CHEF JOHN'S HONEY-GLAZED HAM

Chef John's Honey-Glazed Ham image

A great holiday ham glaze needs to have three things: wonderful flavor, gorgeous, shiny appearance, and a crispy, crackling crust you can hear across the room. I'm happy to report this easy-to-make glaze has all those things in abundance.

Provided by Chef John

Categories     Main Dish Recipes     Pork     Ham     Whole

Time 2h50m

Yield 16

Number Of Ingredients 11

¾ cup water, or as needed
2 whole star anise
12 whole cloves, or more to taste
1 (7 pound) country-style ham
1 cup firmly packed light brown sugar
¼ cup honey
2 tablespoons Dijon mustard
2 tablespoons rice vinegar
1 ½ teaspoons freshly ground black pepper
½ teaspoon Worcestershire sauce
1 pinch cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pour water, star anise, and cloves into the bottom of a roasting pan. Place a roasting rack into the pan over the water, anise, and cloves; place ham on rack. Cut 1/4-inch deep slashes 1/2-inch apart lengthwise and crosswise across the top of the entire ham.
  • Bake ham in the preheated oven for 20 minutes. Whisk brown sugar, honey, mustard, vinegar, black pepper, Worcestershire sauce, and cayenne pepper together in a bowl until glaze has a thick, smooth consistency.
  • Brush glaze all over ham. Continue baking ham, brushing glaze on every 20 minutes, until glaze is deep golden and ham is heated through, about 2 hours 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Use a kitchen torch to heat the glaze on the ham until it is crispy and caramelized, 2 to 5 minutes.

PINEAPPLE HONEY-GLAZED HAM

Pineapple Honey-Glazed Ham image

Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

Provided by Food Network Kitchen

Time 4h20m

Yield 12 servings

Number Of Ingredients 6

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

GLAZED GAMMON

Glazed gammon image

Add a sticky honey and mustard glaze to gammon for a delicious sweetness that contrasts with the saltiness of the meat. It's great for a celebration supper

Provided by Esther Clark

Categories     Dinner, Main course

Time 2h20m

Yield Serves 8-10

Number Of Ingredients 10

2½ kg boneless unsmoked gammon joint, tied
1 sprig thyme 2 bay leaves and 1 rosemary sprig tied together
1 onion, halved
2 carrots, roughly chopped
1 celery stick, roughly chopped
1 tbsp black peppercorns
1 tsp cloves
1½ tbsp English mustard
70g clear honey
2 tbsp soft dark brown sugar

Steps:

  • Put the gammon in a large, deep saucepan. Add the tied herbs, onion, carrots, celery, peppercorns and cloves. Pour over enough cold water to cover the meat, then bring to the boil, cover with a lid, and lower to a gentle simmer for 1 hr 15 mins. Turn off the heat and leave the ham to sit in the liquid for 30 mins.
  • Remove from the liquid (this makes a delicious soup stock) and leave to cool until cold enough to handle. Peel off the thick layer of skin on the gammon to reveal a layer of fat. Discard the skin and score the fat in a criss-cross pattern with a sharp knife.
  • Heat the oven to 200C/180C fan/gas 6. Put the ham in a roasting tray lined with foil. Mix together the mustard, honey and sugar in a bowl, then generously brush half over the ham. Roast for 15 mins, then brush with the remaining glaze. Return to the oven for a further 20-30 mins or until sticky and brown. Leave to cool for 15 mins before carving into thick slices.

HONEY GLAZED HAM

Honey Glazed Ham image

We were on a vacation with the administrative chef of Quebec's famous Chateau Frontenac and upon returning to the chalet, he made this recipe to which I assisted and helped cutting the vegetables. It tasted very good and to my surprise it had kept its original colour (rosy and tender). I have been making it ever since (that was 15 years ago).

Provided by mozarth622

Categories     Ham

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 8

1 (2 1/2 lb) ham, toupie style (half moon)

2 carrots, peeled and cut in 2 inch length
2 stalks celery, peeled and cut in 2 inch length
1 medium onion, cut in half
4 -5 whole peppercorns
10 whole cloves
2 ounces liquid honey

Steps:

  • Put the ham in a casserole and cover it with cold water.
  • Add the ingredients of the first part and bring to simmer for 30 minutes.
  • With a fork get the ham out of the cooking liquid and put it on a Pyrex plate or other oven proof dish.
  • Insert evenly the cloves in the ham top surface and cover it with honey.
  • Place in a preheated oven (350°F) for 30 minutes.
  • Once the ham cooked, let it cool a while and with a spoon complete the glazing with the honey left at bottom of the plate.

GORDON RAMSAY'S HONEY GLAZED HAM RECIPE

Gordon Ramsay's honey glazed ham recipe image

Gordon Ramsay's honey glazed ham recipe is a great staple as it can be served hot or cold. Whether served as a Christmas ham or Sunday lunch it's delicious!

Provided by Gordon Ramsay

Categories     Dinner

Time 4h

Yield Serves: 8-10

Number Of Ingredients 9

3kg unsmoked boneless gammon joint
4 medium carrots, peeled and roughly chopped
1 leek, cleaned and roughly chopped
1 onion, peeled and roughly chopped
1 tsp black peppercorns, lightly crushed
1 tsp coriander seeds, lightly crushed
2 cinnamon sticks, broken in half
2 bay leaves
handful of cloves

Steps:

  • Put the gammon in a large saucepan and pour on enough cold water to cover. Add the carrots, leek, onion, peppercorns, coriander seeds, cinnamon sticks and bay leaves. Bring to the boil, turn down to a simmer and cook for 3 hours, topping up with more boiling water if necessary. Skim off the froth and any impurities that rise to the surface from time to time. If cooking in advance, let the ham cool in the stock overnight. Otherwise, allow it to cool a little, then remove from the pan. Strain the stock (and save for soup etc).
  • To make the glaze, put the sugar, Madeira, sherry vinegar, and honey into a pan and stir over a low heat. Bring to the boil, lower the heat and simmer for 3-4 minutes until you have a glossy dark syrup. Do not leave unattended, as it will easily boil over.
  • Preheat the oven to 170°C/Gas Lift the ham into a roasting tin. Snip and remove the strings and then cut away the skin from the ham, leaving behind an even layer of fat. Lightly score the fat all over in a criss-cross, diamond pattern, taking care not to cut into the meat. Stud the centre of each diamond with a clove. Pour half of the glaze over the ham and roast for 15 minutes.
  • Pour on the rest of the glaze and return to the oven for another 25-35 minutes until the ham is golden brown, basting with the pan juices frequently. It also helps to turn the pan as you baste to ensure that the ham colours evenly.
  • Remove from the oven and allow to rest for 15 minutes before carving.

  • Pre heat the oven to 325F and then remove any packaging or netting the ham may be wrapped in. If the ham still has a rind, remove this. Score the fat with a sharp paring knife. Try to avoid cutting into the ham itself.
  • Place the ham with the cut side down in a roasting pan and add 1/4 cup of water to the pan. Cover the ham with tinfoil or a roasting pan lid. This will help keep moisture in the ham as it comes up to temperature. Cook the ham for 1 hour, or until the ham reaches an internal temperature of 120F. Use a meat thermometer to check this.
  • As the ham cooks prepare the glaze by combining all the glaze ingredients in a pot and gently bringing them to a simmer. Cook the glaze until it starts to thicken slightly.
  • After the first hour is up, remove the lid from the ham and remove any liquid that may be in the pan. Set the juice aside, and turn the oven up to 350F. Take 1/3 of the glaze you made, and pour it over the ham, making sure to fully coat the ham. Roast the ham for 15 minutes

  • Preheat the oven to 180°C (350°F/Gas 4). Cut a line through the thick rind of the ham, 6 cm (2½ inches) from the shank end, so you can easily lift the rind. To remove the rind, run your thumb around the edge, under the cut rind, and carefully pull back, easing your hand between the fat and the rind. Using a sharp knife, lightly score the fat into a diamond pattern. Do not cut all the way through to the ham or the fat will fall off during cooking.
  • Put the honey glaze ingredients in a saucepan over low heat and stir until well combined. Using a palette knife or the back of a spoon, spread half the glaze over the ham, then press a clove into the centre of each diamond.
  • Sit the ham on a rack in a deep baking dish and pour in 500 ml (17 fl oz/2 cups) water. Cover the ham and dish tightly with greased foil and bake for 45 minutes. Gently warm the remaining glaze, then remove the baking dish from the oven and spread the glaze over the ham.
  • Increase the oven temperature to 210°C (415°F/Gas 6–7). Bake the ham, uncovered, for a further 20 minutes, or until the surface is golden and the glaze is lightly caramelised. Remove from the oven and leave to rest in a warm place for 15 minutes before carving.
