KAMABOKO (JAPANESE FISH CAKE) DIP
Kamaboko is a fish cake found in Japanese grocery stores, either fresh or frozen. It's white with a pink border, smooth consistency and usually found as a split-down-the middle log on a little piece of wood. We love it sliced and dipped into a wasabi/soy sauce blend, it's also great to slice and add to udon soup. In this recipe, it's blended and turned into a dip.

Steps:
- Place all ingredients into a food processor and blend well, adding more mayonnaise if necessary to get the mixture to medium dip consistency.
- Serve on Ritz crackers or rice crackers.
SHRIMP AND KAMABOKO TEMPURA
This is from the Nu'uanu Congregational Church's 1985 Centennial Cookbook. If you're like me and can't find kamaboko anywhere, you can substitute imitation crab, which is almost the same thing.

Steps:
- Combine dry ingredients, add water and egg; stir only to moisten the dry ingredients. Add kamaboko, shrimps, water chestnuts, and green onion.
- Drop by teaspoonful into heated oil (skillet or fry pan) and fry until light brown.
- Serve hot.

KAMABOKO SALAD
This is from a U of Hawaii website. Evidently the kamaboko available in Hawaii is much larger that the crab sticks that are available in the US midwest, but I hope they will be an acceptable substitute. Since there is such a strong Japanese influence on the culture of Hawaii, I'm including this for ZWT 7.

- Cut the crab sticks (kamaboko) into thin slices horizontally.
- Mix all the ingredients together (kamaboko, celery, noodles, green onions, salt, pepper and mayonnaise.)
- Serve on lettuce leaves.
