don't puff up much, so what you roll out is very nearly what you end up with.).
- Gently score the crackers into rectangles with a pizza or pasta cutter.
- Bake for 15-20 minutes or until crisp and just beginning to brown.
- Let cool on a wire rack.

HONEY WHOLE WHEAT GRAHAM CRACKERS
A sweet whole wheat cracker, much better than any store bought ones! I also like that they don't use eggs, so if the kids eat a little raw dough it won't hurt them. If you wish to substitute Splenda for some of the brown sugar, hold it aside and stir it in last, right before chilling. You can use a product such as Kretchmer's Toasted Wheat Bran for the bran called for in the recipe.

- In a medium bowl, cream together butter, brown sugar, and honey. Stir in vanilla.
- Combine whole wheat flour, bran, baking powder, soda, and salt. Stir into the creamed mixture alternately with the milk. Stir in Splenda now, if using.
- Cover and chill until firm, about 1 hour.
- Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
- On a lightly floured surface, roll one fourth of the dough out to 1/8" thickness. Prick all over with a fork to prevent crackers from bubbling when baking. Cut into rectangles with a pastry wheel, or use cookie cutters. Place 1/2 inch apart onto the prepared cookie sheets. May sprinkle with cinnamon sugar if desired. Repeat with remaining dough until all crackers are baked.
- Bake for 12 to 14 minutes in the preheated oven, or until edges are golden brown and crisp. Remove from baking sheet with spatula and cool completely on wire racks.
