NO KNEAD RUSTIC THYME OLIVE BREAD

No Knead Rustic Thyme Olive Bread image

A simple homemade bread that is no-knead filled with herbs and kalamata olives.

Provided by Kim

Categories     Side Dish

Time 8h50m

Number Of Ingredients 7

3 cups all purpose flour
1/2 teaspoon instant yeast
1 1/2 cups kalamata olives (drained and dried)
2 teaspoons dried thyme ((or rosemary))
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 1/2 cups water

Steps:

  • Combine all of the ingredients in a large mixing bowl. The dough will not be overly sticky but should come together. Add just a little water at a time if needed to incorporate all the flour.
  • Cover the dough with plastic wrap or bees wax wrap (something not porous) and put a towel over the top to help it seal. Set the bowl aside for at least 8 hours to rise (I have gone as long as 24 hours).
  • When ready to bake, heat oven to 450F. Place a large cast iron pot (dutch oven) on the medium or medium low rack while preheating for it to get hot.
  • Use a spatula to scoop the dough into the hot pot. (If preferred, shape the dough on the counter during preheating but I find it is easy to drop the dough in a rough circle straight into the pot).
  • Place the lid on the pot and cook at 450F for 30 minutes.
  • Remove the lid and let cook an additional 15 minutes to further brown. If it looks or smells done sooner, remove from oven sooner.
  • Let the bread cool completely on a cooling rack.

OLIVE THYME BREAD

Olive Thyme Bread image

Irresistible bread studded with kalamata olives, fresh thyme, and garlic is guaranteed to disappear as soon as you bake it!

Provided by Mountain Cravings

Categories     Breads

Time 3h45m

Number Of Ingredients 8

1 1/4 cups warm water
2 t. active dry yeast
1 T. sugar
6 oz. kalamata olives (drained & roughly chopped)
1/4 cup fresh thyme (finely chopped)
2 cloves garlic (finely minced)
1/2 t. salt
3 1/4 cups flour (plus extra for kneading)

Steps:

  • Combine warm water, yeast, and sugar in a small bowl. Let sit for about 5 minutes, until yeast is foaming.
  • Meanwhile, toss olives, thyme, garlic, and salt with flour in the bowl of a stand mixer, making sure olives are completely coated.
  • Set mixer on low with dough hook and slowly add yeast mixture to flour. When ingredients are mostly combined, increase speed to medium.
  • Knead dough for 5-10 minutes, until dough pulls away from the sides of the bowl and forms an elastic ball. If needed, add extra flour one tablespoon at a time until dough comes together.
  • Cover mixing bowl with a damp towel and set in a warm place. Let rise for 2 hours, until roughly doubled in size.
  • Cover a baking sheet or large pan with nonstick spray. Punch dough down and place on the pan for the second rise, about 30 minutes.
  • Preheat oven to 500°.
  • When the second rise is complete, bake at 500° for 15 minutes. Reduce heat to 375° and bake for 30-40 minutes, until bottom is browned and sounds hollow when you knock on it.
  • Let cool for at least 10 minutes before cutting.

CHEDDAR OLIVE THYME BREAD

Cheddar Olive Thyme Bread image

This Cheddar Olive Thyme Bread fills your kitchen with wonderful aromas as it bakes. An easy and delicious loaf, perfect combination of ingredients.

Provided by Joanna Cismaru

Categories     Bread

Time 1h10m

Number Of Ingredients 13

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon black pepper (freshly ground )
1/4 teaspoon red pepper flakes
1/2 cup Parmesan cheese (freshly grated)
1/2 cup cheddar cheese (grated)
1/2 cup Kalamata olives (pitted and sliced)
2 teaspoon fresh thyme leaves (chopped plus extra for top)
2 eggs
3 tablespoon olive oil
1 1/4 cup buttermilk

Steps:

  • Preheat the oven to 350 F degrees. Grease and line a 12 inch loaf pan with parchment paper. If you don't have a 12 inch loaf pan, I would split the batter and bake it in 2 regular loaf pans. Set aside.
  • Combine the flour, baking powder, baking soda, salt, pepper, and red pepper flakes in a large bowl. Mix them well. Add the cheeses, olives, thyme leaves and mix.
  • In a separate bowl, whisk the eggs together. Add the olive oil and buttermilk and whisk to combine.
  • Make a well in the flour mixture and pour in the egg mixture. Stir until it becomes a thick sticky batter. I used a wooden spoon to mix everything together. If the batter is too dry add some more buttermilk, or if it's too wet add some more flour. Scrape it into the prepared tin and top with extra thyme leaves or sprigs if preferred.
  • Bake for 45 minutes to an hour, until a toothpick inserted into the centre comes out clean. Leave the loaf to cool in the pan for 5 minutes before transferring to a wire rack to cool to room temperature.

Time 20m

Yield 10 servings

Number Of Ingredients 10

2 cups large green olives with pits, such as Cerignola (11 ounces)
2 cups large black olives with pits, such as Kalamata (11 ounces)
Zest of 1 orange, peeled in large strips
4 large garlic cloves, smashed
2 teaspoons whole fennel seeds
2 teaspoons chopped fresh thyme leaves
3/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2/3 cup good olive oil
4 sprigs fresh thyme

Steps:

  • Drain the green and black olives from the brine or oil that they're packed in and place them in a medium bowl. Add the orange zest, garlic, fennel seeds, thyme leaves, red pepper flakes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Pour the olive oil over the mixture, add the thyme sprigs and toss to combine.
  • Transfer the mixture, including the olive oil, to a medium (10-inch) sauté pan. Heat over medium heat until the oil begins to sizzle. Lower the heat and sauté for 4 to 5 minutes, stirring occasionally, until the olives and garlic are heated through and fragrant. Serve warm right from the pan or transfer to a serving dish. Offer a small dish for the pits.

OVERNIGHT GREEN OLIVE, SHALLOT AND THYME FOCACCIA BREAD

Overnight Green Olive, Shallot and Thyme Focaccia Bread image

Overnight focaccia is perfect for family life, since time does most of the work for you to develop flavor and rise on this bread. Focaccia is wonderful because you can add almost anything to the top or even inside. Andras and I are olive crazy, so I load this up with meaty green olives (which the kids can pick out if they're not feeling them), shallots and thyme. This focaccia is perfect served warm at a hot meal or packed up for a picnic, split in half to turn into special sandwiches or wrapped up in parchment and gifted to a friend or neighbor. Both Andras and the kids feel extra special if they find this in their lunch, too.

Provided by Sarah Copeland

Time 8h45m

Yield 1 loaf

Number Of Ingredients 10

6 1/2 cups unbleached bread flour or all-purpose flour
1 tablespoon fine sea salt
1 teaspoon active dry yeast
3 1/2 cups warm water
1/4 cup extra-virgin olive oil, plus more for the baking sheet and for drizzling
1/2 to 2/3 cup pitted Castelvetrano olives (or another green olive, such as Picholine)
1 small shallot, thinly sliced
1/4 cup fresh thyme leaves
1/2 teaspoon flaky sea salt, such as Maldon
Honey, for drizzling

Steps:

  • In a large bowl, whisk together the flour, salt and yeast. Add in the water and stir with a sturdy wooden spoon or a Danish whisk to make a sticky, shaggy dough that comes together. Coat a large plastic or metal bowl completely with the oil. Transfer the dough to the prepared bowl and turn to coat completely in the oil.
  • Cover the bowl with a tight-fitting lid so no air can enter the bowl. Leave on the countertop overnight, or in the fridge for up to 2 days, for the flavor to develop.
  • Oil a 13-by-9-inch rimmed baking sheet generously with olive oil, making sure to get all the corners. Gently slide the dough into the prepared pan (it should be very soft) and use your fingers to spread it into the corners. (If the dough has been chilling in the fridge, remove it and let it rest in a warm place until it is puffy and soft, 30 minutes to 1 hour, before transferring.)
  • Preheat the oven to 450 degrees F. Use the pads of your fingers to dimple the entire surface of the dough. Sprinkle the olives over the top, poking some down inside the bread. Scatter the shallots and thyme over the top. Drizzle generously with oil and scatter over the flaky salt. Bake, rotating once, until the top is evenly golden brown, 20 to 25 minutes. Transfer to a rack to cool slightly, then slide out of the pan. Drizzle with honey. Slice and serve warm. Eat within 24 hours or wrap well and freeze for up to 1 month.

OLIVE AND THYME BREAD

Olive and Thyme Bread image

Adapted from a recipe by Amy Scherber. This is one of several that takes 2-3 days to complete. It's totally worth the effort.

Provided by StevenHB

Categories     Yeast Breads

Time P2DT20m

Yield 2 loaves

Number Of Ingredients 7

1 teaspoon active dry yeast
1 1/2 cups water (105-115 degrees)
3 1/4 cups all-purpose flour (unbleached)
1/3 cup all-purpose flour (for kneading)
4 teaspoons kosher salt
1/2 cup kalamata olive (pit & chop roughly)
4 teaspoons fresh thyme (coarsely chopped)

Steps:

  • ADDITIONAL INGREDIENT: 1 1/4 cups basic bread sponge (from my basic bread sponge recipe).
  • Can use any fleshy black olive in place of Kalamatas.
  • In a bowl, dissolve the yeast in the water. Allow to proof for three minutes.
  • Stir the sponge into the water, breaking the sponge up using your hands or a spoon.
  • Add 3 1/4 cups of the flour and salt and mix, scraping and folding until the dough gathers into a single mass. Mix in the olives and thyme until distributed. This dough will be wet and sticky.
  • Turn the dough out onto a lightly floured surface, and knead as much of the 1/3 cup of flour as is required to make a smooth and elastic dough.
  • Place the dough in a lightly oiled bowl, cover with plastic wrap and refrigerate overnight.
  • Halve the dough and shape each piece into a ball and place in an oiled bowl and cover with plastic. Allow to rise in a draft-free location for two hours.
  • Turn out each piece of the dough onto a lightly floured work surface and press out any large bubbles. Shape each half into a loose oval. Transfer each of the ovals into a 9x5 loaf pan, with the seam on the bottom. Cover again with plastic and allow to double in bulk, which should take 2 to 2 1/2 hours.
  • Preheat the oven for at least thirty minutes along with a baking stone or tiles on the middle rack to 425. Place a baking pan with decent sides on the bottom shelf. Boil two cups of water. Place the loaf pans on the stones and then immediately pour the boiling water into the baking pan.
  • Bake for 35-40 minutes until the loaves are hollow sounding when removed from the pans and tapped on the bottom. Take the loaves out of the pans and cool on a rack.

ALMOST-FAMOUS ROSEMARY BREAD

Almost-Famous Rosemary Bread image

Provided by Food Network Kitchen

Time 4h

Yield 4 small loaves

Number Of Ingredients 7

1 1/4-ounce packet active dry yeast
2 teaspoons sugar
2 tablespoons extra-virgin olive oil, plus more for brushing and serving
2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons dried rosemary
1 teaspoon fine salt
1/2 teaspoon kosher salt Freshly ground pepper

Steps:

  • Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
  • Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
  • Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
  • Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
  • Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.

GARLIC-THYME BREAD

Garlic-Thyme Bread image

Time P3DT35m

Yield 1 loaf

Number Of Ingredients 9

1 package dry active yeast
1 1/2 cups water
2 teaspoons olive oil
2 teaspoons salt
5 cloves garlic, minced
1 tablespoon minced fresh thyme
2 cups whole wheat flour
1 -1 1/2 cup white flour

  • Place in a lightly oiled bowl, cover, and set aside in a warm place for 1 hour, or until doubled.

  • If desired, work a bit of parmesan-reggiano into the dough at this point with some olive oil for extra flavour.
  • Form the dough into a round, place on prepared cooking sheet, cover with plastic, and let rise for 30 minutes.
  • Brush lightly with cold water, bake for 5 minutes, then reduce oven temperature to 400° and continue baking for 20-30 minutes, or until loaf is golden brown and sounds hollow when tapped.
