3 lb grass-fed chuck roast
1 medium onion, sliced
2 Tbsp. coconut oil or grass-fed tallow
1 tsp. sea salt
2 cups water or bone broth

Steps:

  • Turn Instant Pot to Saute. Add the oil.
  • When shimmering, add the pot roast. Cook 2-3 minutes to golden, then flip to sear other side.
  • Sprinkle on the sea salt. Top with sliced onion. Pour in the water or broth.
  • Close and lock the lid. Set Instant Pot to "Manual" and program for 70 minutes.
  • You may do quick release or natural release.

3 lbs boneless beef chuck roast
1 -2 can beer (1 can is optional)
6 carrots or 6 parsnips, cut into 2 inch pieces
1 onion, quartered
1 pepper, diced
15 mushrooms, halved
2 tablespoons dried onion flakes
1 sprig thyme
2 bay leaves
salt and pepper
2 tablespoons butter
1/4 cup flour

Steps:

  • In a dry cast iron pot brown fat side down, then continue to brown all sides.Your kitchen will be smokey!
  • Season with salt and pepper.
  • Add 1 can beer.
  • And pour the other can for yourself!
  • Add rest of ingredients except butter and flour.
  • Put pot with cover into 325 degree oven for 3 hours.
  • Melt butter in micro and flour.
  • Remove roast and vegies from pan.
  • Add some drippings to butter then add back to pan.
  • Cook 5 minutes till nice and thick.
  • Add veggies back to sauce. Plate the sliced roast {if it`s not already falling apart} Top with the veggies and serve with your or my favorite side!

1/2 Cup Flour
1 Teaspoon Kosher Salt
1/2 Teaspoon Pepper
2 Teaspoons Olive Oil
3 Tablespoons Butter (divided)
1 Tablespoon Flour
1/2 Onion (minced)
2 Carrots (peeled and minced)
2 Stalks Celery (peeled and minced)
6 Cloves Garlic (minced)
1/3 Cup Balsamic Vinegar
1 Tablespoons Worcestershire Sauce
1 Tablespoon Liquid Smoke
2 Cups Beef Broth
2 Sprigs Rosemary (fresh)
4 Sprigs Thyme (fresh)
2 Bay Leaves
Potatoes for Serving (mashed )

Steps:

  • Heat the oven to 325
  • Place the flour, salt and pepper in a pie dish or pan.
  • Coat beef on all sides with the flour and set aside.
  • Heat a dutch oven or oven safe pot over medium high heat with a few drizzles of olive oil. Add the beef, browning on each side and remove to a plate.
  • Wipe out any black flour if there is any, leaving any browned bits in the pan.
  • Turn the heat to medium and add the olive oil and butter.
  • Quickly add the onions, carrots, celery and garlic, stirring to combine.
  • Cook for 5-6 minutes or until the veggies are tender.
  • Add the remaining flour and stir for 30 seconds.
  • Add the vinegar, Worcestershire sauce, liquid smoke, and beef broth. Bring to a simmer.
  • Add the herbs and bay leaves and place the beef back in the pot.
  • Place the lid on the pot and cook for 3 1/2- 4 hours in the oven, or until the meat is falling apart and the liquid has reduced down.
  • Remove the bay leaves and herbs, shred the meat, tossing it in the sauce and serve hot over mashed potatoes.

I found this recipe in the booklet that came with my slow cooker (crock pot). Its supposed to be peppered but I opted to marinade my joint overnight instead. I used Karin...'s All Purpose Marinade (Although I used quarter cup sundried tomato infused olive oil and quarter cup chilli infused olive oil instead of regular olive oil). The original recipe uses 8 shallot onions, 4 regular carrots sliced, and 2 parsnips, sliced. But I used red onions, celeriac, and shatanay carrots. I advise you try shatanay carrots as they are so much sweeter than regular ones! I cooked mine for 8 hours on auto and it came out lovely and tender. Please take the gravy granules measurement as an approximation, and add to your taste.

1 1/4 kg rolled beef (topside with no added fat)
1 tablespoon olive oil
4 red onions, peeled and quartered
1/2 a celeriac, peeled and cut into chunks
12 shatanay carrots, peeled and halved lengthways
4 garlic cloves
2 beef bouillon cubes
400 ml just boiled water
100 ml red wine
1 bay leaf
1 teaspoon dried oregano
1 teaspoon dried herbs
1 teaspoon ground black pepper
2 tablespoons gravy mix

Steps:

  • Preheat slow cooker.
  • Heat oil in a large pan (I find a wok is best), and carefully brown beef on all sides, turning with two wooden spoons. Transfer to a plate and set aside.
  • Add the vegetables and garlic to the pan and, stirring regularly, cook for 5 mins until the onions are beginning to go soft.
  • Transfer the vegetables to warmed crock pot and place the beef on top, push the beef down so it nestles among the vegetables.
  • Dissolve the stock cube in the just boiled water, add the wine, oregano, mixed herbs and pepper.
  • Pour over the beef, add the bay leaf and cover. Cook on auto for 8-10 hours or low for 10-12 hours.
  • Once the beef is cooked, carefully remove from the crock pot and place on a warmed serving platter. Remove the vegetables with a slotted spoon and arrange around the beef. Cover and keep warm.
  • For the gravy, ladle the liquid left in the crock pot into a saucepan, stir in the gravy granules and bring to the boil, simmer for 2 minutes.
  • Serve with mashed potatoes and savoy cabbage.

  • Preheat oven to 325° Heat canola oil in a Dutch oven over medium-high heat. Pat roast dry with a paper towel and sprinkle generously with TAK Seasoning evenly on each side and rub to adhere. Coat the roast with 2 tbsp of flour.
  • Place roast in Dutch oven and sear 4-6 minutes on each side. Once the entire roast has developed a golden-brown crust, remove it from the heat and set aside on a large plate. Add the onion and carrots to the Dutch oven and sauté briefly to evenly coat with oil. Reduce the heat to medium, cover and allow to cook 5 minutes, or just until barely softened. Add the garlic and sauté uncovered for an additional minute or so.
  • Sprinkle over 2 tbsp of flour and stir until the flour takes on a yellow tinge and the vegetables are evenly coated. Slowly whisk in the red wine, followed by the beef broth, followed by the beef broth, salt and pepper. Bring to a boil over medium-high heat.
  • Add roast back to the Dutch oven, along with rosemary and thyme. Cover, transfer to the oven and bake for 1 ½ hours. Turn roast, return to the oven and bake for an additional 1 ½ hours. Remove from the oven, allow to cool, serve and enjoy.
