ROASTED SPARERIBS WITH HONEY AND SOY
These are a real crowd pleaser. You may need to double this recipe. Ideally, ask your butcher to chop the spare ribs into short lengths, about 2 1/2 inches long, so they're easy to eat with your fingers.

- Place the ribs in a wide baking pan, cover loosely with foil and cook in a preheated 350 degree F for 30 minutes.
- Meanwhile, remove any seeds from lemon and orange and place in a food processor with the ginger, garlic, onion, soy sauce, rice wine, seven-spice powder, honey and sesame oil. Process until smooth.
- Pour off any fat from the spare ribs, then spoon the pureed mixture over the spare ribs. Toss the ribs to coat evenly.
- Return the ribs to the oven at 400 degrees F and roast for about 40 minutes, turning and basting them occasionally, or golden brown. Serve hot.
HONEY SOY SHORT RIBS WITH SPICY PEANUT GLAZE
Tender beef short ribs, braised in a honey soy sauce topped with a spicy peanut glaze and served over warm jasmine rice.

- Preheat the oven to 350 degrees F.
- In a Dutch oven on high heat sear the short ribs until browned then add soy sauce, hoisin, vinegar, garlic, ginger, 1/2 cup honey, water, green onion, crushed red pepper, and 2 tablespoons of the coconut or orange juice.
- Braise the ribs covered, for about 3 hours, or until the meat is tender and falling off the bones. Remove the short ribs from the braising liquid and cover to keep warm. Increase the oven temperature to 425 degrees.
- Drain the fat off of the cooking liquid and discard. In a bowl add the peanut butter and place into the microwave for 30 seconds to soften, add the hot sauce, honey and stir.
- Spread a thin layer of the peanut butter and honey mixture over the top of the rib and then coat with the crushed peanuts.
- Bake the peanut crusted ribs for another 10 minutes, until the short ribs are heated through and glazed. Serve over rice and pour a small ladle of the braising liquid on top of the ribs. Garnish with scallions.

- Preheat oven to 180°C.
- Mix the soy sauce, sesame oil, honey and oil.
- Brush both sides of the ribs well with the marinade, then place in the baking dish.
- Bake in the oven for 60 minutes.

- Serve with fresh lettuce, tomato and avocado salad.

- Pound the coriander seeds in a mortar and pestle just until they are broken up into small pieces, they don't need to be super fine. Combine all marinade ingredients together, including the coriander seeds, and pour over ribs. Coat the ribs thoroughly in the marinade and let them sit while you prepare other ingredients.
- In a mortar and pestle, pound together garlic, cilantro stems or roots, and white peppercorns into a fine paste. In a wok, add a little vegetable oil and saute the garlic paste until it starts to turn golden. Add the ribs all at once, making sure you get ALL the marinade in there, and add just enough water to almost cover the ribs. Tip: Rinse the ribs bowl with the water so you get all of the marinade into the wok. Bring to a low simmer and cover the pot; simmer for 35-45 minutes or until ribs are fork tender, but not falling-off-the-bone tender, exact timing will depend on the size of your ribs—if they are meaty, they will take longer. After you cover the wok, you will need probably need to turn the heat down a bit to maintain the simmer. Make sure it does not boil vigorously, or the ribs will become dry.
- Once the ribs are tender, remove them from the cooking liquid and keep covered in foil to keep warm while you reduce the sauce. Boil the sauce on high heat and reduce it until it thickens into a luscious glaze (this will take a while, so it's a good time to prep your side dishes). Once reduced, add the ribs back in and toss to thoroughly coat the ribs in the sauce. Enjoy on their own as an appetizer or with rice as a meal!
