Oatmeal Honey Cinnamon Quick Bread is an easy, moist and delicious recipe! Simple with no kneading and no rise time! Slightly sweet with a faint cinnamon taste, you will enjoy hot home baked bread in less than an hour!

3/4 c honey
1/2 c water
1/2 c butter
2 large eggs
2 1/2 c flour
1 c oats, quick cooking
1 tsp baking soda
1 1/2 tsp baking powder
2 tsp cinnamon

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Grease and flour a 9″ x 5″ loaf pan.
  • 3. Place butter, water and honey in a large bowl. Beat well. Beat in eggs.
  • 4. In a medium bowl, combine the flour, one cup of oats (reserving the 2 Tbsp. for the top), baking soda, baking powder and cinnamon. Mix well and add to the butter, honey, egg mixture. Beat at high speed for 3 to 4 minutes.
  • 5. Spread evenly in prepared loaf pan. Sprinkle top with the 2 tablespoons of oats.
  • 6. Bake at 350 degrees for 45 to 50 minutes or until toothpick inserted in center of bread comes out clean.
  • 7. Remove from oven and loosen sides of bread with a sharp knife. Let cool in pan on rack for 10 minutes. Remove from pan and let cool completely. Enjoy! One 9″ x 5″ loaf.

1 cup milk
1 cup yellow cornmeal
1 cup all-purpose flour
⅓ cup vegetable oil
¼ cup white sugar
¼ cup brown sugar
3 tablespoons honey
1 large egg
3 ½ teaspoons baking powder
1 teaspoon salt
½ cup unsalted butter, softened
3 tablespoons ground cinnamon
2 tablespoons honey

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray or lightly grease a 12-cup muffin pan.
  • Mix milk and cornmeal in a bowl and let sit for 10 minutes, stirring halfway through. Mix in flour, oil, white sugar, brown sugar, honey, egg, baking powder, and salt until well combined. Pour batter into the prepared muffin cups, filling each cup 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 20 to 25 minutes.
  • Mix butter, cinnamon, and honey together in a bowl. Serve honey butter with muffins.

Steps:

  • Preheat oven to 350 degrees.
  • Butter loaf pan.
  • In medium saucepan, combine 1/2 cup honey and milk; Stir over medium heat until honey dissolves.
  • Stir in melted butter.
  • Set aside to cool.
  • Sift flour, sugar, baking powder and salt into large mixer bowl.
  • Add pecans and toss to coat.
  • Set aside.
  • Whisk egg into cooled milk mixture.
  • Add to flour mixture.
  • Beat at medium speed just until blended.
  • Pour into pan and smooth top.
  • Bake for 65-75 minutes until toothpick comes clean from center.

1-1/4 cups water (70° to 80°)
1/2 cup honey
2 tablespoons canola oil
1 cup quick-cooking oats
1-1/2 teaspoons salt
3 cups plus 2 tablespoons bread flour
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes; add 1 to 2 tablespoons of water or flour if needed).

Love this bread!!! I have been trying to eat 5 times a day (healthy food) and this bread fits perfectly into my plan. It is easy, quick to make, very moist and really tastes good! It is great on its own but would also be a wonderful accompaniment to soup. The recipe calls for mild or clover honey, but I used a stronger flavored honey with great results. 1 cup old fashioned oats, NOT instant
2 tablespoons old fashioned oats (1 T for bottom of loaf pan, and 1 T for top of bread)
1 1/3 cups whole wheat flour
1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons salt
1 (8 ounce) container nonfat plain yogurt (scant 1 cup, low fat may be substituted)
1 large egg
1/4 cup canola oil
1/4 cup honey
3/4 cup nonfat milk (low fat may be substituted)

Steps:

  • Position rack in middle of over and preheat to 375 degrees.
  • Generously coat a 9 x 5 inch loaf pan with cooking spray.
  • Sprinkle 1 Tablespoon oats in the pan, coating the sides and bottom with the oats.
  • Thouroughly stir together whole-wheat flour, all-purpose flour, baking powder, baking soda and salt in a large bowl.
  • Using a fork, beat together 1 cup of oats, yogurt, egg, oil and honey in a medium bowl until well blended.
  • Stir in milk.
  • Gently stir the yogurt mixture into the flour mixture just until thoroughly incoporated but not overmixed (excess mixing can cause toughening).
  • Immedieatley scrape the batter into the pan, spreading evenly to the edges.
  • Sprinkle the reserved 1 Tablespoon oats over the top of loaf.
  • Bake the loaf until well browned on top and a toothpick inserted in the center comes out clean, 40 - 50 minutes. (It's normal for the top to crack).
  • Let stand in the pan on a wire rack for 15 minutes. Run a table knife around and under the loaf to loosen it and turn it outo the rack.
  • Let cool until barely warm, about 45 minutes.
