1/4 cup sugar
2 tablespoons canola oil
1 large egg, room temperature
3 tablespoons honey
3/4 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • In a small bowl, beat sugar and oil until blended. Beat in egg; beat in honey and vanilla. Combine flour, baking powder, cinnamon and salt; gradually add to sugar mixture and mix well (dough will be stiff). Cover and refrigerate for at least 2 hours., Preheat oven to 350°. Drop dough by tablespoonfuls 2 in. apart onto a greased baking sheet. Bake until bottoms are lightly browned, 8-10 minutes. Cool for 1 minute before removing from pan to a wire rack. Store in an airtight container.

1/2 cup honey

1 cup white sugar
1 cup packed brown sugar
2 eggs
1 ½ teaspoons vanilla extract
3 cups all-purpose flour

½ cup chopped walnuts

Steps:

  • In a medium bowl, cream the butter with the white sugar and brown sugar. Stir in the eggs and vanilla. Sift together the flour, baking soda, cream of tartar, cinnamon and salt; stir into the creamed mixture. Finally, mix in the nuts. Divide dough into 3 equal parts, shape each piece into a log about 1 1/2 inches in diameter. Wrap logs in wax paper and chill for 3 hours or overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Cut dough logs into 1/4 inch slices and place them on an unprepared cookie sheet. Bake for 8 to 10 minutes, until light brown.

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon

1/2 cup unrefined coconut oil
6 tablespoons molasses (not blackstrap molasses)
2 large eggs
1/2 to 3/4 cup golden raisins
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon and salt.
  • In a stand mixer, mix the sugar and coconut oil until combined. Add the molasses and eggs and mix until combined. Add the dry ingredients and mix until just combined. Fold in the raisins and walnuts.
  • Using a 2-tablespoon or 1-ounce scoop, portion the dough onto the baking sheets, 1/2 to 1 inch apart. If you like chewier cookies, leave the dough as is. If you like crispier cookies, press down with a spoon to flatten. Bake until the edges are brown, about 15 minutes. Cool before serving.

Steps:

  • In a food processor, pulse flour, confectioners' sugar, salt, and lemon zest until combined. Add butter and process until sandy. Add egg yolks and lemon juice; pulse until dough comes together. Divide dough in half and form each into a 1 1/2-inch-wide log. Wrap in plastic and freeze until firm, about 2 hours (or up to 1 month).
  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Spread granulated sugar on a piece of parchment; roll logs over sugar to coat. A good friend, who shares my love of cooking, gave me this recipe about 5 years ago. I don't know where she got it. Everyone who tastes the cookies, loves them. The recipe has no eggs and for those with gluten allergies, they work fine with rice flour. Do let people know they are made with honey; some people are deathly allergic to it.

1 1/4 cups flour
1/2 cup butter
1 teaspoon baking soda
1 pinch salt
1/2 cup honey
1/4 cup sugar
1 teaspoon vanilla
1 cup chocolate chips

Steps:

  • Preheat the oven to 300°F.
  • Mix flour, baking soda and salt in a separate bowl.
  • Cream honey, sugar and butter together until smooth, add vanilla just before you finish with the sugar and butter.
  • Add flour mixture and beat until just smooth. Do NOT overbeat or the cookies will be too soft. (Trust me.)
  • Add chocolate chips.
  • Drop on cookie sheets about 2 inches apart.
  • Bake for 20 minutes (If you have a convection oven, they will be done in about 12 minutes.).
  • Let them cool on the pans unti you can lift them off with a spatula to cooling racks.

For the Cookie Dough:
3 cups flour
1/4 cup sesame oil
1/4 cup honey
1/4 cup sake
1/4 cup water
For the Syrup:
1/2 cup rice malt syrup
1 cup honey
1 small piece of ginger, thinly sliced
For Frying:
3 cups vegetable oil, or as needed for frying
For Serving:
1/4 cup pine nuts , chopped
1 tablespoon sesame seeds, toasted

Steps:

  • Gather the ingredients.
  • Place the flour in a large bowl.
  • Add sesame oil and mix by hand, rubbing the flour between your hands and fingers to combine.
  • In a separate bowl, whisk the honey, sake, and water together.
  • Add the liquid ingredients to the flour mixture and knead gently with your hands to form a dough.
  • Wrap the dough in plastic wrap and set aside for 30 minutes.
  • On a floured surface, roll out the dough to 1/2-inch thick.
  • Cut the dough into 1-inch strips to make diamond or rectangle shapes. Or cut into a flower shape if you have at hand a yakgwa-pan exclusively made to shape these cookies.
  • With the help of a fork or toothpick, pierce a small hole in the center of each cookie. Set aside.
  • Gather the ingredients.
  • Place the rice malt syrup, honey, and ginger in a saucepan over medium heat.
  • Bring to a simmer and then remove immediately from heat.
  • Carefully pour into a rectangular dish or glass baking pan large enough to hold the cookies in a single layer.
  • Place a sturdy, flat-bottomed fryer or saucepan onto the stove. Add enough oil for frying, at least 2 to 3 inches.
  • Heat over medium heat until the oil temperature is 212 F.
  • In small batches, drop pastries in oil and fry, gently turning them until they puff and float, about 4 to 5 minutes.
  • Raise the heat of the oil to about 300 F and continue frying until the yakgwa turns golden brown.
  • With the help of a slotted spoon, remove the yakgwa from the oil and place them into the ginger syrup. Repeat the frying process with the remaining cookies, being careful to allow all cookies to go through the 2 oil temperature stages. When you're done frying one batch, you need to allow the oil to come back down to 212 F.
  • When all of the yakgwa have been placed in the syrup, turn each one over once so they are coated.
  • Soak in the syrup for 2 to 3 hours. Remove with a slotted spoon onto another dish lined with parchment paper.
  • Sprinkle with pine nuts and sesame seeds. Enjoy!

The author of the article considered the shortage of sugar a good thing, harrumphing that until the discovery of sugar refining in the middle of the eighteenth century, cooks were very happy to rely on honey. He expressed the hope that "with the present curtailment in our sugar supply, honey will regain much of its former glory." That desire is probably why these cookies are so good; delicate and barely sweet, they are almost biscuit-like and go well with cheese. They also improve immeasurably with age. In a sign of the times, the recipe ran next to a cartoon of a woman emerging from a car in front of a fancy restaurant, peering at the 30-minute parking sign and saying to her husband, "Sometimes I think you park in these restricted areas so we won't have time to order the deluxe dinner."
