CRANBERRY-APRICOT GRANOLA BARS--DELICIOUS!!
I got this from www.parents.com/recipes. I had to share because they are by far the best granola bars I have had. All natural ingredients. You can use any dried fruit you would like, I use only dried cranberries. If you use only one fruit, I suggest using a whole cup of that fruit. Enjoy!!

Steps:
- To make each Homemade Granola Bar Recipe:
- Combine dates, honey, nut butter or nuts, and coconut oil in food processor or high-powered blender (such as Vitamix or Blendtec). If you want to blend the oats into a flour-type consistency, add to food processor. If you want hearty oats (like a granola bar), stir in oats when you add mix-ins.
- Pulse mixture until smooth.
- Place mixture into a bowl and stir in remaining mix-in ingredients.
- Press into a small pan or baking dish (I use a quarter baking sheet) and place into freezer to chill for 15 minutes to allow the bars to set up.
- Remove from freezer and cut into bars.
- Store in pantry, refrigerator, or freezer.
MOST AWESOME APRICOT OATMEAL BARS
Another apricot recipe from my Mom's collection. These also have honey and that was a BIG deal on Shupert's Honey Farm. At one point my Dad kept over 200 hives of bees. Honey was never in short supply in our kitchen. Honey adds moistness to baked goods which is wonderful. Just don't use too much of the stronger flavored honey in...

Stir and cook until preserves are melted and everything is well mixed. Remove from heat and cool.
- 2. Preheat oven to 350 degrees. Combine butter, brown sugar, honey, flour, oats, baking powder and salt. Mix together well. Press 1/2 of this mixture in the bottom of a 9 by 13 inch baking pan. Spread cooled filling over crust spreading evenly. Top with remaining oatmeal-flour mixture. Press down on top gently to get air gaps out.
- 3. Bake for 30 minutes or until golden brown. Do not over-bake. Remove from oven. Cool slightly. Run a knife around the edges of pan to loosen and then cut in bars. After cutting, leave in pan to cool completely.

- Add a little warm water if needed until all the ingredients come together. Add the oats and salt and pulse until all is mixed.
- Scoop mixture out onto parchment paper, top with crunchy flax cereal and 2 tablespoons of chopped apricots. Place another sheet of parchment paper on top and press gently with rolling pin. Roll out to desired pan size of a 9" x 9" square. This is so sticky on it's own I preferred doing it this way. Lift by the parchment paper and drop into the square pan. Remove the top sheet of parchment and discard. Refrigerate for at least 3 hours to firm up and then slice into squares.

- 1. Make the dough: In a large mug, add 1 cup of boiling water to the tea. Let steep for 10 minutes. 2. In a small bowl, whisk together the chia seeds and 3 tablespoons of the tea. (Reserve the remaining tea for the filling.) Set the mixture aside to gel for 10 minutes.
- 3. In a food processor, combine the flour, sugar, baking soda, salt, cinnamon, and cardamom; pulse just to mix. Add the oil, honey, vanilla, and chia-tea gel and pulse until the mixture forms a ball. Turn out the dough onto a sheet of plastic wrap. Wrap the dough tightly and form it into a disk. Chill it in the fridge for at least 1 hour, or overnight.
- 4. Make the filling: In a small saucepan, combine the figs, apricots, lemon juice, and salt with ½ cup of the reserved tea over medium-low heat. Scrape the vanilla seeds into the pot and toss in the pod, too. Bring to a gentle simmer and cook until the figs and apricots start to soften and the mixture thickens, 10 to 15 minutes. Remove the pot from the heat and carefully fish out the vanilla pod and discard. Transfer the mixture to a food processor and pulse until the mixture is slightly chunky.
- 5. Assemble the bars: Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
