Yogurt Drizzled with Honey and Walnuts image

Light and sweet, creamy and crunchy, this dish is a Mediterranean-influenced snack is just the thing to satisfy at any time of day.

Number Of Ingredients 3

3 ounces walnut halves (about 3/4 cup)
1 cup good-quality honey, such as clover or wildflower
24 ounces plain low-fat yogurt

Steps:

  • Preheat oven to 350 degrees. Spread walnuts in a single layer on a rimmed baking sheet, and toast until fragrant and golden brown, 7 to 8 minutes. Transfer to a plate. Rub with a damp kitchen towel to remove as much loose skin as possible.
  • While still warm, place walnuts in a small bowl; pour honey on top, and stir to coat evenly. Let cool, about 2 minutes.
  • Divide yogurt among six dessert bowls, and spoon honey mixture over each. Serve immediately.

2 -3 cups greek style plain yogurt
3/4 teaspoon vanilla
1 1/2 cups toasted walnuts
1/2 cup honey

Steps:

  • Mix yogurt and vanilla. In 4 glasses, alternate layers of yogurt, then walnuts, then honey. Start with yogurt, end with honey.

6 fresh ripe nectarines, peaches, apricots or 6 pineapple slices
3 tablespoons canola oil or 3 tablespoons vegetable oil
1/2 cup honey
1/4 cup chopped walnuts, toasted
3/4 cup plain Greek yogurt
fresh mint sprig, optional garnish

Steps:

  • Heat grill to high.
  • Toast the walnuts in a small nonstick skillet, stirring frequently. As soon as they become fragrant and begin to brown, add honey; cook over medium heat until honey is hot. Remove from heat; keep warm.
  • Cut the fruit in half and remove pit. Brush the fruit with the oil, place on the grill cut side down and cook until golden brown and caramelized, about 2 minutes. (Note: the fruit may be threaded on greased metal skewers.).
  • Turn the fruit over and continue cooking until just warmed through, about 2 minutes longer.
  • Remove the fruit from the grill and place 3 halves on each plate. Top each half with some yogurt and drizzle the honey-walnut mixture over the top. Garnish wish a mint sprig, if desired.

A yummy versatile breakfast, snack, or dessert dish that's healthy too! The plain non-fat yogurt makes it a little tangy, which I love, but you could always use vanilla yogurt.It's very quick, easy, and kid friendly. My three year old loves it.

1/2 cup plain nonfat yogurt (I like Nancy's, it's less sour)
1 -2 tablespoon Splenda sugar substitute (or sugar)
1/4 cup banana, chopped
2 -3 tablespoons nuts, coarsely chopped (walnuts, pecans,almonds,cashews)
1 tablespoon honey

Steps:

  • Mix together in the serving bowl yogurt and splenda or sugar. Unless you like it really tangy, then don't add any sweetner.
  • Sprinkle yogurt with banana, then nuts.
  • Drizzle honey over top of the nuts.
  • Enjoy!
