1 1/2 tablespoons all-purpose flour
1/2 cup honey
3 tablespoons soy sauce
2 tablespoons Dijon mustard
2 (1 1/4 lb) trimmed racks of lamb

Steps:

  • Make red wine sauce:.
  • Melt 2 tablespoons butter in heavy large pot over medium-high heat.
  • Add onions and carrot and sauté until deep brown, about 12 minutes.
  • Add beef broth and next 4 ingredients; boil 10 minutes to blend flavors.
  • Mix flour and 1 tablespoon butter to paste in bowl.
  • Whisk into sauce.
  • Simmer until sauce thickens, whisking occasionally, about 10 minutes.
  • Set aside.
  • Make lamb:.
  • Preheat oven to 400°F Whisk honey, soy sauce and mustard in small bowl to blend; add 2 tablespoons glaze to sauce.
  • Sprinkle lamb with salt and pepper.
  • Place on baking sheet.
  • Brush each rack with some of remaining glaze.
  • Roast until thermometer inserted into center of lamb registers 130°F, brushing often with more glaze, about 35 minutes.
  • Rewarm sauce.
  • Season with salt and pepper.

1/2 cup cherry preserves
2 teaspoons olive oil
1 teaspoon lime juice

  • Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. Spoon half of the remaining glaze over lamb. , Broil 4-6 in. from the heat for 10-12 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting once with remaining glaze. , Remove lamb from the oven and loosely cover with foil. 2 racks of lamb (about 1.5lbs)
4 tablespoons rosemary (fresh if possible)
4 cloves garlic (minced)
fresh ground pepper
1 cup olive oil
3/4 cup balsamic vinegar
1 small onion
1 lemon, juice of
1 tablespoon Worcestershire sauce
1 cup honey
1 ounce Southern Comfort
1/8 cup crushed pecans

Steps:

  • Combine marinade ingredients and marinade rack of lamb for a minimum of 4-6 hours prior to preparation.
  • Refrigerate, and turn ocasionally.
  • Combine honey and Southern Comfort in a preheated saucepan.
  • Bring the mixture to a boil then reduce heat while stirring constantly for about 10 minutes.
  • Add crushed pecans and reduce mixture to a thick syrup.
  • Preheat oven to 425 degrees.
  • In an ovenproof skillet, heat a tbsp of olive oil on medium and place the marinated rack of lamb, fat side down in the skillet and allow to cook for about 2 minutes (should be golden brown).
  • Pour the glaze liberally over the top of the rack of lamb, and allow to cook an additional minute, being careful not to burn.
  • Place the ovenproof skillet with the rack of lamb in the preheated oven, and cook until rare (about 18-25 minutes or 145-150 degrees F at the centre).
  • Remove from oven, and allow to stand for 5 minutes before serving.

1 lemon, juice and rind of
2 garlic cloves, crushed

1 (7 bone) rack of lamb, trimmed and frenched
coarse sea salt to taste
2 ½ tablespoons ras el hanout
1 cup Shiraz wine
⅓ cup honey

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Season lamb with sea salt, and rub with ras el hanout. In a medium cast iron skillet over medium high heat, sear lamb on all sides until evenly browned.

This Roast Lamb is an excellent choice, especially when partnered with rosemary and honey and a sauce using fresh mint. The honey glaze turns the joint a lovely golden colour, and the honey-sweetened mint sauce is a flavoursome change from the sharp vinegary taste of traditional recipes. Serve with a hot gratin of Dauphinoise Potatoes and some braised leeks for a really special meal.

2 tablespoons flour
1 teaspoon salt

1/4 teaspoon ground cinnamon
2 -3 sprigs fresh rosemary, bruised leaves
1 (4 1/2 lb) leg of lamb, about
1 large onion, peeled and thickly sliced
2 medium carrots, pared and thickly sliced
2 tablespoons clear honey
10 fluid ounces dry cider
1 tablespoon cornstarch
3 1/2 fluid ounces white wine vinegar

Steps:

  • Heat the oven to 350°F.
  • Combine the flour, salt, pepper, cinnamon and rosemary and rub well into the lamb on all sides.
  • Lay the onion and carrot in the bottom of the roasting tin and the lamb on top.
  • Roast, allowing 25 to 30 minutes per 500g (1 lb 2oz) of weight, less for a pinker meat.
  • Turn the joint halfway through to cook evenly.
  • Meanwhile, make the sauce; warm the vinegar and honey until the honey has dissolved, then stir in the mint and leave to cool.
  • About 30 minutes before the end of cooking time, carefully lift out the meat and strain off the fat from the roasting tin (leave the vegetables).
  • Replace the meat, best side up.
  • Spread with the honey, and add the cider to the pan.
  • Return to the oven, increasing the heat to 375*F, and finish roasting, basting once or twice.
  • Lift the joint and vegetables on to a hot serving platter.
  • Blend the cornstarch with 1 TBS of cold water, add to the roasting tin and boil, stirring for a few minutes to make gravy.
  • Strain into a hot sauceboat.
  • Serve the lamb with the hot cider gravy and honey mint sauce.

Dredge in breadcrumbs, coating completely, Return lamb to baking pan, meant side up. Roast until crumb feel dry but are not colored, about 3 minutes. Let lamb rest 5 minutes at room temperature.
  • Meanwhile, make sauce:
  • Boil wine and Port in large saucepan until reduced to 1/3 cup, about 25 minutes. Remove from heat. Add butter; whisk just until melted. Season with salt and pepper.
  • Spoon yams and apples into center of 4 plates. Cut lamb between bones into chops. Stand 3 to 4 chops (bones facing up)in yams. Arrange onion rings atop bones. Spoon sauce around yam; serve.
