1 medium onion, finely chopped
1 medium green pepper, finely chopped
2 garlic cloves, minced
1/2 teaspoon dried parsley flakes
1/4 teaspoon each dried basil, thyme and rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 jar (26 ounces) meatless spaghetti sauce, divided
1 pound ground turkey
4 to 6 submarine or hoagie buns, split
1/2 to 3/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the onion, green pepper, garlic, parsley and seasonings. Stir in 1/2 cup spaghetti sauce. Crumble turkey over mixture and mix well., Shape into 1-in. balls. Place on a greased broiler pan. Broil 4-6 in. from the heat for 8 minutes. Turn and broil 3-5 minutes longer or until meat is no longer pink., Transfer the meatballs to a large saucepan; add remaining spaghetti sauce. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until heated through. Serve meatballs and sauce on buns. Sprinkle with cheese.

These juicy meatballs with a tender, light texture are packed with flavorful herbs. The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. You'll make these turkey meatballs so often you just might forget about your beef meatball recipe.

2 tablespoons extra-virgin olive oil
2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)
1/2 cup milk
1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

2/3 cup hot water
1/2 cup uncooked bulgur
1 package (20 oz) lean ground turkey
2 cloves garlic, finely chopped
1/2 cup onion, finely chopped
2 teaspoons Italian seasoning
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 whole egg
1 egg white
1 jar (25.5 oz) Muir Glen™ organic cabernet marinara pasta sauce
8 soft hoagie buns (about 6 inches long)
8 slices reduced-fat mozzarella cheese
Shredded fresh basil leaves, if desired

Steps:

  • In small bowl, mix hot water and bulgur. Let soak at least 20 minutes. Heat oven to 350°F. Line cookie sheet with sides with foil.
  • Meanwhile, in large bowl, mix remaining Meatball ingredients. Drain bulgur; add to bowl, mixing very well until incorporated. Shape into 24 golf ball-size meatballs. Place on wire cooling rack, and place inside lined cookie sheet.
  • Bake 25 minutes. Place marinara sauce in 10- to 12-inch straight-sided skillet over medium heat. Carefully transfer meatballs to skillet; simmer 5 to 10 minutes or until hot.
  • Place 3 meatballs in each bun. Cut cheese in half, and place over meatballs. Cover with additional sauce, and serve with shredded fresh basil.

1 pound ground turkey
1/2 cup bread crumbs
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon garlic salt
1/2 cup grated Parmesan cheese
1 large egg
2 tablespoons olive oil
1 tablespoon Montreal steak spice
1 jar marinara sauce
16 slices provolone cheese
8 buns or sandwich rolls

Steps:

  • Preheat oven to 425 degrees. In a large bowl, mix together turkey, bread crumbs, basil, oregano, parsley, garlic salt, Parmesan cheese, egg, olive oil, and steak spice. Form meat mixture into 1-1/2" meatballs and place on a greased cookie sheet. Bake for 15 minutes, or until cooked through.
  • Slice buns in half and place on a baking tray. Place two slices of provolone cheese on the top half of each bun. Preheat oven to broil and lightly toast buns until golden brown and cheese has melted.
  • Warm marinara sauce in a large saucepan over low-medium heat or in the microwave until heated through.
  • Top the bottom half of each toasted bun with 3-4 meatballs, cover in marinara sauce and replace the top half of each bun.

  • Whisk eggs with 3 Tbsp. water. Stir in bread crumbs; let stand 5 minutes. Add Parmesan, parsley, garlic and turkey; mix gently until well combined.
