Looking for an easy dinner? You need to make these sweet and tangy honey lime chicken skewers a part of your weekly summer dinner rotation.

Number Of Ingredients 9

1 pound boneless, skinless chicken breast
1/2 tsp salt
1/2 tsp freshly cracked black pepper
4 cloves garlic, minced
2 Tbsp canola oil
1 Tbsp + 1 tsp honey
2 medium limes, zested and juiced
1/4 cup chopped fresh cilantro, plus more for garnish
1/2 teaspoon crushed red pepper flakes

Steps:

  • Cut chicken into approximately 2-inch pieces. Place in a large bowl, and sprinkle with salt and pepper. Toss to coat.
  • In a small bowl, whisk together the remaining ingredients. Pour over chicken and toss to coat well.
  • Cover the bowl with plastic wrap, and refrigerate for at least 4 hours, up to overnight. The longer you marinate it, the better the flavors will be.
  • When ready to cook, soak 4 wooden skewers in a shallow baking dish filled with cold water for at least 15 minutes. Or, use metal skewers.
  • Heat up the grill. While it is preheating, divide chicken evenly between the skewers.
  • Grill over medium-high heat for approximately 4 minutes on each side, until completely cooked through. The internal temperature should be at least 165°F.
  • Garnish with chopped fresh cilantro and serve immediately.

3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon olive oil or 1 tablespoon vegetable oil
juice of one lime
2 garlic cloves, minced
1 -2 teaspoon sriracha chili-garlic sauce
red pepper flakes, to taste
2 tablespoons fresh cilantro, minced
1 lb skinless boneless chicken breast (for kabobs cut into large chunks)
salt (optional)

Steps:

  • In a small bowl, combine soy sauce through the cilantro. Mix thoroughly.
  • Cut the chicken into large chunks and marinate for at least 30 minutes - 1 hour. For convience place the chunks in a small ziplock bag, pour in the marinade and squeeze out the air. Message the marinade around the chunks to coat.
  • Remove the chunks from the marinade and lightly season kabobs with salt, if desired. Skewer onto bamboo sticks that have been soaked in water for about 10 minutes.
  • Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.

6 skinless, boneless chicken thighs, cut into large chunks
5 garlic cloves, crushed
1 thumb-sized piece of ginger, grated
6 tbsp sesame oil
3 tbsp honey
6 tbsp soy sauce
3 limes, juiced, plus extra wedges to serve
100g mangetout
275g cooked egg noodles
1 large carrot, peeled and cut into thin strips or coarsely grated
½ bunch of coriander, chopped
1 tbsp sesame seeds, (optional)

Steps:

  • Put the chicken in a bowl. In a separate bowl, whisk together the garlic, ginger, sesame oil, honey, soy sauce and lime juice. Add a third of this to the chicken and save the rest for the noodles. Mix everything together and chill overnight or for a few hours.
  • Bring a saucepan of water to a simmer. Add the mangetout and cook for 1 min, then drain and rinse under cold water. Toss the cooked noodles with the mangetout, carrot, remaining marinade, coriander and sesame seeds.
  • Heat the grill to medium. Thread the chicken onto three or four long skewers, put on a flat baking tray and grill for 12 mins, turning the skewers halfway, until cooked. Serve the skewers on top of a platter of the noodles with extra lime wedges for squeezing over.

1/2 lb bacon, slices
1 1/2 teaspoons lemon pepper (I used Lemon & Herbs seasoning and fresh pepper)
1/2 teaspoon seasoning salt
1/3 cup lemon juice (I used fresh lemon juice)
1/3 cup honey

Steps:

  • HINT: To prevent wooden skewers from burning soak first (I put a little oil in the water. I don't know if it helps. but I feel it may help lock in the water a little longer.) fit bacon to chicken strips, and thread onto wooden skewers.
  • Combine remaining ingredients.
  • Add chicken skewers.
  • Marinate overnight. (I used a long plastic dish with lid and gave it a light shake every so often).
  • BBQ - on medium, reserving marinade to baste with barbecue 4 to 5 inches from heat for 10 to 15 minutes or until chicken is no longer pink& bacon is crisp.
  • (I made this for a big BBQ I used all the chicken and bacon I needed or had, and 2X or 3X the marinade until I was happy).
