This raspberry lime vinaigrette is fruity, tangy and sweet. Enjoy it drizzled on salads, meats, fish or grilled vegetables.

3 cups (350 g) fresh or frozen raspberries
4 tablespoons extra virgin olive oil
1 tablespoon water
1 tablespoon fresh lime juice
1 tablespoon red wine vinegar
½ tablespoon Dijon mustard
1½ tablespoon honey or brown sugar (more or less (depending on your taste preference and the sweetness of the raspberries))
½ teaspoon salt
¼ teaspoon pepper

Steps:

  • Puree the raspberries in a blender. Strain the seeds out using a fine mesh strainer.
  • Return the puree to the blender and add the oil, vinegar, lime juice, mustard, honey, salt and pepper.
  • Blend on low until well combined.
  • Transfer the vinaigrette to a container and refrigerate for at least 20 minutes.
  • Store the raspberry lime vinaigrette in a airtight container in the fridge for up to 4 days.
  • Enjoy!

Number Of Ingredients 7

¼ cup (60 ml) water
¼ cup (60 ml) apple cider vinegar or raspberry vinegar
1 teaspoon salt
2 tablespoons (30 ml) honey
1 teaspoon dried basil
½ cup (60 g) raspberries, fresh or frozen, thawed
¾ cup (180 ml) olive oil

Steps:

  • 1. Place water, vinegar, salt, honey, basil, and raspberries into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 5. Remove lid plug and drizzle olive oil in a slow stream through the lid plug opening.
  • 4. Replace lid plug and turn to Variable 10, then High. Blend for an additional 10 seconds.

5 oz fresh raspberries
2 Tbsp brown sugar
1/2 tsp lime zest
Dressing:
Cooked raspberry mixture from above
1 Tbsp fresh lime juice
1/4 cup red wine vinegar
1/2 cup grape seed oil
1 1/2 Tbsp brown sugar
salt and pepper

Steps:

  • In a small sauce pan, over medium heat, combine raspberries, 2 Tbsp brown sugar and lime zest and mix well. Cover and cook for about ten minutes, stirring often. Blend the berries, carefully, with an immersion hand blender. Do be careful because the mixture is not too deep.
  • Let the berry mixture cool to room temperature, in the mixing bowl.
  • Add oil, vinegar, lime juice, sugar, salt and pepper. Whisk vigorously for a few seconds.
  • Refrigerate in the air tight container.

⅔ cup balsamic vinegar

  • Mix raspberries and sugar together in a bowl; set aside until mixture is juicy, about 10 minutes. Mash berries using a fork until liquefied. Pour berry mixture into a jar with a lid; add balsamic vinegar, olive oil, honey, and salt. Cover jar with lid and shake until dressing is mixed well. Store in refrigerator.
