Ingredients

4 boneless skinless chicken breasts
1/4 cup frozen orange juice concentrate, defrosted but undiluted
2 tablespoons soy sauce
2 tablespoons honey
1 teaspoon lemon pepper
1 large garlic clove, crushed
4 multi-grain rolls or 4 crusty buns
1 bunch arugula, lettuce or 1 bunch radicchio

Steps:

Lay chicken breasts on a piece of waxed paper. Gently pound, flattening slightly.
In a small bowl, stir orange juice concentrate with soy, honey, lemon pepper and garlic.
Place chicken on preheated grill. Brush often with orange mixture. Barbecue until glazed and chicken is thoroughly cooked, about 10 minutes per side.
Meanwhile, slice buns and line with several pieces of arugula, lettuce or radicchio.
Remove chicken to a cutting board and slice each breast, diagonally, into 3 or 4 pieces. Place in arugula-lined rolls.

Heat barbecue to medium. In a large bowl, mix the carrot, cabbage, onion, ranch dressing, parsley, lemon juice and 1/4 tsp (1 mL) each salt and pepper. Separate bun halves and set aside.
Place the chicken pieces in a shallow bowl with the olive oil and remaining salt and pepper and turn to coat. Grill the chicken until cooked through, approx. 3 to 4 min. per side. On final turn, brush chicken with barbecue sauce until coated on both sides.
Meanwhile, lightly grill the buns. Divide the chicken among the 4 buns and top with the coleslaw.
