CRUNCHY SNAP PEA POPCORN SALAD

- Pop the popcorn in a popcorn popper according to the manufacturer's instructions. While still hot, sprinkle with the white Cheddar popcorn seasoning to taste. Let cool completely. (You should have about 12 cups.)
- Whisk the mayonnaise, sour cream, cider vinegar, sugar and Dijon together in a large serving bowl. Stir in the shallot. Season with salt and pepper (remembering that the popcorn will also be salty).
- Add the snap peas, carrot and chopped celery and toss to coat. Add the popcorn and toss to coat the kernels in the dressing. Pile the watercress on top and sprinkle with the celery leaves. Serve immediately.

- Place popcorn in a large roasting pan; keep warm in a 250° oven. Meanwhile, in a large heavy saucepan, combine the sugars, water, corn syrup, vinegar and salt. Cook and stir over medium heat until mixture comes to a boil. Cook, stirring occasionally, until a candy thermometer reads 260° (hard-ball stage)., Remove from the heat; stir in butter until melted. Stir in food coloring. Drizzle over warm popcorn and toss to coat. Cool. Break into pieces. Store in an airtight container.

- Butter a large bowl.
- In a quart saucepan, combine sugars, syrup, water and salt.
- Cook to 235 degrees on a candy thermometer.
- Add almonds; cook to 250 degrees stirring occasionally.
- Continue cooking to 295 degrees, stirring occasionally.
- Add butter; stir until melted and completely blended into the syrup mixture.
- Remove from heat.
- Add half the popcorn.
- Stir syrup up from the bottom of the pan, coating corn well.
- Pour remaining popcorn into the buttered bowl.
- Pour mixture over the popcorn in the bowl; stir until all corn is covered and almonds are evenly distributed.
- Spread mixture onto a cold buttered surface; break apart with a fork.

MRS. MUELLER'S HONEY POPCORN
One of my dearest friends shared her mother's recipe with me for this tasty, lightly honey flavored popcorn. It is very easy and makes for a nice snack, especially enjoyed by children. Please only use freshly popped unseasoned popcorn - this really doesn't work well with the preseasoned microwave popcorn. Prep time assumes you have started with already popped popcorn.

- Heat honey and butter in a small saucepan over fairly low heat until blended, stirring.
- Remove from heat and let cool down a bit.
- Meanwhile, preheat oven to 350°F and line a jelly roll pan or two smaller rimmed cookie sheets with parchment paper.
- In a very large bowl, combine popped popcorn and nuts, then pour syrup over and combine so everything is evenly covered with syrup.
- Spread in one layer into prepared pan (s) and bake about 10 minutes, sitrring after the first 5 minutes.
- Remove from oven and let cool in pans.
- Variation: Use any type of nuts you prefer.

- Heat oven to 300°F; spray large nonstick baking sheet with spray.
- Combine popcorn and pecans in large bowl; mix lightly.
- Set aside.
- Combine brown sugar and honey in small pan.
- Cover and cook on medium heat just till brown sugar is dissolved and mixture comes to a boil, stirring occasionally.
- Pour over popcorn toss lightly to coat evenly.
- Transfer to baking sheet.
- Bake 30 minutes, stirring after 15 minutes.
- Spray large sheet of wax paper with spray.
- Transfer popcorn to wax paper to cool.
- Store in airtight containers.
- You can add 1 cup chopped, mixed dry fruit immediately after removing from the oven if desired.

- Melt the butter in a small saucepan over medium-low heat. Once the butter begins to foam and sizzle, add the honey and 1/4 teaspoon salt and whisk to combine. Keep the mixture warm over low heat.
- Melt the coconut oil in a large stockpot or Dutch oven over medium heat. Add two of the popcorn kernels to the oil and cover the pot with a lid. Turn the heat to up medium-high.
- As soon as you hear the test kernels pop, add the remaining kernels, cover the pot, and shake so that the kernels are evenly coated in oil. Once they start to pop, reduce the heat back to medium, give the pot another few shakes, and leave the lid a tiny bit tilted so some of the steam can be released.
