CHEESE AND MARMITE BISCUITS
Must have for all marmite lovers, given to me by a dear friend who has been using this recipe for many years to the delight of her children, grand children and now great grand children. Wonderful with a whiskey in the evening

Yield Makes 15 to 20 biscuits

Steps:
- Rub butter and Flour together till they resemble bread crumbs
- Add salt and pepper, grated cheese and marmite and mix into a firm dough.
- Using your hands, roll into thick sausage shape, wrap in clingfilm and place in the fridge for an hour. (May be frozen at this stage)
- Remove from clingfilm, slice thinly and roll again to the required size and place on grease baking tray. (Roll in sesame seeds if required)
- Brush with beaten egg whites and bake at 200c for 10mins or until golden brown. Cool on rack
MARMITE ON TOAST
Some marmite spread on some toast

- put bread in toaster
- get out butter and marmite
- get toast out of toaster when done
- spread butter on toast
- spread marmite on toast
- serve with bay leaf (optional)
- eat it
MARMITE CHICKEN
This is a dish commonly available in Chinese restaurants here in Malaysia. I am posting this recipe so that my daughter could access it from Australia where she is studying. This dish goes best with rice and stir fried vegetables. Cooking time is approximate only. I am a bit of a slowpoke in the kitchen so others may dish this up much faster than me.

Steps:
- Marinade chicken pieces with ingredients (A) for at least one hour.
- Deep fry chicken pieces until cooked. Remove and put aside.
- In a separate pan, heat 1 tbsp oil and add in ingredients (B). Cook on medium heat until thickens. Add in fried chicken pieces and mix well. Remove and serve immediately.
- Note: Marmite is a brand of yeast extract. Do not add more than required as it has a strong flavour.

MARMITE MINCE
Mince like you have never tasted it before! Serve with pasta, mashed potatoes or hash browns.

- Melt the butter in a wok over medium heat. Add the onions, and fry until soft. Crumble in the ground beef; cook and stir until evenly browned. Push all of the beef and onion out to the sides, leaving a pool of butter in the center. Add the yeast spread to the pool, and mix until dissolved. Stir into the ground beef.
- Mix in the paprika, and bouillon cubes. The mixture will start to become sticky and bind together. Mix in the water and gravy mix. It will be sticky at first. Just stir and bring to a simmer, and it is ready to serve.

- Preheat the oven to 220°C, fan 200°C, gas 7. Put the sliced bread on a large baking tray and toast in the oven for 25-30 minutes, turning halfway, until very well browned. Chop into large cubes.
- Combine the yeast and sugar with a little water in a very large bowl, then pour in a further 4 litres of room-temperature water. Stir in the toasted bread and leave to soak, covered with a clean tea towel or muslin, for 12 hours.
- After 12 hours, use a slotted spoon to scoop out a bit of the bread at a time. Holding it over the bowl, squeeze the liquid that it has soaked up back into the bowl, then discard the squeezed-out bread. Repeat with all the bread until you’re left with just a cloudy liquid. Loosely cover with a clean tea towel or muslin and leave the liquid to ferment at room temperature for the next 2 days.
- Pour the liquid into a large wide pan on thehob and reduce to a syrupy consistency (it will thicken further as it cools). As the 4 litres of liquid will reduce to about 200ml of ‘Marmite’, it may take a couple of hours to reduce to the right consistency – you’ll need to keep an eye on it towards the end of the reduction time to make sure it doesn’t catch, and you may want to transfer it to a smaller pan towards the end.
