Honey-Roasted Pork with Greens image

Yield Makes 6 servings

Number Of Ingredients 10

1 4-pound boneless pork rib roast
1 tablespoon coarse salt
1 teaspoon coarsely ground black pepper
1/2 cup honey
5 tablespoons fresh lemon juice
7 tablespoons extra-virgin olive oil
1 1/2 teaspoons ground coriander
1 1/2 teaspoons dried thyme
1 cup (about) canned low-salt chicken broth or water
2 large bunches Swiss chard, thick stems removed, leaves coarsely chopped (about 10 cups)

Steps:

  • Place pork, fat side up, in large glass baking dish. Rub pork with salt and pepper. Whisk honey, 4 tablespoons lemon juice, 4 tablespoons olive oil, coriander, and thyme in small bowl. Pour over pork; cover pork loosely with foil. Let stand at room temperature 1 hour, basting occasionally.
  • Preheat oven to 375°F. Transfer pork to roasting pan; reserve marinade. Roast pork 15 minutes. Spoon 1/4 of reserved marinade over pork. Add 1/4 cup broth to roasting pan. Roast pork 15 minutes; spoon remaining marinade over. Add 1/4 cup broth to pan. Roast until instant-read thermometer inserted into center of pork registers 150°F, about 40 minutes longer. Add 1/4 cup broth to pan, stirring browned bits from bottom.
  • Transfer pork to platter; tent with foil. Strain pan juices into 1-cup measuring cup; add enough broth to measure 1 cup liquid. Pour into small saucepan; keep warm over low heat. Heat remaining 3 tablespoons oil in large skillet over medium-high heat. Add chard and toss to coat. Cover and cook until chard is tender, stirring occasionally, about 5 minutes. Mix in remaining lemon juice. Season with salt and pepper. Spread greens on platter. Slice pork and arrange atop greens. Pour pan juices over.

When you take something classic like skillet corn bread, and mix it with the true American Hatch green chile, you get something special. The crisped slow-cooked pork and spicy sweet melted butter don't hurt, either.

Neutral oil, to coat pan and for frying
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 cup buttermilk
1 cup Greek yogurt
1/2 cup honey
2 tablespoons unsalted butter, melted
1 large egg
1/2 cup roasted and chopped Hatch green chile, homemade from fresh or store-bought, such as 505 Southwestern Green Chile, plus more for garnish
1 1/4 cups grated Cheddar
2 pounds pork butt, cut into fist-size chunks
Kosher salt
1/2 cup garlic cloves
2 cups fresh orange juice
Peels from 1/2 orange
1/4 pound (1 stick) unsalted butter, at room temperature
1/2 cup honey
1/2 teaspoon cayenne pepper
1/2 teaspoon dark chili powder
1/4 teaspoon kosher salt

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F. Preheat a deep-fryer to 350 degrees F.
  • Coat a 9-inch cast-iron skillet with oil.
  • Whisk together the cornmeal, flour, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, Greek yogurt, honey, butter and egg in a medium bowl. Add the wet ingredients to the dry ingredients and whisk to combine. Fold in the green chiles and 3/4 cup Cheddar.
  • Pour the batter into the prepared skillet and bake for 25 minutes. Use a toothpick to test if the inside is wet. If so, return to the oven and bake until just dry, another 5 minutes. Top with the remaining 1/2 cup Cheddar and let cool for 10 minutes.
  • For the pork: Sprinkle the pork pieces with salt and place in a stovetop pressure cooker. Add the garlic, orange juice and orange peels. Close the lid and bring to pressure over high heat. Cook on high for 45 minutes.
  • Cool and release the pressure according to the manufacturer's directions. Very carefully open the lid and transfer the pork to a plate using a slotted spoon. Let cool until cool enough to handle. Cut the pork into large chunks, then deep-fry, in batches, until crispy, about 5 minutes. Reserve in a bowl or baking dish until all are fried.
  • For the spicy butter: Whisk the butter, honey, cayenne, chili powder and salt in a medium bowl until fully incorporated.
  • Top the cornbread skillet with more roasted Hatch green chile. Break up the fried pork pieces with forks or a knife. Top the cornbread with the pork and large dollops of the spicy honey butter. Cut into large wedges and serve.

2 lbs pork loin (boneless)
to taste salt and pepper
1/4 cup honey
2 tablespoons orange juice
2 tablespoons olive oil
1/2 teaspoon thyme
1/2 cup chicken broth

Steps:

  • Preheat the oven to 375.
  • Season the pork and place in a roasting pan.( consider browning on all sides).
  • In a separate bowl, mix together the honey, juice, oil and thyme.
  • Pour over the pork.
  • Add the broth to the pan.
  • Bake until internal temperature reaches 150 (45-60 minutes).
  • Baste frequently.
  • Strain the pan juices into a saucepan small amount gravy flour .
  • Reduce until slightly thickened.
  • Serve over the sliced pork.

2 nests medium egg noodles
2 tsp cornflour
2 tbsp soy sauce
1 tbsp honey
1 tbsp sunflower oil
250g/9oz pork tenderloin, cut into bite-sized pieces
thumb-sized piece ginger, finely chopped
2 garlic cloves, finely chopped
1 green pepper, deseeded and sliced
100g mange tout
1 tsp sesame seed

Steps:

  • Bring a pan of salted water to the boil and cook the noodles following pack instructions. Meanwhile, mix the cornflour with 1 tbsp water, then stir in the soy sauce and honey, and set aside.
  • Heat the oil in a wok over a high heat. Add the pork and cook for 2 mins until browned all over. Add the ginger, garlic, pepper and mangetout, and cook for a further 2 mins. Reduce the heat, then add the soy and honey mixture, stirring and cooking until the sauce bubbles and thickens. Divide the drained noodles between 2 bowls. Top with the pork and vegetables, and finish with a sprinkling of sesame seeds.

four bone-in pork blade steak, 3/4-inch thick
kosher salt & freshly ground black pepper
1 tablespoon grapeseed oil, plus additional as necessary
3 sprigs thyme, plus additional thyme leaves for serving
2 tablespoons honey mustard (or 2 tablespoons dijon mustard plus 2 teaspoons honey)
1 cup low sodium chicken broth
1 tablespoon unsalted butter
2 tablespoons capers
1 -3 tablespoon fresh lemon juice
2 tablespoons olive oil
3 garlic cloves, smashed
8 ounces destemmed mustard greens, coarsely chopped
red pepper flakes, for serving (optional)

Steps:

  • Cut a round of parchment paper that fits inside of a large cast iron skillet.
  • Pat dry pork chops and generously season with salt and pepper. Preheat cast iron skillet over high heat. When smoking, add oil and swirl to coat. Add pork chops in an even layer. If necessary, cook in batches so as not to overcrowd pan. Place prepared parchment round on top of chops and top with additional skillet or two to encourage searing. Cook, flipping once, until golden on the edges, about 2-2 1/2 minutes per side. Replenish oil if necessary between batches.
  • Remove pork chops to a plate. Add thyme sprigs, honey mustard, and chicken broth. Cook until reduced by half. Add butter and capers and swirl to emulsify. Season with lemon juice, salt, and pepper and pour sauce over pork chops.
  • Add 2 tablespoons olive oil and garlic to skillet. Cook, stirring, until garlic is sizzling and begins to turn golden, about 1-2 minutes. Add mustard greens, toss to coat, and season with salt and pepper. Cook just until wilted, about 30 seconds. Remove from heat.
  • Serve pork chops with mustard greens, additional fresh thyme, and red pepper flakes, if desired.
