MEDITERRANEAN SPINACH TURKEY WRAP

This is a good for lunch. You can make pinweels out of these and serve them as a finger food for parties.

Number Of Ingredients 7

1/2 cup kraft cream cheese with chives and onions
1/2 cup feta cheese, crumbled (the sharper the better)
1/4 black olives
32 inches flour tortillas (spinach flavored preferrably)
4 ounces smoked turkey, thinly sliced
1 cup loosley packed thoroughly washed spinach leaves
1/4-1/2 teaspoon oregano

Steps:

  • Chop up olives.
  • Combine cream cheese, feta cheese, olives and oregano in bowl and mix.
  • Evenly spread the mixture over entire tortilla.
  • Place turkey over the cream cheese mixture on half of each tortilla.
  • Place spinach leaves on top of turkey.
  • To assemble just start with the side that is topped with the turkey and roll up tightly.
  • Wrap each sandwich with saran wrap.
  • Refrigerate wraps at least 1 hour.
  • Before serving, unwrap, and trim of ends of each roll.
  • Cut wraps into 3 sections.
  • Cut each section on a slight diagonal into half.
  • Wraps can be made a day ahead.
  • Enjoy.

Homemade Mediterranean Spinach Wraps image

3 Tbsp Extra Virgin Spanish Olive Oil
2 Cups Tightly Packed Spinach
2 Basil Leafs
1/2 Cup Spelt Flour
1/2 Cup All-Purpose Flour
1/2 Tsp Sea Salt
2 Tbsp Water
3 Tbsp Roasted Red Bell Pepper Hummus
1 Slice Smoked Salmon
2 Tbsp Diced Onions
2 Tbsp Diced Tomatoes
Fresh Spinach
Greek Yogurt
Sea Salt
Black Pepper

Steps:

  • Heat a non-stick frying pan with a medium heat and add 1 tablespoon of extra virgin Spanish olive oil, once the oil get´s hot, add 2 cups of tightly packed bagged spinach to the pan, mix with the oil and add a lid on top, after about 3 minutes, remove the lid, mix all the spinach and remove from the heat
  • Add the cooked spinach to a sieve, using a wooden spoon, push down on the spinach to remove all the excess liquid, once well drained, add the spinach to a cutting board along with 2 fresh basil leafs, finely mince everything together and set aside
  • Add 1/2 cup of spelt flour and 1/2 cup of all-purpose flour to a bowl, also add 1/2 teaspoon of sea salt and the minced spinach mixture, add 2 tablespoons of extra virgin Spanish olive, 3 tablespoons of luke warm water and mix everything together until you form a dough, knead it inside of the bowl for about 30 seconds and then form it into a ball
  • Add some all-purpose flour to a flat surface, add the ball of dough on top, cut into 4 evenly sized pieces and form each one into a ball
  • Using a roller, roll out each ball of dough until you reach a thickness of about 1/16 of an inch
  • Heat a grilling pan with a medium heat, once the pan get´s hot, cook each wrap between 30 to 45 seconds per side, do not over cook or they wont be able to roll up
  • Once you have all your wraps cooked, fill them with your favorite ingredients, I like to add hummus, smoked salmon, Greek yogurt, diced onions and tomatoes and fresh spinach
  • Enjoy!

I saw this being made on a Robin Miller episode on Food Network. I printed out the recipe and it's been sitting in my "to do" pile for quite a while. We finally tried it tonight for dinner and were delighted at how all the flavors blended together and it just couldn't be any easier or more versatile. You can make your own basil pesto, of course, and use any flavor of tortilla, or just use plain (we used spinach). The original recipe called for canned artichoke but we don't like those and so I used marinated artichokes in the jar and rinsed the oil off, then squeezed them dry in a paper towel. The sun-dried tomatoes added a lovely bite of flavor, I do not recommend leaving them out. These will make a really nice, light summer meal served with a couscous salad, or some other Mediterranean type salad.

4 tablespoons basil pesto
4 flour tortillas (regular or flavored)
1 cup baby spinach leaves
2 cups cooked medium shrimp, cut into 1/2-inch pieces
1 (14 ounce) can artichoke hearts, drained and chopped (I used jarred, marinated as mentioned in the description above)
1/2 cup diced sun-dried tomato

Steps:

  • Spread 1 Tablespoon of pesto on each of the tortillas.
  • Top evenly with the spinach, shrimp, artichoke hearts and sun-dried tomatoes and roll up.

Recipes tested: Recipe #101601 and Recipe #41602. The fresh cilantro was my addition although it is optional.

4 slices bacon or 4 slices tempeh bacon, cooked crisply
1 1/4 cups fresh baby spinach leaves, cleaned and spun dried
4 tablespoons red onions, diced small
1 tomatoes, diced
1/2 cup fresh cilantro leaves, chopped
1/2 cup homemade ranch dressing, approximately
4 (7 inch) flour tortillas (I made light whole wheat tortillas)

Steps:

  • Cook the bacon and set aside to drain. Once cooled, break up into little bits. Or, if you wish, arrange the bacon slices whole in the wraps.
  • Divide and arrange the remaining ingredients including the bacon onto 4 tortillas.
  • Roll up and eat! Or refrigerate, wrapped in plastic until ready to eat.
  • Alternatively, the tortillas can be rolled up and cut up into 2" slices and served as an appetizer.

1/2 cup green onion, sliced
1 clove garlic, pressed
1 1/2 teaspoons dill, chopped
2 medium roma tomatoes, chopped
1 1/4 lbs spinach, rinsed and drained,stems removed
3 -4 tablespoons feta cheese, crumbled
1 tablespoon capers
pepper

Steps:

  • Combine onions, garlic, dill and 1/4 cup water.
  • Stir-fry over medium heat until onions are soft and almost all liquid has evaporated.
  • Transfer mixture to bowl and stir in tomatoes.
  • Keep warm.
  • Add half the spinach to fry pan and 1 Tab water.
  • Stir-fry over medium heat until spinach is just beginning to wilt.
  • Add remaining spinach, stir-fry until all spinach is wilted (2 minutes) With slotted spoon, transfer spinach to a platter and spread out slightly; discard liquid from pan.
  • Top spinach with tomato mixture Sprinkle with Feta and capers.
  • Season to taste.
