8 Slices Oscar Mayer bacon, chopped
1/2 Pound fresh Mushrooms, sliced
1 Medium red pepper, chopped
1 Medium green pepper, chopped
1 Small onion, chopped
12 Large eggs
1/3 Cup Breakstone's or Knudsen Sour Cream
12 Ounces Velveeta® Pasteurized Prepared Cheese product, sliced

Steps:

  • 1.Heat oven to 350°F
  • 2.Cook and stir bacon in large skillet on medium heat until crisp. Remove from skillet, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels. Meanwhile, cook and stir hash browns and vegetables in drippings 10 min.
  • 3.Spread vegetable mixture onto bottom of 13x9-inch baking dish sprayed with nonstick cooking spray. Whisk eggs and sour cream until blended; pour over vegetable mixture. Top with bacon and Velveeta®.
  • 4.Bake 40 min. or until center is set and casserole is heated through.

Steps:

  • Preheat oven to 375°F.
  • In a well-seasoned 8 or 9-inch cast iron skillet, cook the bacon over medium heat until crispy and fat has rendered. Transfer bacon to a paper towel-lined plate to drain. Add the onion to the skillet and reduce heat to medium low. Cook until onion is soft and translucent, about 4 minutes.
  • In a large bowl, whisk together the eggs, milk, salt and pepper. Stir in the hash browns, cheese, bacon and onion.
  • Make sure the cast iron skillet is well greased with bacon grease, and grease with non-stick cooking spray if needed. Dump the hash brown mixture into the skillet and spread it evenly in the pan. Bake until edges are crispy, about 30-35 minutes. Serve immediately.

12 slices center-cut bacon
2 1/2 cups Original Bisquick™ mix
6 tablespoons cold butter
1/4 cup boiling water
1 cup frozen diced hash brown potatoes, thawed
1 1/2 cups shredded sharp Cheddar cheese (6 oz)
4 green onions, sliced (1/4 cup)
1 1/2 cups half-and-half
4 eggs
1/2 teaspoon salt
1 cup grape tomatoes, halved

Steps:

  • Heat oven to 425°F. Line 15x10-inch pan with foil; place wire cooling rack in pan. In small bowl, mix brown sugar and pepper. Sprinkle over 1 side of each bacon slice, pressing firmly. Place bacon on rack. Bake 18 to 20 minutes or until crisp.
  • Reduce oven temperature to 350°F. Spray 9 1/2-inch glass deep-dish pie plate with cooking spray. In bowl, place Bisquick mix; cut in butter, using pastry blender, until crumbly. Add water; stir vigorously until soft dough forms. Using fingers dipped in Bisquick mix, press dough on bottom and up side of pie plate, forming edge on rim of plate. Crumble 8 slices bacon. Sprinkle crumbled bacon, potatoes, cheese and onions in crust. In bowl, beat half-and-half, eggs and salt with whisk until blended. Pour over ingredients in crust.
  • Bake 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes. Cut into 8 wedges. Cut remaining 4 slices bacon in half. Top each wedge with bacon and tomatoes.

  • Line a large mug with a few sheets of paper towel. Lay the bacon in the mug, cover with another piece of paper towel and microwave on high power for 1 minute. Using the edges of the paper towel, lift the bacon from the mug and set aside.
