DELICIOUS OVEN FRIES
This recipe is healthy and tasty. Great for people watching cholesterol and heart. Got it from a cookbook at a bookstore. Prepare these at least a couple hours ahead of time. NOTE: You can also put a tablespoon of liquid smoke (any flavor will do and found in BBQ sauces section) and also Vegeta (found in delis or foreign food section). Before chilling it takes about 10 minutes to peel the potatoes that is if you want to, and if you keep the skin on there will be more time for you. The only part that takes time is chilling the potato strips for 1 hour. Cooking is about 35 minutes.

Steps:
- Scrub potatoes.
- Cut in 1/2 inch strips.
- Place the potato strips into 8 cups ice water, cover, and chill for 1 hour or longer.
- Remove potato strips, dry thoroughly with paper towels.
- Place all of the spices above in a plastic bag and mix with your hand, or close the bag and shake it if you prefer.
- Get the potato strips in a bowl and put in your oil and mix well so they are coated.
- Then put them in the spiced bag and coat also.
- Place the potatoes in a nonstick shallow pan.
- Cover with aluminum foil.
- Turn to 475° for 15 minutes.
- Remove the foil, turn the fries over, and bake an additional 15-20 minutes extra at 475°.
DO-AHEAD FRIES
These fries are precooked early in the day and finished when you're ready to serve. You'll be surprised how crisp and golden they cook up!! You can also put them on a cookie sheet after the first frying and freeze them to use later.

- Peel potatoes and cut into french fry strips.
- Drop into a bowl covered with water in which the salt has been added.
- Drain and pat dry.
- Heat oil to 400*.
- Fry the potato strips for 1 minute (do this in batches if necessary).
- Drain on paper towels.
- Cover and refrigerate until ready to use.
- To finish, fry the potatoes an additional 2-3 minutes at 400*, until golden.

- Whisk egg yolks and 1 Tbsp. lemon juice in a medium bowl. Whisking constantly, gradually drizzle in oil, drop by drop at first, until mayonnaise is thickened and smooth.
- Fit a medium saucepan with thermometer; pour in oil to measure 2". Heat over medium-high heat until thermometer registers 350°. Working in 4 batches, fry potatoes, turning occasionally, until golden and tender, 6–8 minutes; transfer to a wire rack to drain.
- Just before serving, working in batches, fry potatoes until golden brown and crisp, about 4 minutes. Transfer to wire rack and season with salt.

- Grill burgers, rotating every 2 minutes, about 4 minutes per side for medium, topping with cheese during last 2 minutes of cooking.

- Peel and cut: Rinse the potatoes and pat dry. Peel the potatoes, if desired. Cut the potatoes into 1/2-inch-thick sticks or your desired thickness.
- Blanch: Bring the water and salt to a boil over medium-high heat in a large pot. Add 1/4 of the potatoes and cook for 2 minutes. While the potatoes are cooking, prepare a large bowl of ice water. Use tongs or a slotted spoon to immediately move the blanched potatoes to the ice water bath. Repeat with blanching and cooling the remaining potatoes in 3 more batches.
- Dry: Drain the chilled potatoes from the ice bath and lay them out in a single layer on paper towels or a clean kitchen towel. Pat with more towels to dry completely. Place the fries and oil in a clean, dry large bowl and toss to combine.
- Freeze: Place the fries in a single layer on a parchment paper-lined rimmed baking sheet and freeze until solid, 6 hours or overnight.
