This recipe quickly becomes the favorite of pretty much everyone that tries it. It's so tasty, it's easy to make, and the ingredients are interchangeable! You can use the dressing immediately or make it in advance and store in refrigerator up to a couple of days. I have substituted pears and mandarin oranges for the strawberries and feta instead of blue cheese. Be creative! YUM!

- Make your candied almond slivers. Make sure they have at least 30 minutes to cool. I usually do mine the night before.
- Put your washed spinach in large bowl. Sprinkle the cheese, bacon bits, and candied almond slivers over the top. Drain the mandarin oranges and place on top. Drizzle the poppy seed dressing over salad - as much as you would like and toss with salad tongs. Serve with your favorite main dish and enjoy!

- 4. I mix my salad and dressing altogether, but it gets kind of soggy looking and everything sinks to the bottom. Layering the salad would look much prettier and stay together more. So however you choose to mix it is up to you.

- Place pine nuts in a small frying pan and toast on medium heat until golden, stirring constantly to prevent burning.
- Cool and set aside.
- Core apple and cut into 1/2 inch chunks.

- Make well ahead to allow flavors to blend.
- Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.

- SALAD - Drain oranges, place into a bowl and set aside.
- Cube apples and place in a bowl.
- Pour lemon juice over; mix well to coat to prevent from turning brown and let marinate for about 1 hour or longer.
- Before using apples, drain any excess lemon juice.
- Prepare spinach and Romaine lettuce; dry on paper towels, and add to a large bowl.
- Add ice cubes and let chill for at least 1/2 hour to crisp.
- DRESSING - In a glass jar with lid, add orange juice, balsamic vinegar, olive oil, honey, poppy seeds, Dijon mustard, salt, and pepper; shake well to blend.
- TO SERVE - Remove ice from the greens and discard; drain any water.
- Add apples and pine nuts and toss to mix well.
- Add dressing mixture and toss to coat well.
- Arrange spinach on individual salad plates and top with 3 or 4 Mandarin orange segments.
- This dressing is also very good with young, mixed greens.

- CANDIED ALMONDS: Place the sliced almonds and white sugar in a large skillet and heat to medium and stir nearly constantly. - ENJOY: Right before eating, add the dressing to the salad (add to taste -- you may not need it all) and candied almonds (add as many as you'd like; we typically add about 1/3 cup (See Note 2). Toss and enjoy immediately.
