6 Cornish game hens (20 to 24 ounces each)
1 tablespoon cornstarch
1 cup thawed apple juice concentrate
3 lemon slices
1/2 teaspoon ground cinnamon

Steps:

  • Tie legs of each hen together; tuck wings under hens. Place on a greased rack in a roasting pan. In a small saucepan, combine cornstarch and apple juice concentrate until smooth. Stir in the lemon slices and cinnamon. Bring to a boil; cook and stir for 1 minute or until thickened., Spoon half of the glaze over the hens. Bake, uncovered, at 375° for 1 to 1-1/4 hours or until a thermometer reads 180°, basting occasionally with remaining glaze.

2 cornish hens
½ cup + 1 tablespoon butter
2 tablespoons honey
2 tablespoons brown sugar
¼ teaspoon ground clove or cinnamon (optional)
2 apples (1 Granny Smith and 1 Red Delicious)

Steps:

  • In a microwave-safe bowl, add ½ cup of butter and 2 tablespoons of honey.
  • Microwave for 20 seconds, or until the butter is melted.
  • Add 2 tablespoons brown sugar and mix with a spoon
  • Add in ¼ teaspoon ground clove or cinnamon. Mix.
  • Set aside.
  • Empty the cavity of the cornish hens and rinse under cool water.
  • Dice the apples.
  • Stuff the cavity of the cornish hens with apples.
  • Use butcher string to tie the legs together.
  • Line a baking dish with foil (helps with the clean up process.
  • Place the hens breast down and brush with a tablespoon of melted butter.
  • Cover the baking dish with foil and bake at 350 for 20 minutes.
  • Remove from the oven and brush cornish hens with the glaze.
  • Place back in oven, uncovered, for 25 minutes.

I saw this in a magazine and thought it looked absolutely delicious. It would make a very fancy romantic meal or even be great for a dinner party with friends. I love the idea of using Cornish hens because of the combo of dark and white meat. The hens are baked, but I want to try them on the grill when it gets warm.

4 (1 1/2 lb) rock cornish game hens, 6 lbs total
2 tablespoons oil
2 tablespoons lemon juice
2 tablespoons honey
2 teaspoons fresh thyme, chopped
2 teaspoons fresh oregano, chopped
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Rinse and pat dry hens. Cut out the backbone and split through the breastbone. Trim any excess skin or fat.
  • Place oil in a shallow pan and heat oven to 400 degrees.
  • In a small bowl, whisk together lemon juice, honey, thyme, and oregano. Season hens with salt and pepper.
  • Once pan is heated, place hens skin side down and brush with half of the honey mixture.
  • Bake for 30 minutes. Flip hens and brush with remaining honey mixture. Bake 20-30 minutes longer, or until internal temperature reaches 180 degrees. Place on a platter.
  • Drain drippings into a fat separator or skim as much fat as possible. Serve with hens.

You can substitute 1 1/2 pounds skinned chicken drumsticks for the Cornish Hens - just increase the cooking time by an additional 5-10 minutes and deduct 2 points per serving.

2 Cornish hens, halved (about 1 1/2 pounds)
1/2 cup apple cider
1/4 cup apple jelly
1 teaspoon five-spice powder
1/8 teaspoon salt
1/4 teaspoon cayenne

Steps:

  • Spray the broiler rack with nonstick spray; preheat the broiler. Broil the hens 7 inches from the heat, skinned side down, 15 minutes. Turn the hens and broil until cooked through, 5-10 minutes more.
  • Meanwhile, prepare the glaze: Combine the cider, jelly, five-spice powder, salt and cayenne in a small saucepan and bring to a simmer. Simmer until the mixture is thick and syrupy, about 7 minutes. Set aside and keep warm (mixture should equal about 1/4 cup).

6 ounces unsweetened apple juice concentrate, undiluted
1 1/2 tablespoons water
1 1/2 teaspoons cornstarch
1/2 teaspoon cinnamon
1/2 medium lemon, sliced

Steps:

  • Remove giblets from hens and discard.
  • Rinse hens under cold water and pat dry.
  • Using a long, sharp knife, split the hens lengthwise.
  • You may also buy precut hens.
  • Place the hens, cavity side up, in a roasting pan.
  • Dilute 1/4 cup of the apple juice concentrate with the water.
  • Pour juice over the hens.
  • Bake uncovered at 350F for 45 minutes.
  • Turn breast side up.
  • In a small pan over medium heat, combine the remaining apple juice concentrate, cornstarch and cinnamon; mix well.
  • Add 2 lemon slices and continue cooking until thickened.

This recipe was e-mailed to me by a friend. I made it this year for Christmas Eve dinner with great raves and success so I wanted to share it with you.

2 1/4 cups cranberries, rinsed and drained
3/4 cup dry red wine
3 tablespoons honey
1 tablespoon olive oil
1 tablespoon melted butter
1/3 cup minced onion
1/3 cup minced celery
1/3 cup cranberries, rinsed and drained,coarsely chopped
2 cups French bread cubes, 1/2 " thick
1/4 cup chicken broth
1/4 cup finely chopped parsley
1 teaspoon dried sage, crushed
1/4 teaspoon dried thyme, crushed
1/2 teaspoon salt, divided
1/4 teaspoon fresh ground black pepper, divided
4 Cornish hens, giblets removed,thawed,rinsed and dried
kitchen string

Steps:

  • Prepare the glaze: Combine cranberries and wine in saucepan, bring to a boil, reduce heat and simmer 5 minutes.
  • Stir in honey and continue to simmer 2 minutes.
  • Strain glaze, stir in oil and set aside.
  • Prepare the game hens and stuffing: Melt butter in saucepan over medium heat, add onion, celery and cranberries.
  • Saute for 3 minutes.
  • Add sauteed mixture to the French bread cubes.
  • Let cool.
  • Stir in chicken broth, parsley, sage, thyme, 1/4 Tsp.
  • salt and 1/8 Tsp.
  • pepper.
  • Stuff game hens with the stuffing and tie drumsticks together with kitchen string.
  • Place hens in a roasting pan.
  • Brush some of glaze over each game hen and sprinkle with a little salt and pepper.
  • Place in a preheated 450 degree oven for 20 minutes.
  • Reduce heat to 350 degrees and continue roasting for 45 minutes longer.
  • Baste hens with glaze and sprinkle with salt and pepper (salt& pepper is optional, I didn't do it) twice more during the cooking time.
  • Remove hens from oven and let rest 5 minutes.
  • Cut strings and serve.

4 Cornish hens (I used frozen ones- but fresh would be just as yummy)
2 sprigs fresh basil
2 sprigs fresh rosemary
2 sprigs fresh thyme
1/2 garlic clove (diced or chopped)
1/4 cup unsalted butter (I cheated and bought some fresh "poultry" herbs- just picked out what I needed)
4 ounces extra virgin olive oil (extra virgin olive oil)
2 tablespoons of fresh diced red peppers
4 jona gold apples (sliced or diced whichever you prefer)
1 (8 ounce) bag of butter & herbed croutons
1/2 cup unsalted butter (melted)
2 sprigs fresh rosemary
1/2 garlic clove (freshly chopped)
1 small vidalia onion (finely chopped)
1/4 cup scallion (chopped- 1-inch pieces so it adds color & flavor)

Steps:

  • 1- Prep hens- make sure you clean them well.
  • 2- Combine all of the MARINADE mixture and marinate the hens for 2 hours.
  • 3- Combine all of the STUFFING ingredients- melt the butter and pour it over the croutons, add garlic, onion and rosemary add the chopped/diced apples last to the mixture before stuffing the hens.
  • 3- Preheat the oven to 425- Arrange marinated hens in a large glass baking pan- prior to stuffing them make sure that you add some salt & pepper also set aside some of the marinade so that you can brush/baste a couple of times while they are cooking.
  • 4- Cook for about an hour and a half checking on them every 1/2 hour ( I covered my hens with foil until the last 20 minutes because I wanted the hens to have a nice color)
  • For those who like more robust flavor add additional herbs (to taste).
