Honey, Peanut Butter & Oatmeal Balls image

A fast and easy energy snack to keep on hand. You will love the simplicity of the ingredients. Peanut Butter, Honey and Oatmeal come together in a powerful bite. Easy to make and freeze for later use.

Number Of Ingredients 6

2 cups of old Fashion oatmeal - oats uncooked
1 1/2 cups of Natural Peanut Butter
3/4 cup of honey
1 teaspoon of vanilla extract
1/4 cup of ground flaxseed
1/2 cup of mini semi-sweet chocolate morsels

Steps:

  • Add all ingredients to a large bowl. ( If desired: use food processor to grind up oatmeal first - do it before adding in other ingredients)
  • Use a large spoon to stir the mixture. You want to mix everything together with no dry spots. If the mixture is too sticky - add a little more oatmeal. If too crumbly, add a little more peanut butter.
  • Use your hands to roll the mixture into small balls and place in a flat pan. Chill in the refrigerator for at least 10 minutes.
  • When firm, store the bites in a sealed container in the refrigerator for 7 - 10 days. For longer storage - freeze.

Number Of Ingredients 4

1/2 cup peanut butter (or almond, cashew or sunflower butter)
1/2 cup honey
1 1/2 cups old-fashioned oats
1/2 cup unsweetened coconut flakes

Steps:

  • Stir together the nut butter and honey in a medium bowl. Set aside.
  • Place the oats in a food processor or blender and pulse until finely ground. Transfer to the nut butter mixture and stir until thoroughly combined.
  • Scoop 1 tablespoon of the mixture at a time with a small portion scoop or a spoon and roll into a ball or log. Transfer to a rimmed baking sheet.
  • Place the coconut in a separate bowl or plate and roll each ball in the coconut to completely cover.

I am a vegetarian and love to eat these before I go to the gym. I like to add extra whole peanuts sometimes. Substitute 1/4 cup dark chocolate chips for the raisins if desired. If you want to eat them on the go, wrap them in wax paper and tie with a bread tie. Enjoy!

Steps:

  • Mix oats, peanut butter, raisins, and honey together with a fork in a bowl. Knead mixture by hand until fully incorporated; roll into 1-inch balls. Refrigerate for at least 1 hour.

  • Beat 1 cup each rolled oats and crunchy peanut butter with 1/2 cup sweetened shredded coconut and 1/3 cup each ground flaxseed, chopped dried cranberries and honey. Roll into 1-inch balls, then roll in ground flaxseed. Freeze until firm. Drizzle with more honey to serve.

3 cups roasted unsalted peanut
2 tablespoons honey
salt, to taste
2 tablespoons canola oil
food processor

Steps:

  • NOTE: If you have unroasted nuts, preheat oven to 350°F (180°C). Spread peanuts onto a baking tray and bake for 10-12 minutes or until you can smell them.
  • In a food processor, blend peanuts. Scrape down the sides when necessary.
  • When the peanuts have broken down and become crumbly, add in honey and salt while still blending.
  • The mixture will turn into a ball and eventually even out.
  • Slowly add canola oil while still blending. Add more canola oil if you want a creamier texture.
  • Pour into a jar, store in a refrigerator and use within one month.
  • Enjoy!
