1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
1/3 cup extra-virgin olive oil
Salt and freshly cracked black pepper
10 cups mixed salad greens

Steps:

  • Whisk together the maple syrup, mustard and cider vinegar in a large bowl. Whisk in the olive oil in a slow, steady stream until the vinaigrette emulsifies and thickens.
  • Toss the mixed greens with the vinaigrette and serve.

This is my go-to unexpected side for Thanksgiving and other pot-lucks. Aside from being gorgeous, it holds up well when made ahead, tastes great at room temp, and appeals to lots of eaters because it's vegan, paleo, gluten-free, and low-carb friendly. The only thing that takes time is deconstructing the Brussels sprouts. The salad keeps in the refrigerator for up to 3 days.

2 pounds Brussels sprouts, trimmed
¼ cup maple syrup
2 tablespoons extra-virgin olive oil
4 teaspoons Dijon mustard
4 teaspoons apple cider vinegar
1 cup sweetened dried cranberries
1 cup cinnamon-roasted almonds

Steps:

  • Cut cores out of Brussels sprouts using a paring knife. Peel layers apart to separate individual leaves; place leaves in a large bowl.
  • Whisk maple syrup, olive oil, Dijon mustard, and apple cider vinegar together in a small bowl. Drizzle over Brussels sprout leaves; add cranberries and toss to coat. Add almonds and toss again before serving.

1/2 cup maple syrup
1/2 cup Dijon mustard
1/4 cup brown sugar
1/2 cup balsamic vinegar
1 1/4 cups iceberg lettuce, torn
1 1/4 cups romaine lettuce, torn
1 1/4 cups Baby Spinach, torn
1/2 cup carrot, matchstick cut
1/2 small red onion, cut into rings
1/2 cup sweet red pepper, chopped
1/3 cup apple, chopped
1/3 cup mandarin orange pieces
1/3 cup pecans (whole or chopped)
1 tablespoon sesame seeds, toasted
cooked chicken (optional)

Steps:

  • Be sure to wash the fruits and vegetables and dry on paper towels before cutting.
  • In a large bowl, mix your salad greens.
  • Sprinkle the carrot, red onion, apple and mandarin orange pieces over the top (they can be mixed in if desired).
  • Sprinkle your salad with the pecans and sesame seeds.
  • For the dressing, in a shaker bottle, add the maple syrup, Dijon mustard, brown sugar and Balsamic Vinegar.
  • Shake well.
  • Pour desired amount over your salad.
  • * Top with chicken pieces if desired.

1/2 cup salad oil
2 1/2 tablespoons dijon-style mustard
3 tablespoons maple syrup

1 garlic clove

Steps:

  • Blend together all ingredients. Add a teaspoon more of vinegar or mustard if you like a sharper taste. The dressing gets better overnight and keeps for 4 to 5 days.

6 cups mixed salad greens (including baby spinach)
1/2 medium red onion, thinly sliced
2 small pears, cored and thinly sliced
1 cup aged white cheddar cheese, crumbled
2 tablespoons butter
1/8 teaspoon black pepper
1 tablespoon maple sugar
1 cup pecan halves
3/4 cup olive oil
1/4 cup cider vinegar
1/4 cup maple syrup
1/4 cup Dijon mustard
2 garlic cloves, minced
1/4 teaspoon pepper

Steps:

  • Arrange washed salad greens on serving platter . Top with onion and pear slices. Crumble cheddar cheese over salad and sprinkle with nuts over top. Drizzle with salad dressing.
  • To make Pecans: Melt butter in frying pan and add pepper and maple sugar. Toss pecans in butter mixture until coated well. Spread nuts out evenly on flat baking sheet and roast at 350F for 15 minutes, or until lightly toasted, stirring every 5 minutes. Remove from oven and cool on wire rack.
  • To make Maple Dijon Dressing: Combine all ingredients. SHAKE WELL. Store in refrigerator , shake before serving.
