20 MINUTE HONEY GRANOLA - EASY
This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

Steps:
- Heat oven to 300 degrees.
- Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.
- Combine oil, honey and vanilla in another, smaller bowl.
- Mix wet ingredients into dry - you may need to use your hands.
- Then spread the mixture onto two cookie sheets lined with foil or parchment.
- Bake 10 minutes. Then remove from oven and stir.
- Bake an additional 10 minutes or until slightly golden.
- Remove from oven and allow to cool completely.
- When cooled, transfer into an airtight container for storage.

- Preheat oven to 300 degrees F (150 degrees C).
- In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
- Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

HONEY GRANOLA
This recipe came about from tinkering with a few granola recipes. I wanted something that tasted really good, using ingredients that I usually have in the house, that was fast to make and on the whole, somewhat healthy.

Steps:
- Combine oats, raisins and coconut in a large bowl; mix well and set aside.
- Combine honey, butter, cinnamon, vanilla and salt in a microwave proof bowl and cook in microwave until butter and honey are melted.
- Stir together then pour over oat mixture and toss until well blended.
- Spread on a lightly greased cookie sheet.
- Bake at 350 degrees for 20 minutes or until lightly golden.
- It will darken a little when it cools.
- Stir half way through.
- Remove and let cool.

HONEY NUT GRANOLA
This granola is a great way to add healthy rolled oats and nuts to your diet. It is a great alternative to prepared cereals packed with sugar, hydrogenated oils and mystery ingredients. It can easily be adapted to include your preferred ingredients. My husband and I eat this often as a before-bed snack. I like it best served with bananas or strawberries and drenched with milk. I also like it over plain yogurt and fresh fruit. It is much easier to make using a large stainless steel bowl instead of the pan or cookie sheet that some recipes suggest. Please note that if you are looking for a very rich, sweet granola with clusters of oats, this recipe is not for you. PLEASE NOTE THAT THE DRIED FRUIT MUST BE ADDED AFTER COOKING. - Preheat oven to 350 degrees.
- In a large oven-proof bowl or pan, melt butter in oven.
- After butter is melted, add honey and cinnamon and mix well until cinnamon is dissolved into the honey and oil.
- Add the oats, nuts, and coconut if desired.
- Mix until the oats and nuts are well coated with honey and butter/oil.
- Place in the oven for 30 minutes or until oats and nuts are well toasted, stirring frequently.
- Allow to cool and add dried fruit and store in an airtight container. This stores for at least a month in the pantry and much longer in the refrigerator.
- I generally triple or quadruple this recipe. Cooking time is considerably longer. Just make sure you stir at least every fifteen minutes.
- Oil may be substituted for butter. Wheat germ can also be added but tends to make the texture grainy.

- Heat oven to 180C/160C fan/gas 4. In a large pan, heat the honey and oil together until bubbling, then tip in the oats, almonds and cinnamon. Stir well until the oats are well coated, then tip onto 1-2 large baking sheets, spreading the mixture out. Bake for 20-25 mins, stirring halfway, until golden.
- Remove from the oven and, while still hot, stir in the apricots. Spread out again and press down with a spatula to cool - this will help it to clump together. Once cool, serve with yogurt or milk, and fruit, if you like. Will keep in an airtight container for 3 weeks. See 'Goes well with' for recipes using your granola.

- On a low heat slowly melt together the raw local honey, coconut oil and nut butter then add the cinnamon and salt.
- Take it off the heat then stir in the oats and nuts/seeds. You can add more or less oats and it will give you a more or less chunky granola. You want to mix in as many oats as the wet mixture will coat easily. For a less chunky granola add in more oats till some oats are not quite covered in the wet mixture and for more chunky granola with clusters add in only as many oats as can be fully coated with the wet mixture.
