1/4 cup plus 1 tablespoon Djion mustard
1/4 cup honey
1/4 cup cider vinegar
1 1/2 teaspoons kosher salt
1/4 cup plus 2 tablespoons vegetable oil, like soy, peanut, or corn

Steps:

  • In a medium bowl, whisk together the mustard, honey, vinegar, and salt. Gradually whisk in the oil to make a creamy dressing. Use immediately or store in the refrigerator, covered, for up to 3 days.

I love honey mustard dressing but everywhere you go it's different. Some are good others aren't. A few years ago I got this recipe from a dear friend's mother. It's the perfect blend.

1/2 cup(s) milk
2 cup(s) mayonaise (not salad dressing)
1/2 cup(s) honey
3 tablespoon(s) lemon juice
3 tablespoon(s) yellow mustard
1/2 teaspoon(s) curry powder
1/2 teaspoon(s) groung ginger
1/4 teaspoon(s) ground cinnamon

Steps:

  • Blend all ingredients well. Refrigerate 24 hrs before using. This yields 3 cups and keeps well when refrigerated. I like to use it to dip chicken fingers as well as on salad.

The salad I made was a mixture of spinach, romaine lettuce, thinly sliced red onion, fresh sliced mushrooms, small cubes of mozzarella cheese, and mandarin oranges drained, but you can use any combination of salad ingredients you like.
